都有一段時間冇去東大街,今次再去又另一番景象,餐肆種類更多元化,中西日東南亞都有,不過最吸睛都算係呢間叫Seafood Stand,主打海鮮同漢堡,霓虹燈管跟時髦嘅工業風裝修,牆上大大塊嘅黑板介紹招牌菜式,顏色配搭豐富,目不暇給。餐牌製作精美,每種漢堡都圖文並茂,相片吸引。所有漢堡均單一發售,薯條需要side order。除咗漢堡之外,亦有海鮮拼盤,青口,可供選擇。蝦兵蟹將漢堡 $78 - 原隻酥炸軟殼蟹代替漢堡肉,開邊蝦仁,新鮮蔬菜蕃茄,配和風麻醬及蛋黃醬。原隻軟殼蟹的確俾到視覺上嘅衝擊,隻蟹亦唔油膩,不過,味覺上驚喜欠奉,層次簡單,口感唔實在。深海鱈魚漢堡 $58 - 配料醬汁基本上同蝦兵蟹將一樣,話就話係他他汁,但係食唔出同個蟹堡嘅汁有咩分別。炸魚柳個皮唔厚,menu寫係天婦羅嘅炸皮,雖然唔太係,但係味道做得唔錯,一啲都唔油膩,魚塊軟嫩又夠厚肉,比蝦兵蟹將充實得多。至尊和牛漢堡 $88 - 呢個就似番啲樣,塊漢堡扒油香肉甜,口感嫩滑多汁,配上軟綿嘅煎滑蛋,松露醬,味道總算有層次。漢堡扒唔算薄,性價比還可以。除咗漢堡,我哋叫咗個白酒煮青口同芝士煙肉薯條。青口嫩滑,唔腥,奈何為咗辟腥落咗大量白酒,加上白酒質素平平,腥味就冇啦,不過偏濃嘅酒味唔係個個頂得順。至於個薯條呢,腎衰竭首選,煙肉咸,芝士汁咸,我ok,但係連條薯條都咸到入心入肺就只此一家。薯條上面舖煙肉同芝士焗,做法唔難,所以味道要精。呢個薯條,又鹹又乾,只適合重口味嘅你。店舖嘅裝潢的確令人回首,可惜食物定價及材料配搭甚至份量,都要重新定位。始終都係食味同價錢行先,食物質素要跟裝飾品味接軌,方可發揮餐廳最大潛質。…Read More

响香港似樣啲嘅中價湘川滬菜

信德最近開咗堆新舖,有好幾間食肆,早前同事見到有興趣,今日約埋一齊去試。睇餐牌大致係湘川滬菜,價錢比同業貴些小,亦有做午市套餐,二人前$218三樣餸,跟白飯,湯同甜品。可能因為新開張冇耐,碗碟非常乾淨,服務亦很妥貼。我地一行四人叫咗個二人餐,加多兩碗麵同一個小菜:鎮江肴肉 - 口感比食開嘅冇咁啫喱,肉絲份量多啲,明膠較少。毛血旺 - 湯底麻辣有勁,香辣惹味,大腸跟栢葉都好入味,唯豬紅味道欠奉。可以叫個陽春麵撈呢個湯,一定正!小籠包(四隻)- 湯汁好足,而且不羶不膩,肉餡冇實的的,不錯嘅小籠包。擔擔麵 - 有辣味,香料味亦足,唔會俾花生芝麻味蓋過哂,湯滑而不稠,入口順喉,係香港少見嘅質素。嫩雞煨麵 - 呢個有驚喜,普遍餐廳麵質會好稔,麵跟湯混為一團黏糊糊咁,呢度嘅麵吸到湯汁嘅雞香之餘,仲唔會稔到爛,青菜配搭佳,係色香味俱全嘅煨麵,難得!新疆孜然炒羊肉 - 呢個拎到近枱已經聞到孜然嘅香味,羊肉軟嫩唔太羶(有羊應有嘅羶味),惹味非常,餸飯一流。隨餐奉送:瑤柱粟米羹 - 味道平平,有少許瑤柱味。椰汁糕 - 一般啦,椰味都夠,如果加啲淡奶去造,味道會香啲濃啲,不過勝在唔太甜。臨走時個知客問我地啲嘢啱唔啱食,閒聊咗兩句,仲介紹我地下次黎食水煮魚,同埋俾我試佢嘅私伙辣醬 - 鬼椒醬,堅辣,辣到扒响度。其實呢啲基本嘅留客技倆都只係門面嘢,不過令個客印象深啲又開心啲,呢啲先係今時今日應有嘅服務態度。…Read More

