《風雲丸》石燒濃厚雞🐓叉燒魚介味玉沾麵🍜📍尖沙咀麼地道30號Mody House地舖風雲丸係一間過江龍店,以前响灣仔有分店,不過唔知關唔關一位頗大名嘅Youtuber狠批左佢一鑊事,灣仔店好似都執左好多年了。至於呢間尖沙咀店係灣仔店執之前開定其實只係搬店,我就冇刻意去了解了。我今次試嘅係雞🐓叉燒魚介味玉沾麵🍜,同以往試嘅招牌沾麵,分別都只係塊叉燒唔同左姐。香味 (4/5)魚介沾汁用石窩上,上桌時仲係滾熱辣,出晒煙,魚介香味係好足夠。沾汁 (4/5)佢個汁真係做到相當濃厚,就算以沾汁來講都稍為鹹左d,但還可接受。如果將d麵全數沾透會過鹹,不過呢下可以自己調節,我就認為沾6成效果好d。同其他做豚骨魚介口味嘅店都有同一個問題,魚介味蓋過晒d豚骨味,所以豚骨味食唔出咁滯,只能食到少少動物系嘅甜同鮮。食到尾湯割,溝稀左d後豚骨味出返來,食到魚介唔只鰹節咁簡單,仲有唔少煮干嘅味道。麵條 (3/5)麵比較普通,唔算係好煙韌纏綿嘅質地,比較硬同實。麵味則正常。配料 (3/5)雞叉燒中規中矩,雞肉似超巿買到嘅急凍貨色,而調味亦當相普通,唔夠香,麻麻地。整體都係普通水平,唔好唔壞,未至於好似以上提及位仁兄講到咁伏。另外,因為我响尖沙咀返工,留意到唔少食肆,包括呢間風雲丸,都請左d操唔純正廣東話嘅阿姐做樓面,雖然同食物質素係冇直接關係,只係我個人覺得為呢碗麵添左d譚仔風情姐 😂。…Read More

《神山麺屋》白神山豚角拉麵 🍜+ 低溫叉燒🥩📍觀塘觀塘道418號創紀之城五期(apm)2樓L2-1b號舖神山麵屋係麵屋武藏集團其中一個分支店,整間店處處都見到麵屋武藏嘅品牌。麵屋武藏响旺角朗豪坊嘅武骨相傳店已經食過好幾次,而神山對上一次食都已經係8-9年前,剛開業時食過至今,印象中已經唔深刻,淨係記得係偏濃味偏鹹,今次咁啱經過又有半個鐘自由時間,一於重溫一下。一如其他麵屋武藏分支店一樣,其中一個特色係叉燒有豚角煮🍖 (豬五花) 同豚肉片🥩 (似豚肩肉),因為冇乜幾何來呢間店,決定一次過試晒兩款啦。香味 (4/5)魚介同豬骨嘅香味撲鼻,雙頭湯底果然係一大特色,聞落非常之香。湯 (3/5)聞就誇啦啦,飲落就唔太對到我口味。豚骨魚介嘅味配塩係討好,可惜一如我對麵屋武藏嘅印象一樣,湯太濃太鹹太甜。頭一啖還好,冇耐開始負擔就越來越大,加上味精嘅存在感都頗重,食左冇耐就有口乾感。麵條 (4/5)中細直麵,偏黃,偏高加水,爽滑彈牙。麵係好食,而且幾有特色。配料 (4/5)豚角煮🍖未係我心目中嘅最佳狀態,調味正常,但未夠稔。如果同鬼金棒嘅角煮比較,直接輸一至兩條街。好彩我決定加豚肉片,呢款低溫叉燒🥩真係好食到暈。論嫩滑程度,同肉嘅甘香鮮味,佢直接就做左我全港嘅 no.1 (本身係未搬前嘅台風R)。溏心蛋又係正,蛋香,調味,生熟度係一等一。筍就有d渣,筍味正常啦。整體 - 我唯一覺得唔 ok 嘅係湯太鹹太甜,感覺似食緊茶餐廳嘅野食咁,味道偏濃。如果你食野慣重口味,其實呢碗麵係幾好食,不過建議叫普通叉燒拉麵好過豚角煮拉麵。…Read More

