台式火鍋一向都好喜歡,葵芳選擇唔多。近年大熱山見台式火鍋係唔同地區分店都試過,無論環境、野食、服務都幾好,新都會分店今日一開張,就急不及待去試。叫左Lv. 4,椰子雞湯底。湯飲得出係天然椰子水,清甜可口,雞有雞味,唔霉亦唔韌,出色。用來烚火肉,好岩味。呢度d牛整體都幾出色。自助吧選擇多,而且睇得出質素頗高。牛丸單睇顏色就知唔係出邊香精牛丸可比。鮮蠔丸真係第一次見,食落唔腥,鮮味十足。熱食同樣出色,尤其鍾意古早缺鴨,夠入味!調料區驚喜發現傳統紅蔥頭油,一啖台灣味盡顯,好鍾意!飲品區選揀都好多,有甜唔甜,有汽無汽一應俱全。用餐環境闊落,樓面服務唔錯,主動換碟。見到除左幾個靚女侍應,仲有一個顏值好高既靚仔主管。新都會分店比起其他原有山見,應該係有優化,整體好滿意,值得專程去試下。…Read More

荃灣地道美食如雲,拿筷子食的餐種(如麵、米線等)選擇亦非常多,但要數高質素日本燒肉店,真的想不起有邊間。地膽朋友介紹,大鴻輝商場新開左一間,佢去試過話好正!一聽到大鴻輝,即係要打蛇餅排長龍等lift上樓啦,唔好搞!朋友話係1/F, 即係一程扶手梯就到。正!咁就要去試下。估唔到平日星期二的晚上,大鴻輝條遠近馳名既等lift人龍仍然無令我失望!排到環繞地下大堂大個圈......好在我只需要一程扶手梯就可以上到餐廳。第一印象:估唔到,個場裝修真的好有誠意!環境好寬落,而且壁畫好吸引呀!一大排飲品櫃,正!成晚無論食物、服務或用餐環境,都非常一流!壺漬封門柳,先用大火燒至兩邊焦香鎖住肉汁,再轉中慢火烤至八成熟,內嫩外香,無得彈!大虎蝦、豬腩都非常有誠意值得一提,蒜泥醬配燒豬腩肉食,極好味。熟食水準都好高,尤其鍾意炸雞、榴槤炸彈重頭戲,係呢條天梯,由下而上食,真係一大享受!店員真係非常細心,主動幫忙調節火力,換燒烤網......仲提示我like 社交平台就可以有Movenpick雪糕食,激讚!如果keep得住,我相信將來大鴻輝會再多條人龍。…Read More

老友係K11 MUSEA開左間舖頭, 星期日朝早一早去探佢新場。行經2樓多賀野門口, 見未開門做生意, 八卦影左幾張相。個半開放式廚房吧台好靚, 流線形!一入門口呢兩棵樹, 亦都好特別, 玩味十足。問個靚仔經理開門時間, 同朋友提早15分鐘來排隊試下佢。好貼心, 見到有人排隊, 就算未到開門時間, 都放人入內坐住先。話哂自認麵精, 咩係好, 咩係壞, 一定逃唔過我法眼。朋友一向鍾意鹽味拉麵, 叫左碗粟國鹽拉麵; 我就見個靚仔製麵師咁岩製緊沾麵用既麵條, 叫左碗豚鴨沾麵。 賣相好, 份量足, 朋友話品質好好! 鹽味唔死鹹, 湯底清徹無咩油份, 獨有一股鮮甜味, 佢飲哂所有湯, 仲意猶未盡。豚鴨沾麵, 麵條明顯比拉麵粗, 份量亦夠。試左啖沾汁, 完全無坊間一鹹獨大既問題。反而覺得可以再鹹DD。獨有豚、鴨、魚、雞混雜, 鮮味無法擋!! 麵條掛湯好, 唔點任何汁, 試左兩條, 有淡淡麥香。麵條彈牙, 或者有人會話偏硬, 但我覺得咁先係沾麵! 令我諗起上次去清遠食雞, 同行某位友人話:「哇! 咁硬既?!」哈哈..... 半隻流心蛋, 叉燒, 醃笋, 紫菜及蔥花, 加埋食, 美味, 但我想佢俾多份我囉~~見佢麵類的確做得好出色, 所以叫多份小食, 炸雞juicy! 香脆好味! 個醬都好出色 (唔知係咩醬, 估計係自家調配)見隔離枱黑椒炸雞都好似好香, 下次會試下。整體而言, 呢間真係靠得住! 無論餐廳環璄, 出品都非常出色! 唔怪得我食完行出去時, 見到條人龍, 已經越過左隔離間咖啡店。…Read More

