I've dined at this place numerous times, have tried lunch and dinner and ordered all the different courses available. Every time the head chef was serving the sushi, it was an absolute delight. The decor is beautiful, place looks immaculate and classy, and is one of the cleanest sushi restaurants i have ever sat in. ingredients and in between courses the chef is very generous with a variety of pickled vegetables (not just the usual ginger). The sushi sizes are very large in size compared to the other high end sushi places, the chef is the opposite of
stingy when it came to the fish-cut slices and the amount of fine quality rice used. 
The soup that they serve is also one of the finest bowls of miso soup i've had. The egg dish near the end has a very
unique and sweet taste to it, definitely stands out from the rest of its peers. Finally the fruit that they serve as 
desert is fresh, juicy and superb.

寿司好新鲜,日本师傅做得不错,可惜该店经理不断赶我们走说是要收工,好扫兴,我们当晚四个人开了一枝$4500 的720ml 清酒,本来想再多开一枝,但没有存货,只好退而求其次开了几瓶$500 300ml 小瓶装清酒,我们8:30入座开始吃饭聊天喝酒,到11点左右经理便说要我们先埋单,不到5分钟便催我们一次,我们点了的酒都未学完就不停叫我们走,经理好唔适做。

我从来未食过OMAKASE(厨师发办)寿司,一个食家朋友话呢间很正宗,所以人一世、物一世黎试试。位於中环站附近,地点好易搵,门面简约,认住「鮨 中本」䁔帘就无错。入面只有一张L型吧枱,可容纳11人。我点了「月OMAKASE手握寿司」套餐,包括有12件寿司丶卷物丶汤和甜品。师傅炮制每一件寿司,都会好细心地切鱼生和握寿司。原来师傅──中本先生,由北海道黎,有接近30年做寿司经验,经验老道。海鲜食材佢会亲自打电话去日本落单,直接确认食材既新鲜状态,每日空运直送抵港,非常新鲜,入口便知龙与鳯。呢度食倒既都系以传统「江户前寿司」制法炮制既握寿司,其他平价寿司店果啲根本无得比。寿司呈一口大小,细细粒粒容易食。老实讲价钱确实唔平,但食物和服务都非常好,相对晚餐黎讲午餐性价比算高,个人觉得绝对物有所值。

The restaurant is in Central, hidden in one of the small alleys. The chef was Japanese and he told us they only import the finest food ingredients from Japan. He and the staff were very kind and accommodating to  our fish preferences. Each dish was very tasty and they paced it very well. One of my favourite dish was the unexpected Tamago-yaki. 位於中环砵典乍街地舖,属黄金地段。我们选了午市900HKD的15件寿司Omakase。是日寿司如下,*者佳:缟鰺黑鯥*鲣*鲔赤身中拖罗大拖罗*车海老鱿鱼海胆いくら沙甸**炙秋刀小肌*粒贝穴子卷物玉最喜欢的是沙甸,鱼味鲜甜,去骨仔细。小肌腌制得非常出色,酸度咸度适中。黑鯥没炙,但皮下油脂亦充足,鱼料品质甚高故不炙亦能充份感受到黑鯥的鱼香。いくら应是自家腌制的,太太说较清新不太咸,但我觉得鱼子汁不够鲜甜。属各有所好。拖罗中上。鱿鱼、海胆、缟鰺、车海老中规中矩。秋刀差了点,未到最肥美时期。粒贝穴子另评。玉子很好,跟在日本某间高级鮨店手法有点相似。其实,整体鱼料品质大多是不错的,但师傅细节处理可以好一点点。今天有2位日本人师傅,招待我们的是较年轻的,很多时都要请示另一师傅。这边的寿司其实风格偏向传统江户前寿司,大多简单以酱油点缀而不必多加调味。整晚只有鱿鱼跟炙秋刀较着重调味。在鱼料相对高质的情况下,本身其实更对我的口味。可惜师傅山葵量偏多,有2件寿司份量特别过份,令太太生平第一次在高级鮨店因山葵而流泪。坦白说,这等份量的山葵足以摧毁任何高质鱼生的鱼味,令人婉惜。另一问题是醋饭温度,大部份师傅会

