香港人搵食最識捐窿捐罅,只要好食,就算開在再難搵嘅地方,都會被找到。講到四川私房菜相信好多人都聽過四姐,樓上鋪,店面不大,裝修樸素,但是門口用揮灑嘅毛筆字寫出來的招牌“四姐川菜”,就如食物的出品一樣,看起來豪邁又有內涵。今天跟無辣不歡的朋友一齊來,識食嘅佢揀咗四款好岩我哋口味嘅食物,講真每道菜都睇得出主理人四姐的真功夫,川菜的韻味在家常麻香中一一體現。▶️夫妻肺片($88)夫妻肺片系四川的傳統名菜,而在四姐這裡,紅油和醬油的比例調配非常好,不太辣但是夠香口。▶️重慶口水雞($88)雞肉鮮嫩不柴,香料有層次,調味恰到好處。雖然紅油豐富,但係不覺肥膩,吃完亦不口渴,抵讚!▶️沸騰水煮魚($308/大,$248/小)要食最正宗嘅川菜就一定要食四姐嘅招牌沸騰水煮魚,魚肉嫩滑之餘,搭配試秘制嘅辣汁,海量豆芽配搭嫩滑魚肉,簡直系一流啊!▶️川式椒鹽蝦($168)用香蔥、胡椒、鹽等調味,哩碟椒鹽蝦炒到金黃香脆,蝦的頭部觸鬚及腳都處理過,連殼整隻吃,酥香鬆脆惹味,再配上椒鹽,十分惹味。 現在回味都想食多次啊!總結:就算在樓上鋪,平日午市亦幾乎滿座,可以一試再試,中意川菜的萬勿錯過!…Read More

開關後大家都衝出香港,而因為工作繼續留港嘅我就終於book到中環嘅哩間天婦羅omakase預約困難店!店內裝修簡約,以木色同白色為主。座位雖然只有9個,但每個位置都可以睇到師傅炮製美食,亦方便師傅睇到每個食客嘅用餐情況,保證食物以最新鮮嘅狀態送上餐桌。當日所有食物由日本師傅村上亮主理。餐牌一目了然,lunch omakase $880/位,dinner omakase $1880/位,晚市食材當然系大大地升級,但午市就更實惠,想體驗天婦羅廚師發辦絕對系一個好選擇!▶️前菜:醬油漬吞拿魚吞拿魚已用醬油漬,不用再點任何醬料。一啖入口,醬油入味,肉質緊嫩,刺身上的山葵不會喧賓奪主,細品反而令吞拿魚層次更豐富。▶️天婦羅:正式開始食天婦羅之前,先介紹下為各道美食錦上添花的味鹽,四色分別為松露鹽、抹茶鹽、海藻鹽、梅鹽,再配上青檸,以便搭配不同食物嘅風味 。✨花竹蝦頭✨花竹蝦尾打頭陣系來自熊本的花竹蝦,以薄漿炸至剛熟。蝦頭賣相如藝術品一般,入口酥脆,完全唔覺食緊蝦。蝦身可以連蝦尾一齊食,沾上海藻鹽和青檸汁,蝦肉剛剛熟還超多汁,出色。✨北海道粟米超高甜度,可點抹茶或梅鹽,味道各有千秋。✨北海道蝦夷鮑魚 未烹飪前,師傅先向食客展示新鮮的鮑魚。蝦夷鮑魚以海帶昆布爲主要食糧,肉質非常厚實。師傅以波浪紋的切法將鮑魚切片,令鮑魚有更多位置可以沾上粉漿。食用時可以醮上特製的鮑魚醬,味道濃郁,口感脆實鮮美。中意輕盈一點嘅味道,也可以簡單擠幾滴青檸汁。✨蘆筍爽脆鮮嫩,頭部與根部可沾不同的鹽食用。✨椎茸菇釀蝦肉一開始以為只有椎茸菇,之後才發現原來釀有蝦肉。蝦肉爽脆,食得出嘅新鮮。