HK's Landmark Mandarin Oriental situated Amber has received michelin 2 star for 15 years and received green star for their effort to sustainable fine dining. Maybe that made some dishes taste slightly healthy but overall pretty decent birthday meal.-Butter for the sourdough was made with soya, oil, cashew nut, coconut-Amuse: soya pana cotta, foie lollipop, truffle tea-Starter: caprese with dairy free soya cheese, signature cavair sea urchin lobster cauliflower jelly-Main 1: grilled foie with black garlic puree and brussels sprouts pickle, Safron consomme with shrimp wanton-Main 2: Normandy scallops covered with toothfish (+black winter truffle), duck au sang with butternut squash puree-dessert: strawberry hibiscus champagne pana cotta with pinkpeppercorns, persimmon goji berry lime sorbetAmber's service is pretty good but plates were all pretty predictable in their best form. Bouillon, constantly selected in various press as one of the best French restaurants to visit in HK, instantly brings you to Paris without having to travel. While their pricing may not be a "bistro", you can let it go once the dishes come in with beautiful presentation, taste and generous portion. (Can make use of lunch deals to be cost-effective)This was my second visit and went with Scallop carpaccio, Rossini steak, Vol le vant, Rice pudding and 2015 Chateau Senejac Haut-Medoc. For the scallop dish I could taste a lot of deal and it was pretty refreshing, Rossini did not have the charm it had when I first tried but that could be just me, Vol le vant was filled with chicken and shrimp and the sauce was savoury enough to go with the wine. Cultivate, located on the competitive Elgin St in Soho, is the business of chef Leonard Cheung, who graduated from CIA, one of the top three culinary schools in the world, and has experience at Otto E Mezzo.  It is said that 1/3 of the menu changes once every 3 weeks, so it seems like a lot of creativity is required.  The chef's hospitality is very welcoming and I think there were more than 10 dishes on the tasting menu, but each one has a very complex taste to the point where there is no point in picking a favorite, making it a good restaurant for people who want to try new flavours. Caprice is one of Hong Kong's three Michelin-starred restaurants serving European food, along with Joël Robuchon and Otto E Mezzo. They have been maintaining Three Star under Chef Guillaume since 2019. The service was relatively stable, and the basic course for 5 courses costs around HKD1000, but an additional fee of +5-600HKD is easily charged for the signature dish.
