非一般的精緻葡菜
FADO The Legendary Portuguese Cuisine

每次去澳門我都要食葡菜,今次特意選了一間未試過且較少香港人去的餐廳—Fado(花道)。餐廳位於皇都酒店,環境簡約雅緻,我們坐在窗邊位置,玻璃窗透進自然光,增添悠閒的感覺。花道的午市套餐CP值超高,每人只需大約128元(2道菜)/158元(3道菜)。由於我們是第一次光臨,想試它招牌的葡菜,所以由艾琳熊拍板點a la carte menu(散叫)。正式開餐前先來一籃麵包,附有六款配料/橄欖油,可滿足多心的你。餐廳還送上餐前小點,脆卜卜的外皮包著菠菜蓉與芝士,配以蕃茄味醬汁,正合我口味。開始進入重點,先由經典葡式小食—炸馬介休球揭開序幕。外層炸得香脆,內有滿滿的馬介休絲,不像某些餐廳的薯蓉比例偏高,所以咬落口感更佳,一行四人都讚好。另外叫多一道馬介休的菜色,就是「炒馬介休、雞蛋、馬鈴薯絲」(無呃你,個名真係咁長)。這道菜是由廚師在餐桌旁即席炮製,有得食又有表演睇。烹調的過程中不時飄出香味,令人食慾大增。雞蛋混入馬介休口感嫩滑鬆軟,還有洋蔥的香甜味,加上脆脆的炸薯絲,雖然材料簡單,但味道與口感俱佳。再來一道主打菜色—烤乳豬。此豬不同彼豬,與大家平時食到的葡式烤乳豬不同,做法是先將乳豬拆肉起骨,再重新壓製成一塊,食落啖啖肉,烤過的乳豬皮酥脆可口,而且少了肥膏減低油膩感,好味!有時食厭了傳統烤乳豬,可試試新口味。然後有鴨飯,加了松子和提子乾,整體味道不錯,但比其他幾道菜相對失色。此飯用上很多鴨肉,我和D.S.卻覺得太大塊…(真材實料都唔得,人類真難服侍,哈)最後是甜品。這道南瓜蛋糕配乳酪慕絲,大家記得留肚食!南瓜蛋糕中間是流心的,切開後爆漿效果一流。賣相靚之餘,味道甜美卻不膩,我喜歡它多於平時常見的朱古力心太軟。總的來說,這間葡菜餐廳環境舒服,食物有心思亦好味道,散叫都唔貴,午市套餐更抵,大家去澳門不容錯過。艾琳熊推介指數:5分(滿分),值得一試再試…Read More

從日本傳過來龍蝦包熱潮,使香港出現不少賣龍蝦包的店。這間小店的龍蝦包造型比較特別,用龍蝦鉗扮成魔鬼角。可惜食落整體感覺一般。看上去麵包好像堆滿龍蝦肉,但其實包入面夾滿通心粉,味道都算夾,但每一啖的通心粉比例實在太高。由於龍蝦肉全鋪在上層,每次一咬,都好容易跌了龍蝦肉出來,而通心粉的比例就越來越高...我還是比較喜歡啖啖龍蝦肉的感覺。另外,店舖的環境不太舒適,座位比較少,只可容納約6人,而我兩個人坐的位置正正在大垃圾筒旁邊,影響食慾。…Read More

