At the same time, I bought another book on Japanese cuisine called "日本料理的神髓". Since that's the cuisine I enjoy a lot, I'd like to know more about it and share what I've learnt.
It's surprising to see so much useful and interesting information out there just waiting to be discovered. Once again, thank you for your recommendation!
I know that book too ... and that's available in the public library. To save $$$ and leave more budget for good food, I'll borrow that instead of buying.
I was particularly interested in the "Shokunin" (職人 in Japanese) who "supervised" the making of 年輪蛋糕. Considering the actual working hours he is very well paid! And I think that would dwarf the recently famous ones in HK.

說到那米線店,我去的是沒有自己出入口的那邊;從店外的角度,該說是左邊吧!其實我明白小店的服務是比較有「個性」的,也不會怪他們。大家都係揾食啫!

我班同學仔同我斷斷續續逢禮拜六日o係君彩食午飯食o左成年, 佢地成日都話, "又係君彩?" 我同佢地講, 要好好珍惜呢度; 想o係同區食到咁樣質素o既食品, 起碼要雙倍價錢.
同你一樣, 我對 ""Hit 舖" 同跟風寫佢地o既食評一o的興趣都冇, 只係想搵一o的自己鍾意/有興趣o既地方食飯, 搵出佢地特別o既地方, 同大家交流下心得, 咁就okay 喇.

很同意你的說法.日本人對所有專心,專門的工匠甚為尊重.不會好似一些中國/香港人開口埋口”廚房佬”,”街市婆”,”竇木佬”,”地盤佬”.在日本是”大將,板長,Master", ”店長,社員”,”野菜屋”, ”役”...等.在言語上已顯示出對他人的尊重.

有人說,「怎麼日本人那麼不講效率,要養起這些沒甚麼經濟效益的職人?」這其實就是他們對文化、對 heritage 的重視。香港事事向錢看,但同時看見歷史被不斷剷除。
最近略讀了一書:<銀座專業職人世界第一>,對日本的職人多了些少認識。

有時受傷在所難免,無論是身體上還是精神上,多多少少大家都會有所付出和犧牲,只要不是長期永久性的傷害就好。最重要的是,每一個努力工作的人都值得尊敬,那張照片讓人肅然起敬!
此外,我都很喜歡影相,很贊同影相前要得到他人同意,這也是所謂的影德或者影品吧!