最喜欢的是沙甸,鱼味鲜甜,去骨仔细。
小肌腌制得非常出色,酸度咸度适中。
黑鯥没炙,但皮下油脂亦充足,鱼料品质甚高故不炙亦能充份感受到黑鯥的鱼香。


いくら应是自家腌制的,太太说较清新不太咸,但我觉得鱼子汁不够鲜甜。属各有所好。


拖罗中上。鱿鱼、海胆、缟鰺、车海老中规中矩。


秋刀差了点,未到最肥美时期。


粒贝穴子另评。


玉子很好,跟在日本某间高级鮨店手法有点相似。


其实,整体鱼料品质大多是不错的,但师傅细节处理可以好一点点。今天有2位日本人师傅,招待我们的是较年轻的,很多时都要请示另一师傅。


这边的寿司其实风格偏向传统江户前寿司,大多简单以酱油点缀而不必多加调味。整晚只有鱿鱼跟炙秋刀较着重调味。在鱼料相对高质的情况下,本身其实更对我的口味。


可惜师傅山葵量偏多,有2件寿司份量特别过份,令太太生平第一次在高级鮨店因山葵而流泪。坦白说,这等份量的山葵足以摧毁任何高质鱼生的鱼味,令人婉惜。


另一问题是醋饭温度,大部份师傅会控制在皮肤或手温的温度,令鱼味更鲜。在高级鮨店,控制饭温是基本功。


头几件寿司饭温少许过高,但之後冷却了一会便变回手温。然後中段使用了新煮的饭,饭是热的还在冒烟。师傅试着等了一会,但入口时仍是太热,热得堪比刚煮熟的饭,完全浪费了其实很不错的粒贝跟穴子。


午市比晚市质素差,是香港大部分鮨店的特色。我可以理解Openrice食评不错的原因,因为鱼生食材品质是不俗的。晚市师傅如较富经验,整体水平应该很高。


但中环是商业区,午市重要性其实不差晚市,特别是不少客人会以午市品质作评估。


以午市900HKD+10%来说,只能评价2.5星。如有机会再试晚市会另作评价。

前几日同左朋友试中环呢间日本厨师发办Omakase,虽然价钱唔平但系物有所值!之前都听过人介绍过,店外门口有啲隐蔽,估唔到入面一样餐厅细细,短短嘅L字型吧台,只有10几20个位置,环境非常宁静舒适。坐喺吧枱嘅所有客人都可以喺板前同厨师中本先生交流。今次试左午餐-月,有12件寿司,卷物,仲有汤同甜品。寿司逐件登场中本先生都会慢慢介绍食法,可能每件慢慢品嚐细味。新鲜到晶莹剔透~海胆新鲜无腥味!最後嘅海苔汤都一样好饮,柚子雪芭好清新~下次可以再试!

整个装修同环境都十分舒适,个感觉有d似去左日本银座的高级寿司店咁!再加上个师傅系日本人,更加令客人有种置身於当地既感觉~食物方面我觉得个质素都叫做十分对得住个价钱,因为食得出d刺身同其他平价的真系有分别!今次系中午时段去食都几抵食!绝对会想再黎帮衬!!!

Very nicely decorated restaurant.Sushi chefs from Japan, no smiles.Initially too much Wasabi in sushi. Had to ask to cut back.Fish may be fresh and the price may be high. 700 dollars for the lower priced lunch set of 12 pieces of sushi. But disappointed in how bland the taste is.

赤身渍同中拖罗黎自爱尔兰,无熟成。鲔鱼味并不特岀。这里的舍利(醋饭)看似淡色,但却食得岀有小许赤醋的浓味,细问一下得知中本先生用了陈酿三年的赤醋(一般赤醋都酿十年左右)。怪不得颜色虽白,但醋味却不算淡。

富山湾的白虾同马粪海胆合格吧,可以再甜啲,始终我对白虾的期望非常高,可能比Mori Tomoaki的白虾竉坏了。穴子不算入口即化,不过不失。

鯵即池鱼,大家去到日本听到AJI就系佢。光物鱼,不算贵价鱼,但同鲭鱼一样好难做得好吃,今日的如常加一点葱去点缀,鰺的香味同葱的鲜味相互映衬,好吃!

