I have expectations on lobster dishes. Tried lobster in soup with Chinese noodles. The presentation looks thin. Diluted lobster soup, four pieces of lobster meat from the tail, a batch of noodles definitely not for feeding an adult man, and some decorated unknown vegetables.Lots of foreigners eating in the restaurant though. The presentation looks thin. Diluted lobster soup, four pieces of lobster meat from the tail, a batch of noodles definitely not for feeding an adult man, and some decorated unknown vegetables.

Lots of foreigners eating in the restaurant though. There is a bar inside the restaurant. Just saw a male foreigner ordered a glass of red wine. There are two couples, each made up of a foreign man and a Chinese woman.

Food ordering mechanism looks like fast food restaurant since it is self-ordering by filling a menu form.

Drinks available? Only tea and soft drinks. When I asked if there was any tea that did not have caffeine, the waitress that served me responded quickly and said that tea had no caffeine. You can imagine the quality of the service.

朋友對遲到的我還是不薄, 由波士頓龍蝦當主角的龍肉湯麵, 留我一碗!湯頭儼如龍蝦湯ㄧ樣濃稠, 可鮮甜味更為突出, 原來每天以龍蝦及三款包括海鯛的深海魚, 加入蔬菜和拔蘭地熬製五小時而成。

友人們更ㄧ睹拉麵師傅即場拉製蘭州拉麵, 怪不得麵條也份外好吃, 可惜我錯過了精彩的拉麵表演。

在品嚐龍肉麵時, 看到檯中ㄧ碟片皮鴨, 可知我又錯過了, 但慶幸仍可趁熱ㄧ嚐香脆與脂香的鴨皮, 建議加入庶糖共嚐。

「龍麵館」的片皮除鴨皮㚈, 還可以選擇以淨鴨肉或鴨皮連肉,任擇兩食。採用八個星期大的北京填鴨, 配搭八款醬汁和蔬菜, 包括京葱, 青瓜條、蜜瓜條、紅菜條、烤鴨醬、芝麻醬、 生蒜蓉及庶糖, 富有新鮮,香而不膩, 盡將烤鴨細嫩脆香帶出。

因為太美味, 所以控制不住多吃了, 友人們要來幾款甜品, 包括造型獨突的意式芝士杯, 而我只能以輕盈的千葉豆腐作結。

千葉豆腐把大厨的刀功顯露無遺, 如菊花花瓣的豆腐滑溜, 配合紅棗與薑汁的甜湯, 美味之餘又能幫助消化!

記得多年前與家人同到關島旅行,入境時風趣惹笑的關員姆子擦著鼻子、並問我們是否來自李小龍的家族,我們即時以李小龍的招牌叫聲 「㗎咤」回敬,當場帶來一遍歡樂笑聲!證明中國武術揚威海外,影響力遠大。如今,喜愛中國武術的店主,將中式餐飲與武術融入「龍麵館」裡,出色用心的製作好比使出一套精湛熟練的功夫,令我不得不以「㗎咤」來回應!

撇除了枱櫈款式及擺放格局、擺設在枱面的餐具以及四周種種裝修擺設,裝修風格卻有別於典型中式餐館;以深沈顏色為主調、加上燈光昏暗,外表看更似是典型西餐廳。這種 mix & match 的裝修風格,感覺摩登、但又不覺得突兀,是一個成功的 fusion 典範。

餐廳安排的座位剛好對正開放式廚房,整體整佈局有點似曾相識。再見到這一張濕紙巾包裝,馬上靈光一閃,原來是「飲茶集團」的一間新系列餐廳。裝修的型格程度比起集團旗下的另外兩間餐廳「飲茶」「Urban Park」更加前衞,可以參考筆者另外兩篇食評。

餐廳開張才一個月左右,又好似之前去幫襯「飲茶」一樣,獲派一張優惠券,惠顧滿 $400 減 $100。為了賺盡優惠,目標最少幫襯 HK$400,但又不要超出太多,落單時候要小心計算一下。優惠卷正面的三個形象非常明顯:左邊李小龍、右邊葉問,中間那位則是西洋拳外形配合中國鐵線拳道具,很有中西合璧的形象;正好配合硬照中大隻猛男手上拿著的餐廳主打菜式,同樣是中菜配合西餐材料,下文詳述。

