Finally came here to try this Michelin ⭐️⭐️ French restaurant. We had the Full Amber Experience 6-course lunch at $2118/person. It’s a signature dish for many years. Rich and having many layers of flavour, I especially love the smooth cauliflower puree. The flavour of each ingredient is identifiable and complemented with each other.

🥂Duck Foie Gras • Sugar Snap Pea • Pea Shoot • Pea Flower • Preserved Black Winter Truffle • Madeira • White Onion
I’m actually not a fan of peas but this one was made so well. The duck foie gras didn’t have a gamey taste and it’s very buttery and soft with a mild truffle taste. The onion chips helped ease the greasiness. Very well done indeed.

It’s my first time trying white asparagus. It was so soft with a milder flavour compared to the green ones. Such a creative combination to add the wasabi sauce that definitely enhanced their natural clean flavour.

Next comes this French veal bone marrow soup risotto. The texture of the scampi was just right, very bouncy and tender, went perfectly with the bone marrow that had a buttery and creamy texture. Love it!

The main was good but not wow enough. This lamb rack was perfectly cooked to medium but there was too much sauce.

A beautiful chocolate lava dessert with crispy notes from the buckwheat on the side. Not very surprising but we still enjoyed this.

The staff came to our table and made us a Ying Yang drink to pair with the Petit four. It’s basically a mix of earl grey tea and coffee. The rose powder gave a nice aroma.

Last but not least, some petit four and tea came to end the meal. Madeleine of the day was an interesting lemon and peppercorn flavour, though very mild. They also gave us some pieces of chocolates to take home.

Thank boyfriend for ordering this yummy birthday cake for me🥰❤️Tasting Notes:We argued a bit over whether it’s a baked cheesecake 😂i said yes and he said no🤪 i usually prefer baked cheesecake in dense texture. But this cheesecake was an exceptional case😋it’s not as dense as New York cheesecake but not as soft as no-bake cheesecake. 成件事好食好靚、一貫法國米芝蓮餐廳作風,可惜始終有個通病,主菜質素,始終有待改善、被前菜蓋過, 而且甜品一向都是法國菜的重點,我覺得他的甜品不是這麼吸引,略帶點過甜,食完都唔會記得佢嘅味道

➡️ A great wine with harmony and depth. Blackberries, plum, smokey, toasty flavours with well-integrated tannins and silky smooth texture. Nice structure and value for money, will buy this for personal enjoyment.

最後一杯「鴛鴦」,說靈感源自茶餐廳 —— 普洱(忘記是否 普洱,如有記錯,請指正),雲南咖啡,龍眼蜜,hard shake,灑上玫瑰,與其說是鴛鴦,不如說是一杯極深刻的台灣奶茶呢。

Amber 服務流水行雲,看似隨心,從容不迫,彷如沒有服務,但所有事情都周到妥當。四周人客談話很禮貌,環境寧靜,出奇舒適。香港難得一見的景色。經驗幾近東京 L’Osier 啊。一餐是否完美,從來不是看食物,小妹說幾近完美,就是如此了。

For the amuse bouche, it’s a potato and leeks cold soup with mussels and fried potato. Love the creamy texture of the cold soup. There’s also foie gras lollipop🍭 raspberry coating added sourness and sweetness to this small bite. Can’t believe they make such a perfect match!

I found another amazing caviar dish in hk😍 It’s as good as the one from Robuchon🙈 the cauliflower purée was sooo smooth and creamy😳 the flavour of lobster jelly was quite strong but still, it didn’t override the sweetness of uni and umami of caviar. The flavour of every ingredient was able to stick out very well👍🏻

Lovely presentation🥰 the little tower was built up with truffle, mushroom, and pear. There’s also parsley and truffle paste on the side, which added extra flavours to the dish!

This dish wasn’t to my liking😅 personally don’t like the texture of the deer. I’m not sure how to describe it maybe coz it’s too soft and mushy that I don’t think I’m eating meat (?) but I like the beetroot so much haha

Since this was my parents’ anniversary celebration, we got an extra cake. It’s a chocolate mousse cake with yuzu/ lemon jelly (?) and nuts on top😍 it’s chocolaty but light at the same time👍🏻 not too sweet as well.