用「心」經營的私房菜

一家餐廳能否令食客「回頭」,我認為最重要的在於「心」,即是有無HEART。有沒有用心,客人會感受得到的。最近到訪的這家西式私房菜,隱身於西灣河區的唐樓中,餐廳環境雅緻,大廚的用心經營更令人留下深刻印象。老闆兼主廚David來自加拿大,多年前在港落地生根,太太是香港人,還有個可愛的女兒,一家就住在附近。我與男友D.S.用餐當天還見到他的女兒出現,小女孩蹦蹦跳地走去開放式廚房找爸爸拿餅食,原本正經地準備食物的大廚瞬間露出溫暖的笑容,整個畫面很有愛。女孩與媽媽出現短時間後就離開,沒有打擾認真工作的爸爸。特別一提,餐廳周日會休息,因為是family day (欣賞!)。這裡的菜單每星期更換一次,據聞菜式沒有重複過,有誠意又有創意!食材和醬汁配搭豐富,用料新鮮,味道有驚喜。四道菜,每人$500(沒有加一),雖然價錢在西灣河區來說不便宜,但食物有一定質素,我認為物有所值。一開始先上餐前小食,我們用餐當日是一杯暖湯。餐前麵包外脆內軟。前菜是法國蘆筍配mozzarella芝士與香草沙律。蘆筍十分鮮嫩,整道菜食落感覺好清新,真的有如menu所寫的感覺「it’s just around the corner from France」。我與D.S.對前菜已很滿意,想不到之後的第一主菜都令我們讚不絕口。此道菜用上八爪魚、蝦和小蘿蔔等蔬菜,配以紅酒醋等醬汁,味道鮮甜又refreshing,八爪魚切成粒狀,混合其他配料一起食,口感很豐富。總之味道很特別,是全新的感覺。第二主菜是烤西班牙豬。豬肉煮到剛剛好,外層微焦,中間還是粉嫩的狀態,肉質嫩滑,不會乾巴巴。到甜品了,用上多種材料配搭而成,有白朱古力慕絲、日本士多啤梨、小蛋糕等等,喜歡它味道有層次,又不會太甜膩。最後還送上新鮮出爐的曲奇餅,味道不錯喔。(可惜忘了拍照)食完四道菜後,主廚David與我們閒聊了一會兒。他說餐廳選址在西灣河,因為喜歡這裡很「香港」,是一個本地人居住生活的地方。我們又談到一些餐廳出名後質素走下坡,他說因此不認同將餐廳擴充為連鎖店。他開餐廳的原因很簡單,卻令我印象深刻的一句:「I like cooking… cooking for people」。嗯,我感覺得到。…Read More

去甜品女皇新店朝聖!

被譽為亞洲甜品女廚神的Janice Wong在香港開的甜品店,最近開始試業,艾琳熊一知道即刻飛撲去朝聖! 她設計的甜品配搭新穎,想不到連咸點都有驚喜。這道Faux Bone Marrow,用上和牛條及蘿蔔扮牛骨髓,外形似模似樣,還用炭爐上枱,造型大大加分! 味道幾好,但蘿蔔味略為搶了牛味。最推介大家試這道Charcoal Plum Mantou,是竹炭包夾泡菜慢煮豬肉,客人還可以自己夾配菜,那些菜更是餐廳自家種植,有心思!豬肉煮得入味,配上新鮮蔬菜,和暖暖地、鬆軟的饅頭,味道與口感並重。我和D.S.叫了兩款甜品分享。外型搶眼的Cassis Plum,是Janice在Master Chef的表演作品。由黑加侖子與白朱古力造成的外殻,入面有梅酒和接骨木花製成的乳酪,配以梅酒沙冰和柚子珍珠來食,口味酸酸甜甜,夾雜酒香,是一道不膩的甜點。Shades of Green是斑蘭雪糕配椰子慕絲和開心果蛋糕,味道很配合,食入口很有東南亞國家的感覺,難怪店員說此甜品被新加坡旅遊局選為代表新加坡的甜品。飲品都有不少選擇,其中有一系列甜品口味的茶,是由Janice研製,全部用上天然的茶葉、香料等材料配製而成,艾琳熊試了creme brulee口味,味道真的有點相似。餐廳環境舒適,裝潢精緻。由於新開不久,客人不多,walk in都無問題。當然,餐廳走的是高檔路線,甜品價錢不算便宜,著名甜品價錢大約一百多元。而服務員的態度友善,有心機推介甜品。…Read More