新蒲崗呢啲地方真係好日都唔會去,唔係咁啱响嗰頭做嘢,都唔會誤打誤撞入咗新蒲崗廣場。傍晚時份,個商場只得小貓三兩。我餓到冇氣冇力,見到有間日式放題,$218加埋一都係$240,門口仲大大隻字寫住生蚝任食,仲唔衝入去咩。响衝入去之前,環顧四周,門口有個雪糕櫃,裡面係雀巢牛奶公司,隔籬張枱上面有類似紅豆沙嘅糖水,同埋自助沖菊蜜之類嘅熱飲。好似唔係好對路,不過新蒲崗對於我黎講仲山卡啦過羅湖(因為冇地鐵),唔識路又唔想再搵食肆,唯有踫踫運氣,入咗去先算。室內陳設簡陋,入門口對正個廚房,則邊有個閒置咗嘅魚生櫃。牆身粉紅色,有啲似茶記裝潢。睇飲品,都係嗰幾味,汽水,綠茶,種類都算多。再睇則邊嘅係甜品同前菜,啲中華沙律,海蜇已經俾個雪櫃吹到面都乾埋,啲八爪魚仔就醬多過肉。甜品仲得意,啫喱,涼粉,水果沙律係意料之內,至於個味噌汁湯碗埋面竟然係雪耳糖水,呢吓真係估你唔到。唔緊要,呢啲都係次要,重要嘅魚生掂就得啦,仲有生蚝喎,實回本啦。埋番位,睇餐紙,咦! 好似少嘢揀啲喎,唔好理,剔咗啲魚生先,整多兩隻蚝 (每人第一次可以叫兩隻,之後要一隻一隻咁點)。魚生新鮮,爽口,因為夠凍,件件好整齊,不過就冇咩味,個帶子唔錯喎,三文魚都可以,咁隻蚝呢? 此店最大賣點,會係點呢? 好大隻,好厚肉,好爽口,不過都好腥,仲有啲甘苦,唔落cocktail sauce係唔得嘅。原先仲以為要逐隻叫咁麻煩,而家直頭唔會再叫。天婦羅都唔差,以港式標準黎講。汁燒可樂骨幾好喎。壽司質素都達標, 玉子壽司除外。個蝦兵蟹蓋其實唔錯,賣相吸引, 但係個餡好多美乃滋同漿粉,焗完之後感覺油油的。濃湯煮野菜什菇反而幾好,可能湯底係事先調配好,冇得輸掛。一口牛係好食嘅,上枱時仲香噴噴,味道好,不過有啲筋。就係咁,我就响一個唔熟悉嘅地方,食咗個唔知點講嘅港日放題。佢價錢唔算貴,旺角嗰啲大X喜,大喜X,都要成三舊水一位,不過人地多嘢揀啲,環境好啲,坐得舒服啲。講性價比,$240算係咁,有蚝任食喎,其實係抵嘅,唔計蚝嘅質素嘅話。難怪响星期二晚上,都人來人往,坐無虛席。…Read More

要搵一碗有水準嘅車仔麵,唔好以為响柴灣呢啲舊區就唔難搵,除咗家陣出哂名,我由細食到大嘅財記之外,有風味嘅舊式熟食市場都買少見少,難得源記都仲維持到相當水準,坐室內有冷氣,雖然少咗啲地道風味(地下濕滑,亂七八糟,冇冷氣果啲呢),但係可以舒舒服服食碗車仔麵,都算唔錯。源記嘅車仔麵用料足,份量夠。每樣餸都最少有四舊,魷魚唔係泡到肉色半透明嗰啲,而係無浸製過嘅魷魚翼,一啲都唔韌。冬菇大大隻,不過可能太厚,唔夠入味。豬紅都唔錯,入味啲就仲好(皆因本人重口味)。辣椒醬就不過不失啦,有鹹有香都夠辣。加埋炸蒜同蔥仲有炸蝦米,香味十足。個炸魚皮都唔錯, 夠脆, 唔太薄, 味道剛好.平民住宅區有度好,食野唔貴,四餸一麵三十三蚊,港島區真係冇幾多間。至於味道,個湯就梗係唔夠老銅60幾蚊一碗果啲咁把炮啦,不過樣樣配料都有誠意,又係街坊生意,如果你咁啱黎開柴灣呢個山卡啦,不妨試下。…Read More