当然不是板前元气嗰啲又乾又求其的玉子,那些店将香港人对玉子的印象全搞错了,令我地以为小朋友或者不懂吃鱼生的人才会食玉子。事实系江户前寿司,除了小肌、文蛤等高难度寿司,另外用黎分师傅同餐厅高下既,就系穴子同玉子!
睇过寿司之神小野二郎纪录片都知道二郎的待弟造了多少百次失败的玉子,最後二郎点头的时候,他都忍不住哭了。

寿司店的玉子通常分为蛋糕同吉士两大派的质地,通常一间比较高级的鮨店只会请一个精通玉子的师傅,所以只会有其中一种。今次中本的是吉士派,非常甜而且软,口感一流,帮整体拉了不少分。

整体来说,不过不失,师傅比较慢热,气氛普通。除了鯵、鲭、玉子以外无什麽回味的了,短时期未必再来,但听说有好多人都经常回头。不是说不好吃,但可能我不是熟客吧,始终吃厨师发板同师傅的互动都占了不少分数。

位於中环的厨师发板价钱合理,日本人师傅,食物质素良好,传统寿司刺身食法,日本生蚝超级好食,,食材也很新鲜,不像其他新兴的日本料理把寿司刺身弄得很花巧。平均消费每人$2000

今天黎到 鮨中本 试lunch set选了$800 的set 有15件寿司加卷物地点方便 容易搵今天由 日本师傅Masaki Nakamoto中本正纪 为我们握寿司 👍🏻吞拿鱼茸小卷入边加咗少少京葱非常之香😍花竹虾 鲜甜 这个应该不用介绍了吧 哈哈 味道浓郁鲜甜不得不提 咁多寿司里面最喜欢这一件口感 细腻 嫩滑 鱼味浓 !非常好味😍油脂分布非常靓 鱼油味香浓 但一点也不腻 完全没有筋 入口即溶食到最後另单点多件 白虾 (由多条细小的白虾造成一件寿司)非常鲜甜! 每次食omakase 都一定要点! 哈哈**总括来说这家寿司值得一试 比起同区既omakase 价钱更相宜味道也不错

朋友生日,相约到此庆祝。她选了月午市套餐我贪心想多尝试,选了明晚市套餐。午市有两名日本师傅主理。中本师傅和绳田师傅而我俩是绳田师傅,中本师傅的徒弟负责不负所望,食物新鲜,用材细心。我添加了几件时令贝类寿司,再考考师傅功力有几款美食我特别喜欢第一位当然是我最爱的酱油渍赤身它暂时是我在香港吃过最好吃的赤身它可以做到像拖罗一样入口即溶,不腥不臭,但鱼味十足烧玉子很滑溜,口感像玉子石腐玉子蛋糕?忘了是什麽🤔很Q弹,像加了弹弓的海绵蛋糕,软趴趴的连前菜萤光鱿鱼🦑,八爪鱼切片🐙都做得十分出色听闻这里的海鲜是从日本鱼市场飞机直运所以刺身寿司鲜味满载,做得很出色完全符合米芝连一星的要求绳田师傅很好,请我俩吃水果但我俩都想吃雪芭,所以软拒了服务更是一流,我早到了,店舖还未营业,都邀请我入座

第一位当然是我最爱的酱油渍赤身
它暂时是我在香港吃过最好吃的赤身

它可以做到像拖罗一样
入口即溶,不腥不臭,但鱼味十足

烧玉子
很滑溜,口感像玉子石腐
玉子蛋糕?忘了是什麽🤔
很Q弹,像加了弹弓的海绵蛋糕,软趴趴的
连前菜萤光鱿鱼🦑,八爪鱼切片🐙
都做得十分出色
听闻这里的海鲜是从日本鱼市场飞机直运
所以刺身寿司鲜味满载,做得很出色
完全符合米芝连一星的要求

绳田师傅很好,请我俩吃水果

但我俩都想吃雪芭,所以软拒了
服务更是一流,我早到了,店舖还未营业,都邀请我入座

There were only two lunch sets. I asked for the difference between the two sets. I was told that the more expensive set included 2 types of sashimi and two 小食 but only 8 pieces of sushi and rolls. Hoping to try something better and different, we decided to go for the $800 set. As we were in a bit of rush, we asked for checking out by 1:30p.m.