鍾意食辣,所以周圍留意有無高質素湖南菜。但香港,真係唔太多,於是不時北上解喝。呢個情況隨住食過湘薈後,會改變!朋友住tko, 見有新湖南菜開張,就第一時間約齊人腳去試下。位處天晉滙,出左港鐵右轉上扶手電梯,右轉穿過條天橋,再左轉落扶手電梯就到,非常方便快捷,全程2分鐘。門口有張好大既剁椒魚頭相,好搶眼。入到去,環境舒適,有vip房。吊燈及一面裝飾牆好吸睛。來到湖南菜餐廳,點可以唔叫剁椒魚頭?!呢間餐餐叫:蒸氣剁椒魚頭。真係有煙出架,好得份量十足!目測淨係個魚頭,都有2-3斤!加埋兩條魚腩,唔使擔心唔夠食。紅黃椒的經典演繹。味美、鮮甜、嫩滑。我地再叫左碗「魚麵」- 其實係淨麵,撈埋剁椒魚頭既汁一齊食!正!雜菌羊肚菌乾鍋都好出色。係台度明火收埋d汁,熱騰騰,送飯一流!而且又健康有益,多食唔肥。席間仲叫左幾道經典湖南菜,如長沙臭豆腐、辣椒皮蛋、石門肥腸、臘豬面等等,都相當有水準。甜品係糖油粑粑。滿足!呢間餐廳如能keep住呢個出品、服務,會好快爆紅!拭目以待。…Read More

再次光臨,有進步喎!

緣份是屁,話來就來。係KCC返工既老友,近來好有神心lunch多次「山長水遠」過來葵芳新都會食呢間稻成京川滬。食極唔厭,竟中午食完,約我食飯晚。佢要癲,個屁要放,作為老友,當然二話不說。平日既夜晚。預先打來訂枱,故此好快獲安排入座。一行四人,幸運地坐係入口左邊個排半封閉式「卡房」。呢個真係要讚!好有誠意既裝修安排。冷盤唔講啦,早前幫襯過,已知佢水準一流。今次講三道主菜,首先係水煮牛肉好明顯,師傅係有功架!D香辛料亦真係有係滾油爆香,而唔係純粹有形無實。食得水煮,當然期望佢有水煮應有既麻、辣、香、鮮。呢度水準係坊間平均水準之上,但食得辣既我,希望佢可以做得辣D,食落先夠過癮!水煮,食配菜先係識食。蓮藕片,芽菜,萵筍固然好,我更愛粉條。煙煙韌韌,入哂味,非常美味。乾爆蝦球,你咪以為乾曾曾,獻汁豐富架!而且蝦球並非平價白蝦,而係肉質鮮甜既虎蝦,啖啖爽口彈牙,非常美味,送白飯一流!作為京川滬餐廳,上海菜代表賽螃蟹當然唔少得。蛋白潔白滑嫩,加上瑤柱絲,更鮮甜可口。雖身處「房」內,但枱邊有各類標示清晰呼叫店員既按鈕,一按唔使幾耐就有人來服務,加分!其實,稻成京川滬位處新都會,於下層就係通往葵芳港鐵站和葵涌廣場既天橋,位置非常優越。加上店內裝修優雅寬敞,假如能繼續堅持:1. 門口接待處時常笑面迎人,發自內心的熱誠招呼2. 店員各人多走一步,貼心服務人客,係人客未提要求前,就主動介入幫忙解決3. 京、川、滬菜式口味要鮮明,唔好上海回鍋肉做左川式回鍋肉;川式炒菜變左酸甜4. 水煮該麻辣,就麻辣。咁先可以令人客加深印象。始終區內比較少高檔精品式川菜。幫襯機會仲有好多,我一定會再來!…Read More