Why need to choose between coffee/ tea when you can have both🤣 this special drink is a yuenyeung with sudachi, honey, and rose petal. Nice combination😣

Last but not least, the meal ended with these amazing petite fours. Never a fan of gingerbread, but this gingerbread madeleine wow me. The ginger flavour was not that strong. The madeleine was so fluffy and moist in the inside💯 The Mont Blanc tasted superb as well. Never had fresh fruit as petite fours😂 always feeling gd to end a meal with some juicy and sweet fruits💯

對於wish list 中的食店,第一次先試lunch,合心水的就留待重要日子和至愛再來。幸好有個閨密和我一同做試食兵團,然後可以分別和至愛來過。我倆都愛魚籽醬,透過經理介紹,就要試鎮店之寶!看相就見得多,原來見真身真的非常震撼,的確沒有介紹錯!基本上由餐前小食、麵包、主菜、甜品、餐後小食及飲品,都一絲不掛,發揮得淋漓盡致!而服務都很貼心。可能大家會覺得,5星級酒店,應該不會太差吧?當然,應該是不會太差,有賴整個團隊,才會提供高品質的服務。

鵝肝反而可以講講,以不喜歡吃鵝肝的人默默說一句,其實又煮得幾好。一路都覺得一個好的廚不是煮你喜歡吃的東西煮得多好吃,而是煮到可以把你害怕的東西放入口。鵝肝以慢煮而不是香煎方式,沒有那種難入口的內臟味道又不會太油,十分十分合格。

啊~~~要特別說說這次喝的酒,好老實說有點怕香檳始終有種dry味,這次勇敢捨棄dom而試試其他都幾有驚喜,還有另一枝是rose~不記得名字但以rose來說有這種色調的應該不多,去的話問waiter 應該會知道~還有就是最尾的dessert wine 可以order半瓶也是好貼心!

It’s difficult to choose which restaurant to celebrate your love one’s birthday. Amber is one of the Michelin restaurants in town. The presentation of the food is good but I don’t have the wow feeling. The deer meat is something that I don’t get to eat normally. The deer meat tasted a bit like a beef and it’s kind of tender. Amber’s revamped menu focuses on a healthier diet with less salt/sugar and dairy-free. No doubt it is a very ambitious and adventurous move for French cuisine.

The Full Amber Experience menu is quite good, considering that it is dairy-free. I personally think that the main dishes are a bit outshined by the appetizers and desserts, though the lamb loin was cooked to perfection.

Overall, I prefer the traditional French cuisine. However, the environmental sustainability and well-being concept is worth encouraging.

Recommendations:

• Aka Uni (Great to have the signature dish back! Can’t believe it is dairy free as it’s silky smooth!)

• 🌻 (This dessert blew my mind and it’s my favorite dish! It doesn’t just look like a 🌻, they actually incorporated sunflower seeds to the dish. Absolutely perfect!)

第九道甜品選用64°的Manjari朱古力🍫中間是新鮮的紅桑莓,頂層是紅桑莓雪葩及朱古力薄脆,酸酸甜甜的紅桑莓配上朱古力慕絲,最底層是朱古力脆餅,吃出一層苦甜一層酸的層次感✨


Petit fours份量超多放滿了餐桌,包括招牌甜品Madeleines、朱古力果仁夾餅、冰鎮時令水果及自家釀製梅酒!值得推介的是餐廳招牌Madeleines,是gluten-free無麩質,外層酥脆內裡鬆軟,朱古力香氣十足,簡直是極致享受👏🏼


回想返Amuse bouche是個餐前小驚喜(圖在最後)賣相精緻的「珍寶珠」,以紅桑莓漿包著鴨肝慕斯,鴨肝香氣濃郁,餘香繚繞不散,加上兩塊小餅乾,帶點肉桂香,味道更有層次🍭