一本封面全黑色、兼且內頁圖文並茂的主餐牌,印制了餐廳的所有出品;再配上兩張獨立粉紙印刷的自選餐單(一張為全日供應食物,另一張為晚市限定;尚有一張午市限定),方便客人挑選食物及侍應落單。主餐牌並沒有標示菜式價錢,須要另行參看獨立印刷的餐單,實在有點不太方便。

又不是什麼酒店中菜館,特色茗茶(每位$19,凍茶每位$25)算是頗貴,但有別於普通的香片、壽味,而是希臘洋甘菊荔枝大紅袍龍井薰衣草紅棗玫瑰花,希望是物有所值吧?! 最終揀了希臘洋甘菊(熱)。陶瓷茶壺全黑色,配上了不鏽鋼手柄,外型模仿香港古老茶樓(除了高級版的古老茶樓「陸羽」之外,其他較市井的好似已經全部結業了)的不鏽鋼茶煲,甚具玩味意思;但茶杯則是普通的雕花玻璃杯,未臻完美。即使已經侷了一段時間,茶色依然很淡,但卻非常清澈,茶味微甘、帶著淡而不嗆鼻的菊花香氣;並不是顏色深褐、混濁、味道帶苦澀的中式五花茶。

鐵鍋 • 半肥瘦叉燒($119)是一道絕對傳統的廣東燒味,但上菜方式加入了一點點港式西餐原素:鐵鍋。叉燒表面呈現吸引的鮮紅色,又掃上了一層薄薄的蜜汁,兼且用上了新鮮半肥瘦梅肉,賣相對辦。

每塊叉燒表面肥瘦相間,再睇橫切面已覺得肉質鬆軟。咬一啖叉燒細味咀嚼,果然軟腍、充滿肉汁、兼完全沒有渣滓。配合蜜汁的香甜及叉燒醃料,鹹甜適中。即使採用的只是本地新鮮豬肉,並非貴價黑毛豬,已經是一條一流的叉燒。

廚師刻意在鐵鍋上面舖一層小石春,一來利用石頭存熱持久的特性,可以延長叉燒的保温時間;二來避免叉燒被熱辣辣的鐵鍋直接燒灼至過度焦燶。但長時間的燒炙,叉燒表層無可避免稍為硬了一點,也可以説是唯一少少的挑剔。

這道菜式的另一個特色之處,就是墊底的炒洋蔥及石榴籽,又是一個中西合璧。講真,用叉燒醃料炆煮的石榴籽並不特別好食,質地黏糯,本身又沒有什麼味道;但這款廣東燒味墊碟的傳統配菜,已經消失了好一段時間,餐廳的小心思實在扺讚。

餐廳門口地上大字以及優惠券照片正中央大隻猛男手捧的菜式,就是主打菜餚龍肉湯麵($149),說穿了即是龍蝦肉湯拉麵。配合餐廳的風格,又是一味中菜西煮,選用波士頓龍蝦(或加拿大龍蝦?),足足有一整隻龍蝦尾的份量,雖然並不是很大隻,但視覺上也相當震撼,覺得落足材料。龍蝦鉗在哪裡?其實餐廳尚有幾款主打龍蝦麵食,有些就用了龍蝦鉗入饌。

除了用上鬼佬龍蝦,湯麵的靈魂「湯頭」也突破傳統框框,採用西式龍蝦湯。呈鮮橙紅色,可能缺少了忌廉,及不上正宗西式龍蝦湯的濃稠,但稀稠程度已經較傳統中式湯麵的清湯濃厚,也不適宜再濃稠一些。另一方面,一如中式湯面的湯頭,表面泛起一層橙色油光。賣相非常 fusion。趁熱馬上呷一口,比起西式龍蝦湯淡口一點,但鮮甜美味的程度並沒有比被下去。

翻查主餐牌內頁,用英文詳細交代了湯底的熬煮方法。節錄如下:「先將三種不同的深海魚慢火熬煮5小時成為魚湯底;然後加入大量原隻有鉗龍蝦及蔬菜再熬煮3小時;最後加入適量白蘭地提味」。難怪如此鮮美,充滿海鮮及龍蝦的濃郁味道,簡直媲美五星級大酒店扒房的龍蝦湯。

