餐廳以京都禪風為題去進行佈置,一竹一石都是由設計師用心整合,令我們對美食的熾熱的心情都放鬆下來,好好欣賞一下裝飾和聽取店員的介紹Omakase|$1980/人先付打響頭炮的是用雞尾酒杯盛放的天草明蝦,口感爽彈緊實,味道鮮中帶勁。墊底的還有溫室培育的蓮芋、來自靜岡的水果番茄和沖繩的醋漬水雲,其中的酸甜在口內迴盪,開胃菜效果一流前菜慢煮八爪魚,口感更鬆軟,愈嚼愈有味道,最後再吃一口醬漬大根清新一下剛好揚物炸鰆魚外面的麵衣十分酥脆,突顯出內裏炸得半生熟的魚生硬嫩滑有香,配上微酸的醬汁令鮮味更上一層樓刺身第一道是野生左口魚切成兩片,以鮮嫩滑溜為主,旁邊配上一條火炙左口魚裙邊,增添一絲油潤,最後吃一口網燒彈牙北寄貝刺身,有著炭香配著海藻鹽帶出甜味接下來是有如花朵般的鯖魚卷,經過師傅匠心獨運加入了新鮮芽蔥、薑芽和白板昆布後令鮮味更多層次,成為人人都能享受的美味鮮魚卷步入赤身魚中就是冬季當道的寒鰤魚,師傅採用備長炭去燒製,令魚脂的香氣和味道完全釋放煮物蒸神奈川太刀魚,太刀魚油脂豐富是必吃美食之一,蒸製後加上鰹魚清湯和蘿蔔蓉,口感以綿滑柔軟為主酒肴炸春卷第一口要小心燙口,上面再灑滿新鮮黑松露片,奢華得來是值得互有昇華的配搭壽司第一道是爽口墨魚,簡單用了鹽去調味,突出爽滑的口感.第二道名為九繪魚,亦即是香港稱為石班,白身魚中味道較濃郁,油脂不多不少剛剛好.第三道是我最愛的池魚,肉感豐厚油潤有滋味.第四款是壽司店基本功的醋漬小肌,銀身魚中鮮味最濃.重頭戲是這件霜降拖羅,放進嘴內真是入口即溶,是幸福的感覺.拖羅再來連擊我這件北海道白海膽手卷,脆香的紫菜夾著鮮甜滑口的海膽,尤如甘露流過喉間.最後一件是醬油漬赤身,深色的赤身卻不會鹹,咀嚼下沒有筋,經過熟成後全部軟化,是很好的收尾甜品是來自博多的香甜草莓和自家製朱古力蛋糕配藍莓醬,而不是清一色的進口日本水果,感覺主廚對菜單設計非常用心…Read More

即切整塊長崎產藍鰭吞拿魚

木質大門徐徐打開,映入眼簾的是帶有曲線的長壽司吧檯,位置共有12個,已經有5位食客入座正在淺酌,淺色木系的設計加上明亮燈光,令我不由然地對今晚的席前料理更期待.雅|$1880前菜三小碟三個小碗分別盛有栩栩如生的鹽煮蟹仔,經過至少半日炮製的鯛魚鹽漬,口感爽彈不覺重口味很開胃,最後是當季時令富山灣螢光魷魚,好好保持了海鮮應有的彈牙和鮮度,入口水潤爆膏很滿足季節清湯今天供應的是產自京都的鱧魚,被譽為關西人餐桌上的風物詩,是鱔類的其中一種,所以很考驗師傅的刀功,將所有骨刺精心細琢飛走,剩下啖啖養份充足的鮮味雨肉,加上點點梅醬提調鮮味,最後有滑溜仙草般膠質的順菜刺身五點第一款刺身是產自四國島愛媛縣的天然真鯛,在春天當造又被稱為櫻鯛,肉質相當粉嫩,食感是甘爽鮮甜,配上日本醋橘,酸汁內再有蘿蔔蓉,令口味層次更豐富第二款是富山灣的另一名物,被稱為富山寶石的白海老,呈上有如小山一般的白蝦,幼細的白蝦入口甘甜十足,可以由原味起步、加山葵、加醬油,最後還是原味最能品嚐到箇中海產鮮甜,樸實無華第三款是金目鯛刺身,先用熱水焯一焯鮮紅的魚皮,令口感變得爽脆,肉質是淡淡粉紅色,味道夠鮮濃厚,脂肪油潤感脫穎而出.第四款見師傅拿出來一撻就馬上收縮,原來是岩手縣產的厚肉赤貝,經過一撻後神經收縮口感得變得爽口咬勁,師傅快刀切出一道道幼紋使其味道鮮甜洋溢,適合用醬油配.接著第五款刺身是北海道的白見貝,一生永遠都見到陽光的貝殼類,味道鮮嫩,質感厚重有嚼頭.厚軸的是北海道的水八爪魚,左邊是足身肉,咬下去感受肉嫩味美,右邊是獨有的吸盤肉,口感非常爽脆燒物師傅將整串白燒鰻魚拿出來,魚油和燒烤香氣霸佔了室內空間,每人一份就見到白燒才會有金黃色酥脆的表皮,再來是軟滑鮮嫩的口感以及濃香的魚肉,比蒲燒更能品味鰻魚真味季節料理餐廳的招牌菜就是這道白海老真丈,同樣採用富山白蝦,加上其他材料如豆腐等炸成日式炸蝦丸,外層帶點焦脆,內裏卻是軟綿蝦鮮味,令人意想不到握壽司十貫首先登場的是產自佐賀縣的銀身魚伊佐木,正值當造時候,肉眼可見鮮紅紋理,味道最為鮮味,一過了季節肉質就變得暗灰全無價值.本日有三款銀身魚,師傅梅花間竹奉上,令口味和口感有紓衝和更清晰,中間有這款間八魚來自擁有活火山的櫻島,於黑潮下成長使肉質更為結實,魚腩部位非常肥美,口感相當濃郁香醇,肥而不腻.第三款壽司是來自九洲大分縣佐賀關的關鯖,唯有這裏的真鯖可冠上關字,代表了關物崇高的美食地位,肉質緊實頗有彈性,咀嚼時味道更顯濃郁青森縣的帆立貝只會在高級日式料理店出現,因為供應不算多,是官方認證的特產,甜度高有點綿密漿口感覺,在齒頰間留香神奈川縣產出的池魚和壽司是絕配,因為池魚的油脂不高,肉質以鮮甜為主,與微鹹開胃的醋飯有加乘作用.壽司環節前師傅將一整塊長崎產藍鰭吞拿魚展露出來,手起刀落下將赤身、中拖羅和大拖羅部份分開,再將赤身最關鍵部份天身用醬油漬。當拖羅部份掰開在眼前時,油花差點閃得我睜不開眼睛中拖羅和大拖羅在油花和軟綿程度真的有一個遞增的感覺,入口即溶充滿幸福感,最後再將醬油漬天身拿出就是師傅匠心獨運之處,較鹹香的天身如果先於拖羅出現將會令味蕾集中於鹹味失卻肥美油脂,壓軸的話就感受到有別於赤身筋勁口感,天身相當柔軟鮮甜為正餐結尾的是根室產馬糞海膽手卷,必需用手即接即吃,打卡時間可能只有5秒,馬上從外層香脆海苔轉移到冰涼淺橙黃色的海膽,味道濃厚甘甜,回甘強且是極其鮮甜…Read More
