香港一位難求的廚師發辦, 主打熟成壽司。 提前一個月book到主廚。中午餐單只有一款,  未正式開始前先上前菜: 伊勢海老茶碗蒸 : 茶碗蒸上面鋪上熟蟹籽, 蒸蛋混合蟹肉, 蛋味唔算濃, 亦冇混合鰹魚水, 食原味嘅蟹肉茶碗蒸刺身兩碟:十五天濕式熟成鰆魚:  熟成左15日嘅魚肉非常軟滑, 完全咬唔到脂肪, 口感好特別。網上查過:  濕式熟成係將新鮮魚料包膜塑型, 再以本身天然酵素熟成,達到軟嫩效果又避免熟成過程中嘅損耗。北海道牧丹蝦:  上面係炸過嘅蝦籽, 配上炸過嘅蝦頭。牧丹蝦味鮮甜, 炸蝦籽味道唔重, 唔會搶走蝦味。  蝦頭炸得好脆, 點汁食減輕油膩感。熊本天草石門鯛:   熟成8日, 用檸檬汁調味, 食落似蝦嘅質感大分縣池魚:   3天熟成, 熟成後已冇左池魚嘅腥味, 唔需要以薑辟腥和歌山23天乾式熟成野生中拖: 經過熟成, 冇左中拖果種特有嘅酸味,  取而代之魚味較重同非常軟淋富山灣白蝦配龍蝦油:  白蝦配淋上龍蝦油, 入口同時食到生蝦同熟蝦味, 非常特別。淡淡嘅蝦油味唔會搶到白蝦嘅原味, 唯一扣分位係壽司飯熱左啲天鰭名物之一  魷魚海膽:  嚟自岩手縣嘅白海膽, 海膽包喺魷魚同壽司飯嘅中間,  魷魚爽口, 配合埋軟淋淋又鮮甜嘅海膽 , 呢件壽司係全場之最。間場 1: 鱈場蟹松葉蟹湯凍湯凍配上鱈場蟹膏同香箱蟹籽, 入口即溶得嚟亦食到粒粒蟹肉, 加上蟹膏更突出湯涷嘅蟹味。蟹糕雖香, 但唔會搶味, 非常好食。間場 2:  吉列螢光魷魚先將螢光魷魚打成醬, 再用墨魚膠包住炸。 螢光魷魚有陣咸香味(諗起大澳啲蝦醬), 墨魚膠彈牙。好有創意嘅菜式, 不過打醬好似失去左螢光魷魚嘅特色, 冇左食螢光魷魚爆汁感, 之後再食黑豆用黎解膩北海道櫻鱒 :   7日熟成, 魚肉比普通櫻鱒較紅大分縣間八:  13日熟成  , 食落好似油甘魚咁香 , 但熟成過, 油香冇咁出北寄貝:   非常爽口愛緩縣煙燻鰹魚 :  3日熟成, 入口有煙燻味, 魚肉非常軟滑壽司部分以兩件手卷作結: 赤海膽手卷 :   赤海膽新鮮鮮甜, 但餘韻不足熟成拖羅手卷 :  加左芝麻同蘿蔔, 唔太食得出熟成前後嘅分別 , 手卷好足料, 芝麻好香, 拖羅味道柔和。最後奉上貝柱清湯同開心果雪糕。整個用餐過程:  高價位定位嘅壽司店,。 店員有禮又熟讀所有菜式, 氣氛比傳統鰭店較輕鬆, 師傅十分健談亦樂意詳細介紹啲每道菜嘅特點。…Read More

香港其中一間出名既拉麵, 主打醬油拉麵。除左出名好食外, 店長既個性都係呢間店既名氣之一。 今次就試下碗拉麵係咪同店長一樣咁有個性。早放工果晚就黎試下, 唔洗點排隊就入得。上枱後先打張卡, 望起似一碗好食既拉麵 湯底: 揀左特製醬油拉麵,  湯面有雞油覆蓋, 但飲落完全冇油既感覺。可能有雞油覆蓋住, 食到最後拉麵湯都未變涼。湯頭飲落順喉, 亦冇苦澀味(醬油湯底過濃時會有呢個問題)。 配上拉麵食唔會過鹹或唔夠味, 食完個麵都冇口渴或飽濟感。麵質: 雖然使用幼麵, 但幾彈牙, 食到最都唔淋, 如果再硬啲更好。配料:叉燒:叉燒有二款,各有兩塊。店員話今天係使用鹿兒島豬,  豬腩肉明顯多陣油香味,  而豬肩肉就豬味較重。味蛋: 蛋流心, 煮得岩岩好, 唔會過生過熟, 但漬得唔夠耐, 味道淡左啲。荀:同大多店一樣, 都有少少荀臭味。  荀尾切開一絲絲, 食落幾爽脆。 結論:可能期望過高, 冇想像中咁驚艷, 但係一碗好拉麵要有既元素佢都有。同其他拉麵店相比, 不論拉麵味道或環境都十分舒適。如果唔洗排隊, 都值得一試, 始終香港好食既醬油拉麵唔多。…Read More

尋日試完頗出名既拉麵後又挑起條拉麵癮, 發覺bookmark左成年,  就決定去試下。睇過網上評價, 呢間出名食雞白湯, 就叫左鹽味雞白湯拉麵。湯底: 雞白湯表面冇油, 油分已溶入湯裏 。入口有淡淡雞味, 飲得出有落雞骨煲, 飲落唔口渴, 濃而不膩。拉麵: 使用幼身拉麵, 麵質揀左硬, 又真係偏硬, 食到最後都冇淋到發覺普遍雞白湯底都偏向配幼麵。配料:有2片豬肩肉, 1片雞胸肉, 1粒雞肉丸, 味蛋及紫菜。叉燒灸燒過, 似豬頸肉, 較為一般。雞胸肉反而有驚喜, 入口有雞味同淡淡酒香, 一啲都唔鞋唔韌。加上有灸燒過, 食落有鴨胸肉質感。雞肉丸多根, 幾特別, 同時兼顧味道同口感。另外叫左碟雞肉捧, 應該同雞肉丸係同一款肉。因為係雞肉捧 , expect應該係有雞肉味咬落又juicy。  但佢太多根, 同雞肉丸唯一分別係多左陣燒過香氣同有啲燒汁, 對雞肉捧比較失望。衝住雞白湯拉麵非常值得一試,  唯一係豚叉燒比較一般。   湯底:4.5/5分麵: 4/5分叉燒:3.5/5分…Read More