剛好見到開放式廚房內,廚師正在處理湯底。原來有兩種不同的龍蝦湯頭:一稀一濃;濃的一煲用在湯麵,稀的一煲用在撈麵。

龍躉片望落去不夠嫩滑,可能蒸過火,食落去肉質略嫌粗糙。雖然食得出魚的鮮甜,肯定是生割,但同時帶著魚皮下脂肪溶化後的魚腥,未算是條優質深海大龍躉。

用了開張誌慶優惠券,惠顧超過 $400 減 $100,覺得相當抵食。還得出一個結論:「龍麵館」不愧「龍麵正宗」,絕對不是自吹自擂,對餐廳的龍蝦菜式更是信任。至於其他菜餚,水準好似不太平均;但今次只試了三道菜式,不能作準。

臨離開餐廳,見到了自設的烤鴨風乾櫃;原來北京烤鴨需要預訂,方便廚師預計上菜時間提前開始燒烤,現場落單則最少要等一個多小時。之前食飯時候看見隔離枱的那隻烤鴨相當吸引,下次一定要試試。

片皮鴨與龍蝦湯麵頗為濃香肥膩,這時候,適宜來一碟菜,清清味蕾。這一道花拳秀腿$99,是選用了鮮嫩白菜來堆砌,猶如一朵朵宛在水中央盛開了的百合花。呷一口上湯,湯甜味美,白菜入口爽嫩甜美,櫻花蝦更添了一份鮮香味兒。

Just turn around and you’ll find some herbal tea containers for cold brew Chinese tea and a local beer called Gwei Lo. A nice wordplay as beer is nicknamed as ‘Gwei Lo herbal tea’ by Hongkongers.

DNA got a drinks menu despite being a Chinese restaurant and we started off our meal with some East-meets-West cocktails.

Flower maiden’s collins ($99, back) – rose & jasmine-infused hendrick’s gin, crawley’s rose syrup, bergamot puree, crawley’s orgeat syrup, east imperial sode water

Females would totally fall for this girly and elegant drink and it tasted as good as it looked. The amount of gin added was just right so it didn’t overpower the floral aroma and sweetness from the syrup.

Margarita chino ($79, front) – cimmaron blanck tequila, crawley’s pineapple & almond syrup, chartreuse green, fresh lime juice

A little more spiked than the former one but I also liked that lime and pineapple sourness.

Berry Wintermelon ($69) was so cute that the girls couldn’t stop taking photos! The mini wintermelon balls were soaked in blueberry sauce and plated as a bunch of grapes. They were all juicy and sweet but perhaps this can be eaten after a few savoury dishes to cleanse the palate.

Another ultra photogenic item were the Crispy Lobster Puffs ($69@) which looked so much like real lobsters when seen from far away. Minced lobster meat was mixed with water chesnut and coriander, then wrapped in two types of pastries (thus the two colours) and fried to golden brown and airy. The filling was flavoursome but not as bouncy as expected. Probably would have been better if chunks of lobster meat were used?

Clouds of sweet smelling steam filled our dining area when the barbecue sauce was poured to the tiny pot of Hot-stone BBQ Pork Fillets ($119). Every single piece was fatty, thoroughly marinated and the beans on the side were just as amazing.

Served fresh off the oven, the chef then artfully skinned the duck into three plates, duck meat, duck skin and skin with meat. Look at how neat they were arranged! Accompanying the meat were garlic mash, raw cane sugar, sweet duck sauce and sesame paste, as well as cucumber, rock melon, chinese leeks and pink cabbage.

We also had Spicy duck & dried chilli ($99) made with the skinless duck as a follow up course. It possessed all those mouthwatering factors, pungent and spicy flavours in Sichuan cuisine.

Get your camera or smart phones ready for this 24 hours ale-braised pork knuckle & rice (for 6 people, $399) as it involves another mini live show. The staff first destructed the pork knuckle and mixed those off the bone tender pork with everything else in the gigantic plate. The addition of pomegranate was a nice and brilliant touch as it balanced the briniess and greasiness of the meat.

We were super full after downing all the amazing dishes so we just ordered Flowering tofu ($79) as a sweet note to finish the night. To be honest, it was an usual tofu pudding with goji berries but it’s the chef’s knife skills that brought this dessert to a whole new level. Totally an artwork that requires years of practice.

DNA is undoubtedly my recent favourite with their innovative and stylish dishes without compromising on authentic flavours. Would surely be taking my foregin friends (especially martial arts lovers) here for a taste of real Chinese Kung Fu (yes, Kung Fu means skill or technique in Chinese too).
题外话/补充资料: Make sure you walk around in the restaurants and there are just too many photo spots!

cauliflower florets in yoghurt:

I thought this would be interesting so ordered it.

