當你活得像旅行🌏,在香港都可以感覺自己在日本,有旅遊的好情。這次走進中環的 Tempura Jiro,由日本人主理正宗天婦羅,Lunch Omakase 有三個選擇,我選了中價$880的這個set。餐廳提供四款鹽調味,當中最常配的是海藻鹽,還有檸檬汁及蘿蔔蓉天婦羅汁,讓每件天婦羅都能找到最合拍的伴侶。🍣 醬油漬吞拿魚赤身赤身口感柔軟,入口即化,醬油的鹹香滲入魚肉,鮮味層次分明。🦐 炸蝦頭蝦頭細細件,炸到酥脆香口,含豐富鈣質,正適合我,海藻鹽帶出海洋的鮮味。🦐 花竹蝦兩吃薄漿炸蝦清爽,配鹽和檸檬汁,鮮甜突出;厚漿蝦則沾蘿蔔蓉天婦羅汁,口感更豐富,厚漿不厚重,恰到好處。🌰 愛知縣銀杏 & 北海道百合根愛知縣銀杏炸得香脆,入口軟糯,帶微微苦味,配鹽後更突出堅果香。北海道百合根質地柔軟,帶自然甜味,炸後仍保留細膩口感。🐟 北海道柳葉魚柳葉魚的造形好有型,咬下去先感到外層的脆,慢慢吃到魚肉,它沒有細骨,入口滑順,檸檬和鹽令魚香更清新。🐟 秋刀魚天婦羅現在正是秋刀魚當造季節,不時不食,師傅把它捲成圓形如小餅再炸,造型吸睛,配特製的酸汁蘿蔔蓉,中和油香,非常開胃。🍄 德島縣香菇 & 奈良縣柿子香菇肉厚多汁,柿子軟甜,想不到水果都可以炸,不過這時才吃到一半,未是結尾。🐟 沙追魚魚身和魚骨分開了,沙追魚比較厚肉,魚身有啖啖肉的感覺,沾天婦羅汁,魚骨點鹽,骨酥脆。🍵 海苔茶碗蒸茶碗蒸非常滑嫩,海苔香氣滲入蛋香。🐚 北海道哈夷鮑魚天婦羅 (+$450)北海道哈夷鮑魚和平時食的不同,它的口感實在,但不會韌,彈牙得來又細嫩,啖啖鮮味,配鮑魚肝醬濃郁鮮香,令這個餐享受UP~🍣 三文魚子配海苔天婦羅爆汁魚子放在酥脆的海苔上,帶來不同的口感,在口中融合,鹹香鮮甜,有趣。🌰 熊本栗子 & 甜番薯天婦羅外脆內甜,栗子香濃,番薯綿密,頗飽肚。🍄 菇味噌湯(赤味噌)選用赤味噌製作,濃郁鹹香,啖啖吃到滑溜的菇。🍚松露飯以為已經完結,因為已吃了很多道菜,已經頗飽,卻來一豐富的飯:有天婦羅蝦、天婦羅流心蛋、松露片,撈勻加豉油後香氣撲鼻,令人再度開胃。🍨 焦糖綠茶雪糕兩個口味混和的雪糕,頗有特色,焦糖微苦,綠茶清香。這頓飯不只是享受美食,也令我感覺來了一趟小旅行,回味一個人在東京到處趴趴走尋找地道美食, Tempura Jiro,值得一試。…Read More