粥粉麵可以算係香港嘅代表作,可惜因為本地人對廉價食物要求低,但求填飽肚子,只要夠平,質素都可以隻眼開隻眼閉。冇人要求就自然越做越差,好嘅有心嘅粥麵店買少見少,想食碗有哦水準嘅粥都唔係咁易。今日帶住宿醉,一早開完個會,戇居居咁走入朗豪坊,諗住食啲comfort food ,將自己帶番黎現實社會,就俾我撞入呢間池記。有唔少人同我講過佢點好點好,我心諗,中環羅富記,上環生記都好出名,我都食唔少,呢間懶係高級嘅粥麵店,又有幾勁先,定係好似咩皇粥店咁,得個貴字。坐低咗,睇Menu,有套餐,粥連餐飲同菜$72,都幾乸利。要咗碗皮蛋獸,加杯豆漿,要埋個柱侯蘿蔔。賣相唔錯架,份量足,都值$72呢個價嘅。蘿蔔夠色,入哂味,不過柱侯汁可以濃味啲。碗粥好綿滑,啲米開哂花,口感好,調味佳。皮蛋冇'壓'味,瘦肉好冧,鹹味適中。服務都算唔錯,個粥係有心之作,菜嘅選擇都ok,而且有俾心機落去,連叫碟芥蘭都係上湯浸住,俾幾粒杞子咁,呢啲咪識Do囉,俾到人誠意感,又靚。雖然係貴啲,不過今時今日,冇50蚊都唔駛指意有啖好食嘅時勢,呢碗粥令我好舒服,好滿足。…Read More

上環有間招牌顏色配搭特別,室內裝修別樹一格,牆身又紙皮石又文化石嘅食肆,唔講仲以為係裝修材料showroom,點知原來係食車仔麵嘅。老實講,望住咁花多眼亂嘅陳設,坐耐啲都有壓迫感,不過,風水同設計呢家咁高深嘅學問,我識條鐵咩。我個人好鍾意食車仔麵,佢絕對係代表香港嘅麵食,比起雲吞麵更具香港特色。食麵又點少得辣椒油,辣椒油亦係決定一間粉麵店好唔好嘅指標,佢哋嘅辣油夠辣夠香。呢度嘅餸式都係大路果幾款,款多少唔係問題,最緊要係樣樣好食。呢間比起'林子善'多咗經典嘅雞翼尖,夠稔離骨但未至於霉爛,可以'算'下,唔錯。豬紅好入味,正! 咖喱魷魚就不過不失啦。另一樣考店主功夫嘅係冬菇,冬菇呢家嘢真係唔慳得,唔靚嘅菇會有苦澀味又韌,落多多糖都救唔到。呢度嘅菇有水準,雖然菇未至於好堅,不過夠厚,亦好入味,唔會太甜,入口爽滑。最緊要個靈魂未講, 呢度嘅應該有溝甜醬, 甜甜地又夠辣.菜餃皮薄餡多,調味適當,唔肥膩。掙啲漏咗個湯未講,湯頭偏淺色,味道較'林子善'簡單,但依然夠味。似乎冇咩味精,唔口渴,唔太鹹。佢哋價錢與同區比較差唔多,味道雖然係'林子善'贏個馬鼻,但係都不失為一碗有水準嘅車仔麵。…Read More