It was yellow and purple raw cauliflower florets in a refreshing yoghurt and I loved it because they had a nice crunch.

Another refreshing appetizer of cucumber that looks like it has been put through a pencil sharpener.

The duck was served in a really good way because it is separated in three plates: crispy duck skin, pure duck meat and duck thigh which has skin attached.

There are three ways of eating it, duck skin dipped in raw cane sugar, duck meat with freshly garlic puree and duck with pancakes.

For the pancakes, you get some sesame paste and duck sauce where you use your martial art skills to swirl or spin the sauce dish so that they mix together.

Moreover, there is a large golden pot on the bar and it wrote "Gewilo Herbal Tea" (Foreigners Herbal Tea), Chinese herbal tea suppose to be a drink that benefit for health, but people generally said "Beer" is the herbal tea for western people. Thus, the golden pot contains the light malt flavor of Gewilo's beer.

If you walk further, you can see the sign of "涼茶" (Herbal Tea). Yet, it still doesn't mean herbal tea, the bottles on the sides are the cold pressed tea.

The pink one is Flower Maiden's Collins and the yellow one is Margarita Chino. Starts from the Flower Maiden's Collins, it is made with Rose and jasmine infused gin, syrups and soda water. Its elegant appearance surely take down the ladies, the pink drink topped with a small purple lavender. There is a hint of flower taste along with the cocktail and the gin flavour is quite outstanding as well. As for the yellow one, Margarita Chino, its basis are tequila, pineapple & almond syrup and lime juice. I am not quite a big fan for tequila, since it got a strong alcohol taste. So the tequila taste has taken over the drink, you can still taste the refreshing pineapple and lime flavours among it.

Another special cocktail would be this Chi Redirector, which is served in an oriental styled cup. The brown color of drink might not be so appealing to girls, nonetheless its taste is like a blast! It makes used of five spices, my guess are chilli pepper, cinnamon, star anise, cumin and bay leaf perhaps. Its distinctive spiciness is truly addictive. You will need to clam down and find the inner peace after drinking this cocktail.

The dinner starts with some appetizers, this Berry Wintermelon will totally surprise you since the wintermelon balls camouflage into grapes and you can completely fall for it. The Wintermelon balls were marinated with blueberry sauce, the texture is rather similar to grapes and it carries a sweet blueberry flavor. Yet, I wonder this should be an appetizer or a dessert.

Another one is the meatless Bonito Flakes Eggplant. It is topped with a small flower, which looks quite lovely. This dish is simple and the eggplant is soft and moisture, vegetarian would love it for sure.

The restaurant will have dim sum for lunch time, which you are able to order some of their signature dim sum at night as well. For example this Crispy Lobster Puff, it is made with their signature ingredient, lobster. Mix the minced lobster meat with radish, then beat the mixture till is gluey. Next, roll it into an egg alike shape, coat it with puff pastry and deep fried it. The layers of the puff are crispy and the lobster radish mixture in the middle is spongy. The lobster flavor is quite outstanding, however it would be better to serve with a sauce to freshen up the dish.

The next impressive dish is the Wood-oven Whole Peking Duck with Pancakes, which the server will slice the roasted duck in front of the customers. The server is wearing a blue plastic gloves, it is kinda similar to doing surgery for the duck lol. The duck has been separated into three, half meat and half skinskin only and meat only.

Start with the half meat and half skin, take a thin pancake and place the duck piece over it. After that, you can pair it with shredded cucumber, rock melon, Chinese leeks, pink cabbage, duck sauce and sesame sauce mix, it is completely up to you how you want your Peking duck wrap to be. The duck is juicy and tender, it also got a rich duck meat taste along with a hint of smoky wooden taste. Next, the duck meat should be pairing with minced garlic. The uncooked garlic is spicy, which add a bit of exciting flavor to the meat. Last, will be the evilest and favourable duck fat and skin. Pair the duck fat and skin with sweet brown sugar, the sweetness works perfectly with the fat and skin. Personally I tend to enjoy the meat with the skin part, because it is basic and well-balanced.