醋味噌白鱼

The server dressed up in 和服 was so kind to introduce the food to us in Cantonese after the chef's introduction to us in Japanese. For this first dish 醋味噌白鱼, she asked us to mix them well to eat. The sauce was quite appetizing but a bit too much and heavy. The white fishes were unfortunately like a paste stuck to each other. Not my cup of tea.

九绘&北极贝sashimi

We were told the 九绘 was actually 龙趸. It was not particularly rich in fish, i.e. a bit too plain. The 北极贝 was much better as they were obviously so fresh offering a slightly crispy texture. We seldom came across this type of 北极贝.

The server recommended eating the 鮟鱇鱼肝 with the wasabi if we found it too greasy. They were not greasy! They were so fresh and smooth. I didn't find them greasy at all. It was quite a good dish indeed. The server said this dish was usually served together with alcohol.

慢煮八爪鱼

The server told us that it had been slowly cooked for 3 hours to make them tender. They were tender but the sauce seemed a bit too salty.

The pickles marked the beginning of our sushi journey! The pickled radish was very fresh and crispy and offered the right degree of sweetness and sourness. Very appetising indeed. The 牛蒡 was too salty though.

For some reason the sushi rice easily broke apart, not just for this sushi but for other pieces as well. This sushi was ok. The rice was warm. The 金目鲷 was fresh but nothing too special.

I thought it was squid but was told it was cuttlefish. The server's detailed elaboration was really appreciated. It was quite chewy and fresh indeed. I liked the interesting temp difference of cold sashimi + warm rice in your mouth.

The server told us there was 紫苏叶 in the middle and spring onion on top. However, the 紫苏叶 flavour basically masked the whole thing. I couldn't really taste spring onion or the freshness of the 池鱼.

The seaweed was fresh and crispy with loads of fresh uni on top! Top-notch quality of uni indeed.

The seaweed for the minced tuna roll was also fresh and crispy. The minced tuna was also refreshing as well, except that it could have been better with some spring onions.

The 玉子 was really outstanding as they were cold and so smooth, just like creme brulee melting in your mouth. 

Overall, the sushi were not very special but the overall quality was quite good with some surprises.

The miso soup was quite a big bowl with quite some long seaweeds added to enhance the texture.

Yuzu Sorbet

The yuzu sorbet itself was quite good. The scoop was quite big with some yuzu skin inside. It was a refreshing end to the meal with the flavour of yuzu lingering in my mouth for so long. 

At first I thought the meal might not be filling enough but I did feel full afterwards! 

Sliced pickled gingers

A side note of the meal was that the sliced pickled gingers were a failure, one of the worst I had come across. They were too thinly sliced and were not crispy at all. They were too salty and spicy and too watery. 

That said, the overall quality of the food was quite good but there could have been more special types of sushi to justify the cost of $800+10% for the lunch set. 

The chef was very polite and efficient while the server in 和服 was so helpful and tried to offer more information about the food, which was highly appreciated. However, the male manager's level of service really ruined the whole dining experience. There seemed to be just one male manager and another server throughout lunch. My phone's photo-taking function was out of order in the middle of our meal and it took a while to fix it. It was when the male manager came over to ask us to eat faster to finish on time in a very rude manner. It really ruined the whole dining experience to be honest. I appreciated his reminder but he should have really delivered the message in a much softer way. I felt like I was scolded. When we asked for our desserts to check out, the manager didn't offer us any choice while we heard that the customers next to us got to choose between the yuzu sorbet and yoghurt mousse offered by another server. It took quite a long time for him to serve us the desserts which was done after checking out our bills too. Having spent $1760 at a meal being served like this has definitely discouraged us from revisiting. I really struggled for a while and finally decided not to give it a crying face and just reflected this in the subject heading of the commentary.