生日飯第五回- 美味滿載原條秋刀魚刺身丼

日式丼飯响香港唔算流行,唔似拉麵館咁開到周圍都係,選擇唔多,不過好彩, 响銅鑼灣好幾年嘅Doraya水準依然高企,見佢日日都咁多人排隊,就知實冇衰啦。當日我倆去到門口已經係九點九,仍然有人排隊,等到十點三終於有得入。排咗半粒鐘,有啲餓,急不及待就order(排隊時已經睇咗餐牌,諗定食咩)。室內裝修簡約,牆身有啲舊,座位有啲迫,燈火微黃,侍應忙過不停,幾有地道feel。刺身丼定食由百幾至二百幾蚊,附有配菜,玉子燒,漬物,味噌汁。好食嘅刺身丼,最緊要就梗係新鮮嘅刺身同香滑嘅飯啦,用料好就自然要磅水,所以百幾二百蚊唔算貴。响外面睇餐牌就已經俾呢個大拖羅拼吞拿魚蓉丼吸引住,大大片大吞拿魚腩,油光閃閃立立令,另一邊滿滿嘅腩蓉,快快咁影完張相就扒一啖落口。魚脂香味濃厚,飯嘅份量唔會太多,適合'大餸'嘅港人。魚塊爽口,雖然偶爾有少許筋,但仍然俾人滿足嘅感覺。伴入山葵醬油帶出魚肉鮮味,係另一番嘅享受。(留意番,食壽司就唔應該將山葵醬油撈埋一碟,不過食刺身丼就ok冇問題)原本諗住試埋佢個三文魚腩親子丼,點知入到去有驚人發現 - 秋之味覺。秋天嘅秋刀魚特別肥美,油脂含量多,係其他時節食唔到嘅,唔係唔試吓化。原條秋刀魚起骨切成塊,伴入薑蔥調味,魚塊入口嫩滑,油脂香味在口中爆發,不腥不膩,一條細骨都冇,簡直係極品,呢啲咁正嘅秋刀魚真係可遇不可求。至於啲配菜就冇咩好講,不過個主角咁正,做佢嘅配菜真係好難發圍,我地都係專心欣賞丼飯就好啦。最後黎個炸雞, 呢度啲炸雞大塊到好似KFC 咁, 不過冇骨嘅. 雞件醃得好入味, 超多肉汁, 嫩滑冇雪味, 外皮酥脆, 係頂級嘅炸雞.…Read More

中環扶手電梯,荷里活道路口,呢度人來人往,咩種族嘅人都有,鄰近酒吧區,大部份都係識食嘅上班族,要配合番呢區嘅口味,少啲綽頭都好難做得長。Check-in Taipei 將台灣地道B級美食進化再包裝,加埋自家研發嘅菜式同cocktail,難怪長期全院滿座。全店大概可以座40人,想食記得訂位。白色牆身掛上純白色似有浮雕效果嘅畫,內容大多是台灣嘅地標。除咗牆上有嘢睇,聽講話呢度個Barman都好好睇,你哋又覺得點睇呢?做得新派台灣美食,飲品都唔可以老套。呢個mochi yaki, 茶杯裡面係用客家擂茶做底嘅cocktail,入口茶香帶微甘,收尾有花生香,酒味剛好,配上炙燒麻糬,有得飲又有得食。另外一個叫Ah Ping Tofu, 豆腐加入bailey's同紅豆,配上一小杯濃烈帶茶味嘅酒,似甜品多過cocktail。呢個Drunken Bubble Tea, 用伯爵紅茶Infused嘅伏特加, 百利甜酒, 做成嘅珍珠奶茶, 加埋枝點著咗囓玉桂條, 芳香撲鼻.小食先黎個炸五香蕃薯條(five spiced sweet potato fries),甜甜地,有三種醬俾你點,茄汁,蒜蓉醬,松露蛋黃醬,適合摸住酒杯底,下酒一流。雜菌森林(mushroom forest),菇菌濃香撲鼻,香煎野菌,酥炸蠔菇,撈埋隻溫泉蛋同松露cream,又香又滑。口水雞味道偏淡,雞脾肉卷成日式雞叉燒,切片淋上口水汁,香味唔夠。豬手(Crispy Knuckle Bites)味道普通似pulled pork, 麵包脆餅對豬手肉唔太配合, 亦未能特出豬肉嘅味道。鹽酥雞(Taiwanese Salty Crispy Chicken)酥脆可口,有肉汁,但味道可以再濃啲香啲,五香味再重啲仲正。呢個時候就梗係要啤啤佢啦,想試下佢台灣啤酒點知冇貨。肉燥飯(Seven Layered Raice)屬清爽型,汁料較稀。一層層飯,枝豆,肉燥,用玻璃杯盛著,顏色分明,賣相不俗。牛肉麵(House Special Taiwanese Beef Noodles)用刀屑麵做底,味道跟牛肉湯唔夾,掛唔到湯汁。湯底有藥材香,但口味都係淡,不過牛肉炆得好稔好入味。脆皮豬意大利飯(Pork Belly Risotto),脆豬皮口感一般,米粒做到al dente,味道整體太creamy,唔可以食多。麻婆豆腐(Mo Po Tofu Noodles)點解配麵呢?! Anyway, 汁料麻味十足,辣味欠奉,麵條質感卻不錯。乒乓(Ping Pong)賣相似章魚燒,用紫薯做,香香甜甜,帶點椰香,中心有柏爾馬芝士餡, 好味。鹽酥雞窩夫(Chicken & Waffle),聽落食落就係鹽酥雞放响窩夫上面咁簡單,不過加咗粒菠蘿同淋上楓樹糖漿,味道絕不簡單,甜酸鹹配合得恰當,口感多,佳作!最後呢個焦糖燉蛋,好滑好creamy,焦糖面顏色均勻,脆面絕不馬虎,不過可以重啲蛋味就好啦。總括黎講, Check-in Taipei嘅菜色外觀吸引, 極具創意, 味道則未算突出. …Read More

