這小店的午市任選三款料理餐有點似另一間簡約風格的日式店兼營cafe 的三/四/五品料理, 同樣是用心又美味的製作, 並運用不同的醬汁配合食物,為味蕾帶來新鮮感。為食的我喜歡一次過試吃多款食品, 所以這類自由配搭餐最適合我。今次是第二次光顧, 選了柚子汁煮牛筋, 雞軟骨丸子,及馬鈴薯燉牛肉。牛筋配柚子汁出奇的夾,是個人推介之選。如喜歡雞軟骨的朋友,記得點雞軟骨丸子, 因軟身的肉丸子需要嗦嗦聲的雞軟骨才能加強質感。套餐配小漬物, 另外可選日本米飯或沙律。飲品可選凍薄荷橘子茶或熱八寶茶。…Read More

曾試過兩款例湯, 其中一款是菜干紅蘿蔔湯,喝一口便嚐到還加了羅漢果,十分潤喉;而另一款是蘋果粟米煲雞腳湯,一樣沒有落味精,所以味道不太濃。此外,堂食會附上茗茶一杯。咸蛋肉餅飯真材實料,肉餅夠厚,上面鋪上一大塊鹹蛋,頗受顧客歡迎。吃下去時意外地發現肉餅下面有幾塊白蘿蔔。白蘿蔔除減低肉餅的油膩感外,還吸了肉汁的精華,十分好味。豉汁蒸鎗魚配白飯每天限量供應,有時下午一點前己售完,可於早上打電話預訂。鎗魚蒸得頗滑,吃來較紅肉健康。蒜香南瓜排骨配白飯也不錯。排骨份量不少,帶點蒜香味,份外惹味,而南瓜塊可提高菜式的營養價值。蔥粒荷葉砵仔蒸雞配白飯並非天天供應的款式,要帶點運氣才有機會吃到。蒸雞嫩滑,並加了紅棗烹調,但略嫌未能吸入荷葉香味,所以吃不到它的特色。大澳蝦膏蒸肉片飯的賣點是標榜用大澳的蝦膏,所以要等店舖有人手去大澳入貨才會供應此款蒸飯。蝦膏份量多,香味撲鼻,但味道未算理想,可能只因個人喜好的問題,換了鹹魚肉片會較對勁兒。各款蒸飯整體上很美味,而用料不馬虎,又沒有落味精,是一間值得支持的小店。,…Read More

標榜無味精的「鮑參翅肚海鮮餐」私房菜

此私房菜位於一座頗舊的大廈裡面,如果沒人介紹也不知道這兒供應無味精的中菜。選了「鮑參翅肚海鮮餐」,共有9款主菜及1款甜品。先來「生拆蟹肉扒金山勾翅」,雖然每人只分得一小碗,但翅的份量也頗多,還有蟹肉提昇鮮味,也不錯啊!第二道菜是「金銀蒜粉絲蒸元貝」,其元貝的肉身夠厚,而廚師沒用豉油來蒸元貝及粉絲,所以味道偏淡,但可清楚吃到元貝的原味。「天下第一雞」其實像炸子雞,不過雞皮面佈滿芝麻。雞皮炸得十分香脆,連少吃雞皮的我也忍不住吃了幾口。雞肉頗嫩滑,而且不會過鹹。「清蒸游水海斑」,除了材料本身要新鮮之外,控制火侯也是最要緊的。魚肉大致夠滑,但其實近骨的肉還黏在骨上,所以那部份的魚肉可能未全熟。「招牌三色蝦」包括有豉油蝦,黃金蝦,及蝦丸。蝦丸非常彈牙,中間有半溶的芝士,帶點小驚喜。黄金蝦的外面當然黏著一層薄薄的鹹蛋黃,但如果可以像某些店子加些鹹蛋粒,可能更有鹹香味。豉油蝦也不俗,煮得很入味。「花雕蛋白蒸海蟹」有一陣陣撲鼻的花雕酒味,但在口中只有感受到微微的酒香味。蟹肉旁邊及蟹蓋上面鋪上一層蛋白,吸收了蟹味及酒味的精華,是不錯的配搭。由原隻鮑魚,花膠,海參及冬菇加醬汁炮制的「原隻鮑魚扣山珍海味」,份量不少 (除海參外),而且煮得頗腍及入口,水準屬中上。「瑤柱扒西蘭花」相對沒特色,但勝在夠多瑤柱。廚師將叉燒及菜心幹切粒炒成「飄香炒飯」,炒飯炒得很乾身,並不油膩。以鯉魚造型的「精美甜品」看似芒果布甸,但吃下去像芒果大菜糕,所以比布甸更爽口,而且內有芒果肉,為這海鮮餐劃上完美的句號。很喜歡它每道菜都熱騰騰,而且標榜無味精,對身體較有益。…Read More