呢間譚仔,以往一到午餐時間,必定人頭湧湧。所以比較鍾意係繁忙時段前或後光顧,避開人潮。以往一個人可以優先獲得安排坐位。以往門口有個非常醒目既姐姐負責安排入座。以往廳面每個店員都好似活力十足,快手快腳......以往近幾次再去,已經無需避開「繁忙時段」,因為睇來,亦唔太繁忙。一個人攞左飛,見到場內單丁位大把,而店外等候者亦只係三三兩兩,但就係要等。好不容易同個D兩人飛、3人飛、四人飛一齊叫號,終於叫到,可以入座,咪又係被安排坐係近門口個D單丁位。叫左確重慶酸辣豬雞米線 。自從某次同友人來食,佢叫左呢款酸辣試食之後,清湯已被排在第二位。又酸又辣,的確過癮!雞肉豬肉水準亦與從前相若。廳面服務,真係一大問題。唔知係咪被收購後架構上有咩重大改動影響到前線員工士氣,好明顯店內侍應數目比以住少好多,亦無咁積極。一間餐廳要成功,環境差可以係出品及顧客服務方面補救。出品未能做到鶴立雞群,亦可以通過定價吸引食客。但若然顧客服務方面變差,衰落既喪鐘就敲響了!畢竟係附件,食肆林立,貼錢買難受之事,唔係太多人願意做。…Read More

次次幫襯呢間貴香園,都不期然諗起幾年前開張不久,我岩岩幫襯佢時,佢事頭婆一句:「唯一有咩咁巴閉呀?只不過係係荃灣咁多年,儲埋一大班長情客而已!我旺角間舖,夠排埋長龍啦!假以時日,呢間夠可以做到啦!」的確,幾年過去,呢間貴香園真係人氣不絕。我諗,除左有事頭婆既魄力(雖然好耐唔見佢出現係舖頭),仲有兩位好做得野既店員。成日做到爆,又逼,座位又凹陷,但勝在店員夠親和力。呢樣野,唔係間間做到!腩肉唔少得,今次加埋豬潤我覺得佢係四坡坊唯一與路德圍既中庸之道。入味,但不至於如前者油膩。湯底出色!但其實我鍾意大腸多過豬潤,只不過試左幾次後,每次唔係凍凍地,就係太稔,所以就將之剔除在外。有時經過,見到佢生意好到開埋橋邊枱櫈,真係替佢開心。我諗只要堅持出品質素,加埋店員咁既服務水平/方式,生意只會越做越好。…Read More

叫得曼谷泰菜,如果做得唔「泰」好,就唔止關乎一間餐廳面子問題。午市早段,見難得門口無人等位,入內。被安排係最入邊2人位,大大塊落地玻璃,出邊就係新都會露天playground, 孩子天真的笑臉,未食都覺得心情舒暢。同行友人叫左紅咖喱牛腩飯牛腩炆得夠入味,咖喱亦香濃,淋上白飯面,一同進食,好味。唯略嫌選用之白米煮出來既白飯唔夠香。但同咖喱撈埋食,又無咩問題。只係如果可以轉過一款好D既米,總會好D。我就叫左泰式炒金邊的的適適,乾濕度適中。再乾一分就太乾,可見出品有一定保證。蝦亦唔係無味道既白蝦,而係肉質鮮甜既無頭鳯尾,加分位。跟餐沙律所用既container亦唔錯,環保得來同泰菜好匹配。沙律本身亦唔錯。可能係所坐位置屬場內最唔顯眼角落,比較難搵店員幫手。除此之外,整體都可以。…Read More