呢間嘢真係錯漏百出,新開三日就俾人一個唔好嘅印象,點攪?!我哋由餐牌開始講起,我唔係'正字特警',不過大家睇睇個餐牌先。用白紙黑字手寫唔係問題,但係唔識字係應該查字典嘅。一錯!跟著係個店名,Mary's Restaurant, 再睇個餐牌,Mary's fusion喎,茶餐廳頹飯菜色,點先?! 二錯!好啦,印象唔好,但係都要食過先知好壞。是日午餐D,吉烈龍脷配飯或長通粉送餐湯意大利雜菜湯,承惠$62蚊。等外賣時下午1:30,全店滿坐12人,裝修用橙色膠板封牆,錯字餐牌寫滿牆上,空間狹窄,堂食唔會舒服得去邊。三錯!拎走咗野食,番到公司一開,點解係煙三文魚意粉,好我去換,反正响隔離。四錯!番到去,雖然得我一個叫外賣,但係唔知做咩,師傅做咗兩份,一份D餐,一份E餐(煙三文魚意粉),唔打緊,佢咁快換到俾我,唔怪你。點知番到去一開,我明明講咗要飯,攪咩變咗長通粉。五錯!算!我唔想再行再等,我照食。茄汁長通粉個汁係罐頭碎蕃茄加罐頭蕃茄濃湯加糖稀釋製成,得個甜字,有啲蒜味嘅都。件魚夠大件,不過肯肯定唔係龍脷柳,佢餐牌寫sole 但係口感似越南鯰魚或者river cobbler,味道質感似用鹼水製過,所以條魚唔霉,但係就咩味都冇。個伴菜有椰菜,甘荀,長豆,白灼都要落鹽架大佬,無黎聞味。六七八錯!好啦到個湯啦,冇野嘅,味道正常,偏稀,唔夠料,落好多茄膏調味個庭,不過已經好過個長通粉好多。咁多野錯,又唔好食,又貴,呢個質素根本係茶餐廳頹飯級數,市場同類型嘅都只不過係35-40蚊max,60蚊以上嘅餐廳食物質素唔會係咁囉,錯哂!…Read More