Since the Roast Peking Duck was sliced into pieces, there are some bones along with meat left. In order not to waste any part of it, the leftover duck's bones and meat have formed another dish with the hot Sichuan chilli. Fried the wood-oven roasted duck with a massive quantity of chopped hot chilli and that is Spicy Duck & Dried Chilli. The idea of no wastage is nice, yet the roasted duck meat has became rough after fried. Meanwhile the chilli is not as strong as it seems, but it will definitely overshadow the smoky wooden flavor.

How can you not eating rice while having Chinese food? Rice is like pasta for foreigners, which should be eaten for every meal. Thus, we have picked 24hrs Ale-Braised Pork Knuckle with Rice. The big pan is serving next to our table, then the server will help to divide the rice into bowls. It can be seen that the slow-braised pork knuckle is incredibly tender, it can tear out the meat with fork easily!! After that, stir and mix the pork with rice, pomegranate seeds and vegetable. The highlight will surely be the pomegranate seeds, the sweet juice help to freshen up the whole rice dish. They also add a bit of the soup (I believe is the juice from the braised pork knuckle) to the rice, therefore the flavor are everywhere!! 

We been eating lots of food ever since, so we are feeling full already. But there is always room for dessert lol and we decide to go for Flowering Tofu & Tiramisu Garden.

The basic tofu bean curd is an authentic Chinese dessert, yet the restaurant just take this dessert to another level. A stunning presentation of Flowering Tofu will truly impressed you in every way, the skilled chef has cut the sweet tofu into flower. Then, place it into the sweeten soup and decorate it with an edible flower and few wolfberries. The dessert won't be too sweet and the tofu is quite smooth as well. You can find the ginkgo at the bottom of the soup, which can bring some texture to the dessert.

Another delicate dessert would be Tiramisu Garden, this is an Italian dessert inside the Chinese tea cup. There are two pieces of dried fungus on the surface, their crunchy texture is quite unique. The spoon the layers of tiramisu, it is rather simple and common dessert I would say.

Fusion food is no longer taking the lead, but "back to originality" with a playful plating and culinary experience. I was fascinated by its hearty decor, and probably this is what makes DNA worth a visit if you are looking for a dining vibe comparable to a living museum. Not at all having a hefty price tag, food, especially larger plates to be shared among 4 or above, is worth a try to get a reasonable bill, although spending around $150 for a bowl of signature lobster noodles is deemed alright in the business district.

Given the large floor space it occupies and how "central" of Central it is located at, spending of $300-400/head for dinner is not a shock to us to spend on intriguing and delicate food and vibe it offers. Just around the corner if you know where Topshop is, but wonder what this was before? It was Toysrus - coincidently DNA is carrying on the crusade of a light-hearted casual dining venue.

Chinese craftsmanship is permeated into every corner of the restaurant, as evident as the golden handcraft dragon greeting you at the Entrance to colourful lion heads coming into attention once lifting up your head. Apparently on a more affluent style than "Yum Cha", such a whimsical dining scene should be quite costly as these aren't counterfeits but made with extincting handcraft techniques of old craftsmen. Intangible "handcraft" like making of noodles and roasting peking ducks in wood-oven is showcased through the open kitchen, further enlivening the museum-like dining scene.

Another eye-catching handcraft is the golden "hulu" made of copper and filling with water and craft beer. Just like other restaurants not intending to be a bar/pub, alcoholic drinks and beer are good deals here. As for the main menu, brochures just like "dim sum paper" are user-friendly and clear enough to showcase its delicacies. Dinner menu is a longer one than the one for lunch, mainly with a full list of larger and sharing-friendly plates but not for lunch. There isn't any lunch set but ordering noodles plus snacks would be equally fine if you are not going alone.

Gwei-lo draught beer pale ale $59/glass - feeling trendy to grab a craft beer than ordinary ones, gwei-lo and moonzen are two famous local brands that win our liking. Smooth and refreshing, it cools us down in the evening of a hectic day, realising its potential to be "foreigners' herb tea"! I realised the mismatch of logo on my glass and its content, but didn't bother further.

Berry Wintermelon 藍莓冬瓜 $69 - this was ordered before my arrival, thus I wasn't able to capture its divine plating of a bunch of grapes. Translucent like real grapes, small wintermelon balls are soaked in blueberry sauce. Crunchy and lightly sweetened, this makes a playful appetiser to start with, good rating of which falls more on its plating instead of the portion/value of ingredients though.