荃灣可以話係麵食天堂。無論你鍾意上海麵、山西刀削麵亦或雲南米線,總會搵到非常高水準既餐廳。而其中雲南米線,一向係四坡坊與路德圍之爭。若將之比喻為紅酒,前者就如個性鮮明既mouton, 後者更似入世既lafite兩者誰最好?為何總要分最好?我兩者都鍾意。論味道,四坡坊令人印象深刻D。但若論經營之道,路德圍贏九條街唔止!君不見佢唔做「唯一」,好多區都有分店?!旺角砵蘭街呢間分店,係繼路德圍以外,我最經常幫襯的分店。同樣一碗腩肉貢丸米線。由中學求學時代食到依家,每次再遇,都諗起佢精明既老闆娘同舖內幫手既嬸嬸。一眨眼,十幾廿年......講真,呢十多年間,佢口味都轉左幾次。明既,以往小店一間,發展成連鎖式,仲有咩自己車隊行中央供應鏈,口味一定要配合實際運作。可幸廳面服務水準,keep到。呢樣看似容易,但我深明做起上來,非常困難。畢竟改變食物口味易,改善服務水準,涉及眾人之事,就難度唔少。作為佢長期捧場客,就如何在競爭極大既市場上長期成功經營,我覺得當務之急,係要搵到同其他人既「差異化」。四坡坊唯一以唯一,以出品做招來。雲桂香呢?老闆娘,呢個問題不可不諗諗。…Read More

隱藏於葵芳新都會廣場的大驚喜,近期最大發現

葵芳真係食肆林立,無論係社區會堂一帶、葵涌廣場或者新都會,選擇之多,菜式之廣,令人側目。但最愛,都係新都會廣場。一分錢一分貨。以往,只要過開來呢頭,芽莊總會成為我午餐首選。對於佢隔離呢間Parkview,除了經常坐唔滿外,再無其它印象。今次再次經過,見到Parkview個名,改左!不再是Parkview by A-1 Bakery,而係就咁一個字:Parkview,細問下問口個靚仔,才知原來去年11月已經換了經營者。見場內幾乎全院滿座,我相信群眾既眼光係雪亮既。故此入來一試。一坐低,就有侍應行前招呼,叫左個推介,石板牛扒餐pink!!!你無睇錯!的確係粉紅色!上次見到pink pink已係大半年前係大角咀一家地舖小店,真係難得一見架。鍾意半生熟既我,憑藉底下塊超高溫既石板,兩面煎香,好容易就做到咁既效果。肉汁充份被鎖住,而且外脆內嫩,近期少見既高質素「扒」!再沾上兩個house dressing, 正!旁邊D配菜,今次就真係只可以做配菜啦!我食肉食到幾乎忘記佢地存在!估唔到餐湯同餐包,都唔係普通貨色你無睇錯!的確係大大塊牛角包,仲暖粒粒。一啖香酥牛角包,呷一口超濃松露雜菌湯,咁既價錢,咁既用餐環境,無得輸!係葵芳要搵間坐得舒服,就腳,出品好,服務貼心既西餐廳,真係唔多。呢間Parkview已被列入一定會再光顧既選擇之一。我係度諗,如果唔係入口唔多覺眼,行快兩步都會miss,憑咁既出品,服務與及環境,繁忙既午市時段,理應門口排長龍先係。…Read More