生日飯第三回 - 餸式常見但樣樣皆精

香港老飯店,小弟對它認識不多,卻莫名其妙對此食店有種期待。可能老飯店這稱呼有點古祖,感覺上菜式會忠於原著,味道配搭有多少功架。適逢小弟牛一,新店位於公司附近,而且香港老飯店此品牌一向大受好評,再加上認真的滬菜在香港越來越稀有,決定趁早一試。室內設計保留港式茶樓飯店格局,裝潢沒有雕龍畫鳳,也沒有俗氣庭園,環境舒適。點了一壺鐵觀音,花生酸薑等小吃隨即而來。酸薑似自家製,味道偏甜,薑辣適中順喉,爽口開胃。前菜三碟 - 烤麩, 核桃燻蛋,腐皮素鵝。烤麩做得好軟綿,夠入味,五香撲鼻。燻蛋味道足,煙燻味香濃,蛋黃呈夕陽色,有蛋甜。素鵝有好重的煙燻味,有點過頭,但依然出色。脆鱔 - 雖然賣相平庸,但鱔條炸得非常鬆化,香醋汁增進食慾,酸甜味中和,焦糖不黏牙,上佳的脆鱔。小籠飽 - 除皮薄餡靚外,湯汁爆滿,表皮軟嫩,肉多而不羶,唯味道偏甜。這邊的小籠包雖然未算最好,但肯定知名連鎖店的都要跟它比下去。必食之選。麻婆豆腐 - 有鹹有香有滑,惹味非常,味道完整,辣味尚可,唯麻味不足,扣了不少分數。炸銀絲卷 - 好久沒見過真正一絲絲,軟綿綿,有麵粉香的銀絲卷了。搭上麻婆豆腐一起食,超棒。宮保雞丁 - 忠於原著,用花生而非腰果,奈何個人偏好腰果,而花生令整碟菜口感較粗糙。味道豐富,麻辣甜鹹香樣樣齊,但個人比較喜歡麻味重一點。紅燒獅子頭 - 獅子頭用沙鍋炆煮,上桌時還是沸騰的,獅子頭肉質鬆化,配上紅燒汁份外惹味。春卷 - 當晚座上客有外地人,要求點春卷。春卷裡裹住綿綿的蘿蔔絲,味道偏淡。火方雲吞雞 - 這個壓軸不得不題,一個雅緻的燉盅端上來,看似上級燉品的感覺。湯用了三塊鐵拳般大的金腿,一隻鮮雞燉製。豬肉雲吞皮滑得在口中溜,然後化開,拇指大的餡料,沒半點羶味,入口順喉。雲吞裡刻意沒放鮮蝦,以保留清燉雞湯之原味,金腿散發濃郁旨味,入口醇厚,鹹香温和,加入豆苗點綴,令湯的味道更多元化而不會喧賓奪主。湯料切忌浪費,若然鷄肉咽不下,也要將金腿打包,用來炒菜甚至再煮湯,味道依然不俗。是次晚膳可算是我近年吃過,最好的滬菜,比起許多老字號,香港老飯店從味道配搭,菜式種類,以至餐具,服務都下過不少功夫,誠意十足。…Read More