阿旺芒果凍湯丸只限星期四及五有售,其特別之處是店員將糯米皮包入芒果粒,伴以芒果汁,鮮芒果肉,椰果及西柚凍食。之前曾到訪此店數次,但非週四或五,所以一直未嚐過此款推介甜品。一嚐後果然感覺新奇,湯圓皮很煙韌,而且芒果餡料不膩口,再加芒果撈用的芒果汁作湯圓「湯底」,令人忍不住速速吃悼它。心太酸的賣相像幅 art jam 畫,漂亮得很。芒果熱情果慕思內有自家調配的特酸流沙熱情果汁,真的頗酸,不過配合碟上的甜芒果片,十分醒胃!慕思上面有朵以菠蘿乾製的花,而慕思旁邊除了芒果片外,還有熱情果蓉及星型熱情果椰果,十分豐富。撞木桶豆腐花亦是其中一款受顧客歡迎的甜品。侍應會將一個電子鬧鐘交給顧客,而顧客需要等兩分鐘才可開木桶蓋看看豆腐花是否已凝固。豆腐夠滑,但非擁有超濃的黃豆味。芝麻豆腐西米露,其外型很特別,完全不似黑芝麻豆腐。黑芝麻豆腐變成液體狀,混入西米變成西米露,而上面加了一球黑芝麻雪糕,乃透心涼之選。黑芝麻豆腐加黑芝麻雪糕,有雙重黑芝麻的口感,並且好似無添糖或少糖,感覺健康,多吃一點也無妨。芒果二重奏豆腐花,其二重奏代表新鮮芒果肉及頂級芒果乾。一軟一乾的香甜芒果及果乾,再加些芒果汁,果然有二重奏的效果,令簡單的豆腐花添加豐富的口感及味道。…Read More

"拉麵來"從東京而來,近期於香港香業。聽聞東京總店創辦人來港駐半年,並親自炮製拉麵,所以快快去試試他的麵。店舖佈置得很懷舊,原來是仿日本昭和年代的設計。"魂之一杯"拉麵每天只限售30碗,曾奪得日本拉麵最高權威,即拉麵大賞中的豚骨組亞軍。由於豬骨湯底用了數十公斤豬骨熬製,湯底眞的杰到好似特濃的芝麻糊或特濃的合桃糊,真是眼界大開。沾滿了超濃豬骨湯的拉麵頗美味,但因湯底太濃太杰,飲了幾口湯已經很飽肚,不能盡情地飲個痛快。"拉麵來"的骨膠原雞白湯拉麵與"鳥華"拉麵雞湯底主要的分別,在於前者附上骨膠原球一個,讓顧客自己混入湯底,補充體內的骨膠原。雞湯味香濃 (用了差不多二十斤全雞熬湯三小時)但濃度未及"鳥華"的超濃湯底。話雖如此,由於"鳥華"的雞湯面有一層厚厚的雞油,女生可能較喜愛"拉麵來"的雞白湯拉麵,因為可以清一點,而同時補充多些"見得到"的骨膠原。溫泉玉子油拉麵以雞湯調成的醬汁拌麵,再加溫泉蛋,但是日下午時段已經限量售完,未能一試。此店還推介白松露野菌豚骨的拉麵,要等下次有機會才試試。…Read More