曾幾何時,講起食拉麵、小籠包,一定諗起翡翠。但呢種情況真係不復存在。原因係,不經不覺間,佢由一間以出品及服務取勝既優質餐廳,變成無服務,出品極普通既一般餐廳。一間餐廳若要長期成功經營,不外乎係營造用餐環境、顧客服務與及出品上下功夫。以往的翡翠可以話三樣兼備。然而,近年多次光顧(都係荃灣廣場店),只有裝修依舊,出品、廳面服務,一一欠奉!首先,午市後半去到,場內食家零零落落,但就係門口呆等2分鐘先獲安排入座。明明無咩人,兩個人又被安排坐係欄杆邊2人位。本來有心叫多D野食,但因為張枱太細,無謂搞到無位置擺放,所以只係叫麵食。因為本來唔諗住寫食評,所以無影相。但越食越覺得唔寫唔得,所以影成咁,請見諒。講句公道說話,佢原本賣相OK但味道就真係不敢恭維。成碗麵,被一個「酸」字掩蓋哂!OK,或者佢話佢係華東風格,酸D無問題,但為何又加咁多辣油?呢D辣油又似真係一般街邊叫貨既辣椒油,無個性或深度可言。當然,我亦唔會純真到認為佢會為一碗擔擔麵而即場烹調一碗自家製辣油。講完出品,廳面服務真係不敢苟同!一個永遠黑面既男經理,帶領住一班對人客視若無睹既侍應!舉得手,你就預要舉多幾次,或「長舉」先會有人理!仲要經理大大聲:「放低啦,唔得閒招呼住!」最後竟然係負責上菜既姐姐幫我解決問題......無言我諗,一個品牌正在沒落!…Read More

依舊,推開那塊厚而不透明的透明膠門擋。仍然係圓膠櫈,圓摺枱。兩邊牆依然貼滿餐牌。佢老闆,依然頸戴八両金,健壯如昔。一切無變!係囉,好既野,變來做咩呢?!今時今日係香港地做餐飲,叫「唯一」既唔止呢家。但呢家真係做到合乎其名,全港只此一家。歸根究底,只有兩種可能性:1. 只懂堅持出品而不懂經營之道2. 資金問題我諗,佢屬前者。講錢,佢蝸居四坡坊,即紅遍港九近二十年,為不少人心目中雲南米線之首選。點會無金!知道老闆堅持每碗米線上枱前,均用小鍋煮過,力求熱烘烘,香味遍達。呢種近乎「戇居」的堅持,為佢開了發達之門,卻同時關了可能大肆擴張的機會。雖知道坊間做米線者十之有九點九九九九都係車仔麵檔咁運作,幾樣做好的食材執成一碗,加上熱湯上枱。好似佢咁做,搵鬼同佢打工~哈哈~~~呢碗「腩肉豬大腸米線」,由細食到大。由好早前一粒粒肥脂浮係面,到依家「清」左好多,但依舊係油立立!無錯,佢就係咁有個性。從來都無話sell健康少油。但個味道,真係令人回味。辣得來酸,酸得來一啖嫩滑、爽脆、軟稔......忍唔住連湯都想飲埋。但我通常叫多支豆漿飲,明知你會搞到我再肥D,可避,則避DD啦!歲月如輪轉,小店,轉眼熬成經典,真心希望再過二十年,都唔好變!好的東西,變來做咩?!…Read More

帶小朋友食lunch,揀適合佢地 ,而佢地又鍾意既(至少唔反對)係難題。小雨天唔錯。今次已經係N次來。叫一碗「金菇雲吞米線」已係指定動作。鍾意佢湯底清清地,唔似出邊大都數同類餐廳咁油立立。成碗配搭亦以一字「清」可概括!慷慨的金菇,淥熟而外皮無穿無爛的雲吞,再加上軟硬適中得來,不失滑溜口感的米線,的確係少肉之選。原諒我影得太遲,只係影到豐盛過後遺留之殘影。放心,靚女未變靚姐前,係靚女!除左經常幫襯的葵涌廣場分店,荃灣華都中心亦開了間,希望佢平民化得來,繼續保持應有的服務水準。…Read More