生日飯第二回 - 話哂都係過氣一星喎,俾多啲力好喎

一所著名嘅北京飯店,曾榮獲香港米芝蓮一星,究竟有咩過人之處呢?老實講,食過之後覺得言過其實,價錢貴唔在講,性價比未算太差,食材係貴嘢黎嘅,每樣菜都好過同業少少,穩打穩紮,但係食唔出有咩咁勁。可能我對佢期望過高,到頭來有啲失望。不過點都好,我都要介紹番幾個餸嘅。煙燻桂魚 - 呢個係成晚最有特色,最值得褒獎嘅一道菜。魚片實淨唔散,煙燻味香而唔鹹,呢個配搭我都係第一次食,冇諗過燻製中式魚會有呢個效果,唔食其他嘢都一定要食呢個!醉雞,鹽水鴨 - 兩者都做得比同業高一線,肉質鮮嫩,但味道偏淡。醉雞酒香可以再濃啲,鹽水鴨除肉質軟嫩外無甚可評。鶴湖蟹影 - 呢個超有名的,攞哂獎,賣相勁。碟底藍色個啲啫喱係唔食得嘅,隻鶴都係唔食得嘅,食得嘅係成個cupcake咁個件,同埋隻可樂色嘅蟹。呢件名菜主要分三部份,底部係芋頭片捲成筒炸,頂個球就係超多蟹肉蟹黃mix,中間有片鍋巴。蟹肉mix個味做得好適中,濃郁嘅蟹味之餘,冇點醋都唔溜,鍋巴鬆脆,跟蟹肉一齊食,口感味覺一氣衝擊,將鍾意食蟹嘅人帶到高潮。咁可樂色嘅蟹係咩呢,原來係薑茶啫喱俾你驅寒,不過我就覺得唔夠薑囉。薺菜炒年糕 - 呢個算係我食咁多次炒年糕中最好食嘅一碟,薺菜有獨特香味,年糕做得好滑,帶點煙韌,冇臭膠味,味道雖然淡,但係一啲都唔寡。北京烤鴨兩食 -烤鴨基本要求嘅皮脆肉嫩都不及坊間好幾間北京菜館,我亦明白烤鴨唔一定係片皮,連鴨肉一齊食都好正,不過厚切成咁嘅烤鴨就唔係咁常見。鴨味唔差,但係厚得滯又唔夠嫩,又冇咩肉汁,薄餅一般,配料又俾唔多,口感乾,大為失望。至於個炒鴨菘係好食,但係好平凡。松子魚 - 冇用五柳做汁,五柳唔係雜豆,應該係酸瓜絲,酸蘿蔔絲之類。個汁酸到盲佬開眼做,醋嘅味仲係嗆喉,酸到食唔到魚味。唯一見功架係刀法,but that's all。其實仲有好幾個餸,冇咩好講,只好輕輕帶過:孜然羊架 - 唔算羶,孜然味強勁,味道好,肉香酥。鹵蛋 - 有藥材味,唔算好香好入味,面頭嘅瑤柱酥亦彌補唔到蛋嘅不足。冬菇豆腐煲 - 不過不失,家常菜我冇咩要求。我承認我有就住叫餸,所以食唔到咩嘢名菜,不過都要成350+ 一位,以米芝蓮一星餐廳計,呢個價錢係合理,貨色就。。。比一般好少少咁啦。…Read More

生日飯第一回- 未算完美?!那就像人生一樣, 卻令人再三回味...