沾上大量蘿蔔蓉及天婦羅汁,非常鮮美。✨沙錐魚起骨炮製,沙錐魚肉可以醮天婦羅汁及蘿蔔蓉,而魚骨則可以點鹽再食,脆卜卜又幾得意。肉就魚味濃郁,諗唔到沾上蘿蔔蓉後味道非常清甜。✨炸海苔三文魚籽 三文魚籽已調味,粒粒飽滿通透。海苔炸至酥脆,就好似三文魚籽嘅天然盛器一樣,完美融為一體。✨太刀魚魚身肉質纖细,魚味濃,點上天婦羅汁食,不錯。✨番薯講到哩個番薯真系不得了,咪睇佢份量迷你,真系非常之甜,完全超越我對一般番薯嘅想像,現在諗起都想再試!▶️蟹肉茶碗蒸高湯微甜,與蒸得嫩滑的蛋對比,反而可以帶出鮮味,很特別的做法!▶️黑松露蝦飯 配蜆湯不得了的一碗飯,黑松露大大片,原汁原味!蝦肉和蛋都系天婦羅的做法,吉開雞蛋,蛋黃爆漿而出再淋上少許醬油,滿分之作!▶️芝士雪糕整個用餐體驗以甜品作結,系我食過最濃郁嘅芝士雪糕,為今餐畫上完美句號。…Read More

講起懷舊打邊爐🍲,點少得位於銅鑼灣哩間ATUM旗下嘅十下火鍋。裝修超懷舊,地面和牆身由水泥地同白綠瓷磚交錯而成,大排檔圓枱再加上不少懷舊物品精心佈置,在霓虹招牌的映照下,令人仿似穿越時空回到八十年代一樣。睇返menu,二人餐同四人餐都超級抵食,盡歎多款食物,仲可以幫選擇困難症人士省卻不少麻煩,吾洗諗,即刻go ahead!✨鴛鴦湯底多達六款湯底可以選擇,有辣有吾辣,我哋就揀咗坊間比較少見嘅酸菜辣肉鍋同養生豆乳白鍋。酸菜辣肉鍋好有新鮮感,酸酸辣辣較醒胃。豆乳鍋裡面有我最中意嘅豆腐同鴨血,而且藥膳味濃郁,食過返尋味~✨大刀手切本地牛頸脊雖然系小碟,但係諗吾到都有幾多片,兩個女仔食一定夠。肉質新鮮而且顏色粉嫩,肉質偏瘦,有適量油花,鮮嫩有咬口,肉味濃郁。✨花雕醉雞煮完都仲有好重花雕酒味,可見醃得出色。✨十下三寶滑嚟到絕對要一試嘅三寶滑,有蝦籽蝦乾鮮蝦滑、鹹蛋黃墨魚滑同埋髮菜蠔豉牛筋滑。後者坊間非常少見,真係值得一試!✨鳳城水餃中意食餃嘅我覺得哩個鳳城水餃系冇得彈!煮熟後皮薄餡多,蝦同肉餡多到爆棚,又吾會令菜嘅存在感降低,想外賣一打返屋企食~✨麻辣鴨血可以即食嘅鴨血,其他食物上枱之前可以餵下肚先。辣辣地又Q彈爽滑岩曬我!✨三星蔥醬爆貢丸超有驚喜嘅貢丸!咬一啖肉汁真係會爆出嚟,鮮味十足,建議你無論幾飽都要試返粒。✨懷舊果皮魚蛋食得出嘅陳皮味,又幾特別!✨脆炸響鈴可以索滿湯汁嘅響鈴都系打邊爐嘅靈魂食物之一,建議大家趁早食用,品嚐原汁原味嘅湯底~✨蔬菜拼盤哩個解毒菜籃有生菜、娃娃菜、白蘿蔔、冬菇、粟米等多款菜色,跟餐來講,都算系誠意十足!✨酸梅湯(+$15)跟套餐的汽水免費,但是如果升級的話就有許多選擇!酸梅湯是一渣的份量,誠意滿滿,用來配火鍋最合適不過了。最後不得不提佢哋嘅服務真係要比滿分。從入座到離開,上菜到清枱,無微不至照顧到客人嘅需要。今時今日嘅香港,咁好嘅服務已經吾多見~…Read More