Crispy Lobster Puff 龍蝦蘿蔔酥 $69/件 - this is one among several dim sum dishes here, mainly featuring the signature lobster theme of using real lobster heads and re-creating the abdomen with tulip puff. It isn't as oily as imagined, mashed and sliced tulip inside remains moist, while the outer puff performs well as a crispy wrap. It is a bit pricey though, and puff isn't something easy to be shared as layers of puff fall off from cutting and biting.

It isn't our first time to watch how peking duck is sliced up, but how the chef masters cutting different parts of it and plates them nicely to serve deserves our applause. What makes it special and stand out from other peking duck eateries is its 3-way of eating arrangement to be paired with an array of sauces and veggies. The 3 ways are skin only, meat only for area around duck breast and skin + meat for duck's back.

Alongside these 3 parts of duck are several sauces that match with different parts as well - garlic mash, raw cane sugar, sweet duck sauce & sesame paste. For the prevalent skin + meat option to be enjoyed elsewhere, "pancakes" are to be matched and served with cucumber, rock melon, chinese leeks, pink cabbage to balance off the grease.

It is totally new to us to dip crispy duck skin into raw cane sugar. Natural sweetness blend well with briny flavour of duck skin. Skin remains crispy and doesn't turn soggy even taking some time to finish all.

One of us suggested not to try lobster noodles this time as we can all have it for lunch ourselves, we go for something bigger, which happens to be another performance-oriented one after peking duck. A huge pork knuckle in a crispy golden look sits atop a paella-like plate of rice with drizzles of pomengrenate seeds. The pork knuckle looks like those we had in German restaurant, but when the staff makes the first cut, we realise it is not as ordinary. The staff manages to slice it into tiny pieces without much effort given that it is soft and tender after sous vide preparation. Slices of meat are nearly melting into the rice after mixing. What's more, the rich gelatin is brought into the rice and making it scrumptious like never.

For sharing among 6 of us is a fair description. It takes us some time to finish as we wait for veggie dishes to come to make the taste more balanced, though pomegranate seeds perform its neutralising fruity role.

Performance isn't restricted to large plates of a higher price but for standard portioned ones as cheap as the mock shark's fin. Wok hey can be smelt during the fry. Serving wok hey dishes in just several seconds away from your seat can't be any more divine!

With enough heat and rapid frying, not much oil is put to the dish which is definitely worth a mention. Ingredients including mock shark's fin which is a bean-related product, crab meat, yolk and pork are stir-fried in a pot, bringing us a decadent yet not greasy dish.

Baby cabbage florets w/ parma ham 花拳秀腿 $99 - veggie dishes can be equally aesthetically pleasing to the eye like this. With parma ham slices and dried sakura shrimp drizzled over delicately sliced cabbage and served in a clear broth, it brings in natural refreshing sweetness, though aroma of parma ham can be even stronger to be more flavourful.

For desserts, it is rather "international" as we spot thai, chinese and western dishes in the menu. We go for two potted western desserts out of curiosity for some of us who didn't pay a visit to Sense Cafe before for potted-plant-like tiramisu. What surprises me is the detail it is able to create, most impressive being the red and green but edible elements on the "soil" (chocolate and coffee powder). They are in fact dyed snow fungus!

We end up having a night much enjoyed with instant cooking performance at our table, surrounded with Chinese handcrafts and kung-fu themed decor. It performs up to expectation on all fronts, both for food and service, though admittedly sitting at the higher end of the price scale. Such an exuberant menu is made even more attractive to guests who look for a relaxing environment or more specifically, a place infused with traditional Chinese elements back in time. I do hope to be back, at least for its signature lobster broth noodles which is acclaimed as a must-try here!

師父會將全鴨分成三款造型,首先會片出金黃香脆鴨皮,然後就係皮肉相連的鴨肉,最後便是淨肉,三款食法都好有自己的性格呢!