位於上環西營盤交界,一所絕不顯眼,門面看似住所入口,鮮為人知的食肆。地理條件差,六點後上班族離開後,渺無人煙。由上環或是西營盤地鐵站都要步行五至十分鐘才到達,卻能夠持續開業超過兩年,必然有它可取之處。究竟此所隱世餐廳有何秘技,於種種環境因素下,依然有熟客捧場呢?洋食屋在香港穩站多年,大多走平民路線。有水準,有特色,有誠意的洋食屋真的不多,HAL'S 算是當中較為特出。Queen Hollywood選擇並不多,主打日式意大利菜,對於味道賣相選料之要求可說是跟HAL'S有過之而無不及。推開厚重的棕色大門,看到窄長的餐廳,米黃色的牆身,燈光柔和,平凡中帶點溫暖。餐廳當晚全院滿座,大概十多位客人,各人默默地拆解眼前的美食拼圖,偶爾傳出輕聲感歎,細語傾談人間美味。餐廳從開業以來,菜式都是單點,直至最近改成由主廚發辦,原因在於餐廳客源主要為熟客,選擇皆為餐廳招牌菜,食材貨量難以控制,加上主廚發辦會選用時令食材,菜式變化多,亦較創新。酒水方面,清酒主要為獺祭出品,有品質保證,而獺祭發泡濁酒更於酒入樽後作第二次發酵,口感似香檳,味道帶果香,微甜,有發酵味,入口爽快,作為餐飲相當不錯。邊喝酒,邊窺探廚房中主廚忙前忙後,看上去還很年青,沒想到已是餐廳主廚。這裡的第一段Amuse-bouche有兩道菜. Amuse-bouche 於法國高級料理中用作給廚師大顯身手,將手藝與對食材之知識,呈現于一小碟餸式上。與starter 不同於份量較少,味道較特出,工藝較高,喚醒食客的味蕾,這裡的水牛芝士正正表現出以上種種。大大片水牛芝士,入口即溶,奶香在口中爆發,軟滑食感填滿口腔,感覺連呼口氣都有牧場氣息。芝士泡沫帶微酸,粟米苗清香微辛,正好令奶香停留於口中而不至膩。第二道是日本直送時令蔬菜。蘑菇香氣撲鼻,紫蘇苗帶辛辣,秋葵青翠黏滑,鯷魚醬混入蒜泥,分開每種吃時未見特色,反而將各樣一起入口,有出人意表的融合,味道混為一體,口感層次多,比分開吃更具效果。第一段的兩個菜式都給食客對新鮮食材一番體會,味道來得簡單而真實。熱過身後就是三道前菜。先來一隻凍蚝,顏色配搭單一,但賣相吸引。一隻又大又滿的北海道牡蠣,上面舖著一層晶瑩金黃色的啫喱,啫喱上點綴了一小撮魚子醬。從來沒想過蚝會用如此相貌出場,未拍照已經急不及待去品嚐,結果未能給大家一看究竟,實在可惜。上層啫喱是用蚝汁做成,有微微的煙燻味,啫喱於口中融化後留著似鰹魚高湯的味道,跟蚝很搭。蚝的熟成度簡直完美,配搭下層清爽的蘋果茴香慕絲,味道清甜。熟蚝經冷凍後,口感味道與生蚝截然不同,腥味被清香的慕絲中和,蚝肉質感似法國鵝肝,入口幼滑,加上蚝汁啫喱增添海水味,整體食感就似海洋氣息的法國千層凍。接下來是鰆魚配白松茸,鰆魚先慢煮浸熟,再煎香,上面灑上玄米茶泡沫裝飾。魚肉嫩滑,鹹度恰當,突出魚味。松茸香,泥土味重,充滿園野氣息。柚子跟魚一如既往是絕配,紫蘇苗則增添味道層次。舞茸跟南瓜都是日本產,味道濃郁。唯菇菌類燒烤時間過久,味道帶苦澀,影響整體味道。碟中各種元素都做得不錯,可惜缺乏連貫性。個人對非食用或味道不佳之點綴甚為不悅,以紅葉作裝飾則有只求美感,不切實際之慊。吃過兩道較清雅的前菜,隨著來一道香甜的煙鴨胸。鴨胸乃自家燻製,端上來時濃郁的木香撲鼻而來。數種醬汁點滴在碟上,百合莖零星散落,構圖古怪。鴨胸除強勁的煙燻木香外,在口中散發出陣陣花香,絕不過鹹,蘸上漬梅造的黃色醬汁,十分開胃。再蘸過伯爵茶泡,茶香將煙燻味提升,充分表現出鴨的甜美,香味於口中擴散,好食到停不了。至於無花果醬則味道偏重,掩蓋了鴨本身的甜味。主菜先來200克炭火烤安格斯牛排,牛排表面擦上血橙香料,用海鹽調味,配上少量陳醋汁,火箭菜苗。血橙味不太突出,有微微的香料味。正因調味簡單,而廚師對燒牛排的火喉控制得無與倫比,炭焦香味恰到好處,使每一口牛排都鮮嫩多汁,肉味濃厚,偶爾搭上陳醋酸甜的刺激,好久沒有吃過這般完美的燒牛排。接近尾聲,真的不捨得它完結。壓軸出場,蜆肉烏魚子意大利麵,上菜時散發出茴香的香味。意大利蜆比麵還多,味道清甜不腥,意大利麵黏上烏魚籽,令鮮味倍增,清酒汁為餸式增添層次。麵條有嚼勁,汁料完全不用一滴忌廉,卻能做出香濃圓滑之口感,令人一吃再吃,是實力派的意粉。一頓完滿的晚餐又豈能缺少了甜點呢! 抹茶Tiramisu口感幼滑,茶味甘甜,蛋糕軟綿,賣相簡單卻令人有衝動大快朵頤。整體味道融合得很,一點都不覺膩。完事後,跟服務員閒談發現主廚是山口人,喜歡意大利菜,妻子經常在晚市時幫忙,恩愛非常。食材每日由原產地直送,保證新鮮。 正因為來貨量有限,當晚無緣與我最想試的海膽松茸意粉踫面,可算是美中不足,但亦因塞翁失馬,有幸嚐了如此美味的牛排。 這所特色小店在香港寥寥無幾,能在這貪新忘舊的香港立足實在不易,理應多多支持,加上主廚製作認真,保証給你一個驚喜的晚上,令你再三回味。…Read More
