有時不禁驚歎香港omakase越做越出色,日本食材空運來港,個新鮮程度真係媲美日本當地一級鮨店。前菜太刀魚卷、栗子甘露煮同鯛魚明太子等砌到好似幅畫咁靚,當中最鐘意鯛魚明太子,魚肉新鮮又有咸香。碗物主角係木之子同燒秋刀魚,即係菇菌湯,將兩樣秋天產物夾埋一齊,清新又濃郁。真羽太魚味清新,配醋橘同紫蘇花岩岩好,鮮美彈牙。櫻島間八油潤透亮,有彈性、魚油甘香,連我唔太好白身魚都覺得好食。三重縣甘海老色澤鮮明,大隻厚實,一個字甜。北海道北寄貝係我見過最巨型,切成兩半依然好厚啖啖肉。炸白蝦酥脆好香蝦味,餸酒一流。水八爪魚一次過試哂兩個部位,觸鬚取中心最幼嫩位置,口感柔軟。 我鐘意吸盤配醬油漬wasabi夠爽脆,係高級版嘅芥末八爪魚。愛知縣白見貝口感好似象拔蚌,不過更加厚身同鮮甜,要點鹽黎平衡返個甜味。新鮮嘅筋子唔係成日都有,咬落去表面嘅膜好有回彈,用力「卜」一聲爆開,近乎係平時台飲爆珠嘅口感,一試難忘。炸目光魚好香口,魚肉幼嫩,聽講頭最好食所以好期待,真係好甘香,食落完全冇渣冇骨,超越左香魚係我心目嘅地位。海老真丈用左富山縣白蝦,水潤幼滑,比豆腐、魚腐更加軟滑,蝦味清甜。靜岡金目鯛輕輕燙過魚皮,完全冇火炙之類搶味嘅做法,簡簡單單食到魚油香。帆立貝用昆布醃製,有淡淡香氣,帆立貝好柔軟,唔算好厚但鮮味濃郁。九州大分關鯖魚油份高,緊緻厚實,回味無窮。福岡槍魷魚新鮮爽甜,有少少紫蘇葉提鮮。北海道秋刀魚令人忘記至今食過嘅秋刀魚,好似師傅咁講,呢個唔岩食嘅話即係秋刀魚唔岩你,因為佢已經係最新鮮嘅版本,我鐘意,好滑好油,魚味濃但唔腥。特上中拖羅油花十足,同日本食到嘅大拖羅冇分別,滑嘟嘟極香。蛇腹大拖羅賣相同肥豬肉冇分別,非常誘人,魚油爆棚完全冇筋,唔洗點咬就吞到,係今晚數一數二喜愛嘅壽司。醬油漬赤身用左矜貴嘅天身,夠新鮮完全冇血味,係好純粹嘅吞拿魚香,比起平時較常食到嘅拖羅留下更深刻印象。今晚有口福,一次過試左厚岸同根室海膽,前者較清甜,後者就似加拿大海膽濃味啲,各有千秋,重點係師傅毫不手軟俾左大量海膽,開心。…Read More

鮨逸永遠係我心中愛店,omakase好多時怕食唔中最鐘意嘅食材,但每次黎我嘅wishlist都會出現哂,物超所值。沖繩水雲好開胃,鮟鱇魚肝creamy香醇,汁煮黑梅貝彈牙入味。真鯛薄切裡面包左海膽豆腐,兩者都非常柔軟,唔洗點咀嚼就滑左入口。粒貝刺身非常爽甜,青檸碎餘味好香。 北寄貝刺身再軟滑啲,海苔醬令海味更突出。沖繩龍蝦刺身新鮮到全程龍蝦觸鬚都猛烈咁郁緊,龍蝦肉爽甜,真正夠鮮。平時燒鯖魚其實唔太岩我口味,估唔到鯖魚刺身比秋刀魚更容易接受,甘甜唔會太濃重,面頭嘅磯雪昆布令味道更加柔和。赤貝色澤誘人、水潤透亮,新鮮爽甜。秋刀魚開始肥,好濃魚味,最後有一絲紫蘇葉香味唔會膩。北海道牡丹蝦擺盤精緻,牡丹蝦厚實彈牙,蝦頭膏係神來之筆,甘香得黎唔會蓋過蝦嘅甜味,一啖食哂成隻蝦嘅精華。北海道仙鳳趾真蠔完全滿足到我最近想食靚蠔嘅慾望,蠔肉大隻飽滿,咬落去濃稠creamy,同一般清爽嘅日本蠔好唔同,真係岩時候先食到呢個質素,好滿足。鰤魚輕輕醃左,估唔到同柚子胡椒好夾,甘香之中帶點清新。白見貝清甜,少少竹炭鹽做到提鮮。筋子係秋天限定當造先食到,一大片筋子同一粒粒三文魚籽口感截然不同,味道更加濃郁。黑陸有香濃魚味,爽脆惹味嘅洋蔥漬令柔軟嘅魚肉口感更豐富。赤身醬酒漬海膽卷係好出色嘅組合,海膽填補左赤身唔夠油香嘅短處,入口滑溜,好似食左舊魚油豐盈嘅吞拿魚又唔會膩。紫海膽天婦羅整體上都幾濃味,wasabi同炸紫菜夾擊都搶唔到紫海膽嘅風采,多層濃厚嘅海膽好滿足。磯煮鮑魚慢煮4小時果然好幼滑,厚切都完全唔會韌,拌蟹膏醬恰到好處。 立鱗燒外脆內嫩,淡淡嘅紫菜汁中和左炸物嘅油膩感,調味好簡單,感受到食材原味同鮮。拖羅卷係不用多言嘅美味,魚油多到爆好香。 白海膽甜到要灑少少淡雪鹽中和返,軟滑嘅海膽同燒鱈魚片一齊食好夾,海膽係好純粹嘅甜。龍蝦頭煮成高湯,有日本鰻魚店飲到嘅高級味道。 最後益力多雪糕配蜜瓜,全25品身心滿足。…Read More