而淨鴨肉就會配上生蒜蓉,不過如果不愛吃生蒜蓉的朋友或者未必接受到了,因為都幾辣口的,但車媽媽就勁like喇,加了生蒜後鴨肉變得更精彩,肉質嫩滑多汁,香而不騷。

最後這款皮肉相連的鴨肉就當然耍用荷葉餅加青瓜條,蜜瓜條,京蔥絲同紅菜條同吃啦,蜜瓜條的作用真不少🍈令成件事清新多了,再配合甜鴨汁一齊享用真的滋味無比呀。

而湯底係用波士頓龍蝦及三款海魚🐟,蔬菜🌿同白蘭地🍸,用慢火煲足五小時得來的,那口湯真的鮮甜到不得了,而且絕對唔會有苦澀味,而湯麵仲可以選唔同的龍蝦配料,例如龍蝦鉗,龍蝦肉餛飩或者香烤龍蝦尾,我哋就揀咗啖啖肉嘅龍蝦尾,貪其爽彈又鮮甜,而且拉麵質感富咬口,呢碗麵絕對值回票價,大家一定要去試吓呀😋。

元蹄肉質已被啤酒去油軟淋而沒散爛感覺,味道方面亦都十分香甜,帶出了啤酒槐花味,吃得我十分滋味呢!而且飯內有粒粒石榴籽帶出酸香味,吊起晒肉香,師父的心思我明白了!

Chinese Herbal Tea (涼茶) - Traditionally, Chinese uses different kind of herbs to make a medicine infusion and it is usually bitter with just a slight sweetness, therefore, the restaurant made their own cold brew tea resembling the herbal tea but without the bitterness. 

On the other hand, the restaurant uses the same golden tea pot to serve their local beer, which is also called Western Herbal Tea, but mainly serving Young Master Ales.

Lobster tail soup noodles $149

The signature dish from the restaurant. A whole tail of Boston lobster swimming in its super rich lobster broth, and their housemade Lanzhou noodle. It's not the cheapest noodles you can find in Hong Kong but you do pay for what you get. Considering the whole tail of lobster, it is a very reasonable bowl.

Mock Shark's fin $119

The mock shark's fin is also freshly prepared at the table using a china pot by mixing in different ingreidnets like crab roes, scallion, bean shoots, nuts, and more. The crunchiness is over the top when biting into this. Within just a few minutes, you can literally smell the aroma rushing into the air before you and your friends can dig it.

A whole head of cabbage is presented in a beautiful flower shape, with some flavourful parma ham sprinkled on top. It is very light and barely has any oil. Not a bad way to ease our digestion in the middle of the meal.

Flowering tofu $79

When it comes to dessert, the restaurant combine classic ingredients with a twist or even some Western vibe. Tofu has been sliced into super thin threads before it is simmered in the slightly sweetened sweet soup. The goji berries on top is very good for women considering that it is one of the super food on the platnet.

Soime sticky purple rice is hidden underneath some powder and greens, pretending to be a pot of plant. Can you guess what's the green and red plant on top? They are actually snow ears being coloured in natural ingredients and made until crunchy.

稱得上是龍麵館,這裡最馳名的招牌麵食就是龍肉湯麵,而店內的海鮮區也正正陳列著龍蝦、鮑魚、龍躉、黃魚、虎蝦等等海鮮,感覺,好似突然由武館來到街市!

轉個頭,我們又來到涼茶店?不是啦;這裡奉客的茗茶,有希臘洋甘菊、龍井薰衣草、荔枝大紅袍、紅棗玫瑰花四款選擇,加進花果成分關係,芳香迷人。

熱茶,以「涼茶」偽裝的水爐沖出,茶位$19/位;凍茶則是預先 pack 好的支裝,$29/位,與熱茶一樣都是無限添飲的~

以有趣包裝的濕紙巾清潔雙手後,首先,呷一口氣澤迷人、幽香撲鼻的龍井薰衣草茶。薰衣草不會太濃,造成在喝「潤手膏」的錯覺,也有不錯的解滯效果,頗討喜。

友人則試了凍茶:這荔枝大紅袍以仿咳藥水的懷舊樽呈上,饒有趣味;而且又奉上帶新鮮荔枝果串的冰杯,令茶中的荔枝果香更為突出,任飲價$29/位又有 Mocktail 意味,很抵呢!

