This is a regular lunch option for me but I actually popped in during the night for dinner and there was a difference I will point out later..
As you can see from the other reviews and pictures of the menus from other entries there are four types of soup bases you can choose from. I always go for the Prawn soup. It's by far the best. Second is the Chicken and Pork soup. The laksa is rather weak in that it lacks flavour in my opinion. I have had far superior Laksa elsewhere in the city. The Loh Mee which is a thicker soup based with egg mixed through - its simply not my preference so its hard for me to compare as this dish isn't that common throughout Hong Kong.
They have a good range of topping options and the portion size is generous. It's filling... I always choose the mixed noodle - the only way to go in my opinion. If they would serve a three noodle mixed option I think I would be in heaven. Toppings wise I do think the pork belly slices is the best... Sometimes I go all out and treat myself to the sparerib which is from their bah kut teh pepper soup. It's definitely marinade well in the white pepper soup as it permeates throughout the meat. Otherwise be boring and choose from the big range of combinations that they have already on the menu.
The noodles are always served al dente - none of that soggy messy you get elsewhere... One big benefit of going at night is that the soup is piping hot... I noticed during lunch the soup can be lukewarm sometimes. Maybe it's a deliberate ploy to get you to eat quicker but I eating noodles with piping hot soup, chewy noodles and foggy steamed glasses is the way to go!
So go at night if you're feeling cold and in the need to scald the top of your mouth from the piping hot soup !!