這餐飯是要慶祝好朋友的生日,挑選了位於大坑的這間日式料理店,位置有點隱蔽,餐廳環境幽靜,感覺舒適。一行六人都點了每位$298的「入門版」會席料理,已包含八道菜,頗為實惠!第一道是沙律,沒有特別:前菜則太咸:然後,刺身/壽司/魚生丼可三選一,我選了壽司,魚生片新鮮,還有一件拖羅壽司,對我來說是小驚喜(雖然不是很高質素的拖羅啦~)。下一道是茶碗蒸,蛋蒸得滑溜,但只有小量配料,所以味道不特別香甜。燒物我選了銀雪魚(另外有牛和黑豚㨂),烤得不錯,魚肉很滑,又入味,讚!接著是天婦羅(圖中是三人份量),有大蝦和雜菜,大蝦炸得鬆脆,肉質仍彈牙,雖然不夠鮮甜,但這個價錢我是絕對收貨。然後是牛肉烏冬,份量不多,但由於已差不多飽,所以這樣的份量反而合適,味道正正常常。最後的甜品是提子果凍,看似有心思,但是提子有大粒核,每食一口果凍還要吐核,若果是日本的料理亭,不可能出現這樣不細心的甜品。整體來說,餐廳的套餐性價比高,用料並不馬虎,大家不妨將它作為日式會席料理的入門。…Read More

近日終於試到大熱的BAKE芝士撻,艾琳熊一向不喜歡排隊,剛好星期日逛街時見到無之前那麼多人,就即管一試,最終都要排半個小時。難得排到,我一口氣買了一打芝士撻,其中六個用來送禮。單買每個$20,半打則收費$110。買完後即場食了一個,仍然微暖,中間部份真是流心的,咬下去芝士漿即刻湧出來,質感柔滑、芝味和奶味香濃,餅底又鬆脆,真的很好味,果然名不虛傳!之後我將芝士撻放入雪櫃雪了一日,雪凍後的它變了芝士蛋糕。凝固了的凍芝士撻都好味,但就失去了特色,艾琳熊還是較喜愛即買即食的流心狀態。…Read More

回味童年,但職員態度掃興

小時候看卡通片《幻法小魔星》,總覺得燒墨魚丸(小魔星是這樣稱呼它的)一定很好味! 「Kuli Kuli Kuli~ Kuli Kuli Kuli~」這段主題曲的經典旋律,大家有共鳴嗎? 可說是艾琳熊的童年回憶,這次去食燒墨魚丸,歌曲就在我腦海中不時響起,哈哈......講番正題,大家想吃燒墨魚丸的話,記得提早預訂,兩人份量叫價$98。店員首先會簡單介紹製作過程,然後讓我們自己動手做。墨魚丸材料除了粉漿和墨魚粒,還有切碎的紅蘿蔔、洋蔥和泡菜。重點來了,鐵板燒熱後,每格注入三份二的粉漿,然後可以放其他配料。(註: 記得動作要快,不然會給某位中年店員鬧喔!)當邊緣位置有熟的跡象,就可以試翻那半粒丸子,將之竪立起來,再倒入粉漿,然後將那半粒丸子反轉,慢慢就會燒出一顆完整的丸子。上碟後再加沙律醬、紫菜、柴魚,就大功告成!有得玩之餘味道也不錯,丸子燒得外焦內嫩,調味亦夠。另外叫了一個石頭飯加冷麵的「滿腹套餐」,只需七十幾元,味道不過不失,但CP值極高,食完就夠飽了。不過,此店某些員工的態度極差,很影響客人進食的心情。由一開始等位已經受氣,由於我們一早訂了位,一到埗時自然想告訴店員,但對方完全不讓你開口說一句話,就將你推向門外,連最基本的做人禮貎都無。到燒小丸子時,指示不清晰,客人第一次燒,手勢當然不純熟,但該位中年男店員用極差的語氣寸我們動作慢。餐廳太受歡迎的關係,店員工作量可能比較多,但也不應將情緒發洩在客人身上吧! 這樣的店,我不會去第二次了。…Read More