開始用餐,首先是 藍莓冬瓜 ($69):大廚將冬瓜蒸至半熟浸冰水,之後將冬瓜球浸泡於藍莓醬汁中營造紫色效果,最後上碟擺至晶瑩漂亮的葡萄狀。出來的冬瓜球軟硬剛好、帶點彈牙口感,味道又清新開胃,作為前菜十分適合。

接著是仿似煮熟了的龍蝦的 龍蝦蘿蔔酥 ($69/件,最少柯打2件),其實酥餅內不含蘿蔔絲,而是用上本地青龍龍蝦肉 、芫茜及馬蹄粒作餡料,味道鮮美不膩;清乳酥化的橙色酥皮,則是麵粉加入甘筍汁的效果,賣相維肖維妙,是既中看又好吃的菜式。

當然沒忘選點最主打、選用蘭州拉麵奉客的 龍肉湯麵 ($149):客人下單後,大廚會即場製作麵條,而客人又可選擇3款不同的波士頓龍蝦配料,包括龍蝦鉗、龍蝦肉餛飩或香烤龍蝦尾,這天我們選了龍蝦尾。

湯麵上檯時,我心想:這湯也太多吧!試了一口後卻180度改變想法,因為湯中加入了龍蝦、3款不同的海鯛及深海魚等,慢火煲足超過5小時,再加蔬菜及白蘭地,清鮮迷人、比不少星店的龍蝦湯還好喝!龍蝦肉質與拉麵口感也是一流,份量也足(下圖是1/4碗),一定要試。

大家都吃出興來,又點了 京城.即燒片皮鴨 ($499),用上8個星期大的北京填鴨,於加入了蘋果木片的窰爐中烤製,賣相飽滿誘人,除了青瓜、京蔥,又配上哈密瓜、紅菜條,以及北京烤鴨醬、蒜蓉、芝麻醬及蔗糖等醬汁,組合悅目續紛,連呈上烤鴨的大紅盆也特別好看!

在龍麵館,大廚將即場片皮,並以3種方式將北京填鴨呈現於客人眼前,分別是烤至酥脆金黃色的鴨皮、鮮嫩的鴨肉及鴨皮連鴨肉。

其中,純鴨皮建議跟庶糖,口感清脆有如薯片;鴨肉則可配蒜蓉,要留意辣度都頗高呢;最後半肉半皮就可以配鴨醬、芝麻醬、多款配料及麼麼皮吃,這,正也是我最愛的口味!

由於烤鴨數量有限,建議大家提早預訂,而客人亦可從菜單上8款不同的做法中揀選其二食口味,除常見鴨鬆生菜包,又有元貝鴨絲羹、鴨鬆泡湯飯、荷香包鴨飯、梅子炆鴨架、八寶炒鴨丁、大千辣烤鴨、野菌炒鴨絲等等選擇 ($99-$139),這點也較坊間的餐廳優勝吸引~

大菜繼續來,接著這 啤燒元蹄 ($399) 又是非常引人入勝:菜式靈感來自中式經典菜餚燉元蹄及西班牙飯,大廚以本地手工啤酒配以元蹄,慢煮24小時,搭配石榴及菜飯一同享用,平衡整道菜式的味道。平日不愛米飯的媽媽也要大聲疾呼:這飯真的好好好吃!

吃膩了嗎?是時間來道 花拳秀腿 ($99),別怕,我們不是武打消滯,這不過是花形娃娃菜膽拌以火腿上湯的菜式的名稱。只能說,大廚心思及刀功非凡,配搭又有心思,如菜膽中加進櫻花蝦,既好看又能提鮮,太佩服了!

押尾還有又是堂弄、十分架勢的 桂花炒假翅 ($119),材料包括素翅、蟹肉、鹹蛋黃、豬肉、蛋黃、銀芽、蔥花、飛魚籽,由「小師妹」按次序純熟兜勻,最後堆成一座小山上檯。

加了鹹蛋黃關係,素翅變得相當香口惹味,而銀芽及飛魚籽則令口感更脆彈豐富,好味!不過淨食會有點鹹口,配上一碗白飯就妙絕了~

清掉以上食物後,實在超飽了... 不過甜品太精緻,又捨不得不點;最終好不客易選出 麼麼茶雪花 ($39),連同食友的其他選項一同繽紛上檯~

麼麼茶雪花其實是綠茶雪糕,拌以脆餅及曲奇碎上檯,是個清新的甜尾。其他食友的意式芝士杯 ($49)、千葉豆腐花 ($59)、椰子樹雪花 ($39) 也各有美態,如非太飽真想全部攻下!

吃了喝了那麼多,有需要排放一下;雖然店內特多痰罐,但只是裝飾/置放棄置茶包用,請移玉步去整潔企理、兼有爆肚驚喜的洗手間吧~

總括而言,是非常有心思的一間店子,充滿創意趣味同時味道相當不俗,我一定會再訪;特別是帶著外地朋友,除了介紹港式茶餐廳,這裡也絕對值得一試!