《花華和食屋》煮干粟米🌽冷拉麵 🍜📍屯門良德街8號珀御地下G06號舖早响 社交平台都見到,花華和食屋近期都有出限定款冷拉麵,而佢每款限定通常只做一個星期,今次有緣遇到呢款《煮干粟米🌽冷拉麵 🍜》,當然係要試試啦!香味 (4/5)如果以冷拉麵來講,煮干嘅香味同粟米嘅香味都算幾出,始終都係凍湯唔係熱湯。湯 (5/5)呢款雖然係冷湯,不過味道十分好。粟米嘅甜味會行先,中後段煮干嘅味會漸漸出黎,相當有層次。而煮干同粟米嘅味道平衡亦洽到好處,冇話邊個搶左邊個。可能因為主題係粟米嘅關係,甜味係會比鹹味更出,正好配合到呢碗冷麵。麵條 (5/5)店家聲稱用左自家製42%全粒粉加高水麵,係咪高到42%我就食唔出,不過呢款麵凍食真係非常之煙韌,口感好好,配呢款濃稠嘅粟米湯非常之夾。配料 (5/5)慢煮豬叉燒入口軟嫩,而肉味極之甘香,相當好食。除此之外,另外仲有一個驚喜位,就係粒睇落平平無奇嘅蕃茄乾,竟然鮮味到一個點,酸味同甜味剛剛好,對碗麵有畫龍點睛之妙。整體 - 超高水準,冇乜位可以挑剔,如果唔係住得遠,我可能會 encore 多次。順帶一提,隻碟嘅顏色我就唔多喜歡,因為個人來講,我唔鍾意响餐具上見到呢隻孔雀藍,見到令人有d冇胃口。…Read More

香港非常罕見嘅雙沾汁沾麵

《麵屋進化》塩,醬油雙沾麵 🍜📍屯門青菱徑7號華興大廈地下B號舖今日偶然間獲得一個難得機會,可以一條友食 lunch 而且連頭帶尾有幾個鐘。對於又係九龍友又係拉麵愛好者嘅我,成日見麵友可以密密响屯門搵食真係羡慕又妒忌。今日一於去屯門快閃食拉麵,而既然來都來了,一於來個連食,連跑兩間,呢個 post 就係第一間。麵屋進化早排風頭一時無兩,唔少麵友都有評論過,我就望到頸都長今日終於意外地食得到。爬過之前麵友 d 文,最後都係決定食《塩,醬油雙沾麵 🍜》。去到門口見到店家清楚表明係試業中,既然係咁我就好壞都講吓啦。做得好嘅:沾汁好好味。醬油沾汁非常甘香醇厚,色澤較深近乎係黑色,韻味高雅,唔係求求其其溝得出呢個效果。塩沾汁方面滿有驚喜,濃濃嘅煮干味極之明顯,亦有貝類嘅味道。塩沾汁入面有粒塊切成立方體嘅叉燒,以為係 d 切頭切尾 hea 野,點知係滿滿嘅煙燻味,仲幾稔添,呢吓估佢唔到。麵條本身高質,麥味夠,零鹼水味,軟硬度適中。連埋昆布水食好滑溜,效果好好。未沾汁食前,將少少鹽🧂加落去 d 麵就咁食都已經幾好食。我提過好多次,一碗好嘅麵一定要記憶點。我相信呢款麵其中一個主要記憶點就係條麵刺。連埋Wasabi同少少醬油一齊食,有一種先聲奪人嘅效果。唔夠好嘅 (都頗多):今日未夠 12 點就到,我係第一個點餐的,不過前前後後等左 15 分鐘碗麵先到。如果前面有 order 等得耐都唔出奇,以第一個 order 來講要等 15 分鐘似乎耐得d。麵量真係過少,我冇問過,不過目測大概係 150g 左右 (煮後)。因為碗麵都唔平,$158,麵量我認為可以提升至少 ⅓ 左右,會滿足 d。叉燒方面我認為係最有改善空間的。雞叉燒塊皮烤焗至脆口,不過成塊比較乾。鴨叉燒鴨騷味頗重。豬叉燒用左兩個唔同部位,雖然都係有慢煮嘅軟嫩,不過肉味偏淡,唔夠肉嘅甘香味。最後嘅湯割,比左一杯仔嘅煮干湯。湯本身係香嘅,不過份量太少,而且要自己酌量加 d 食剩嘅沾汁入去。因為沾汁一如所料都相當鹹,就咁憑感覺倒落去都幾易倒過龍。昆布水量太少,雖然店家有話可以將食剩嘅塩沾汁倒埋落食剩嘅昆布水入面溝稀,但當食晒所有麵嘅時候,剩餘嘅昆布水只有好少,根本唔足夠溝稀剩餘嘅塩沾汁。因為沾汁本身質量夠高,而款麵配呢款沾汁,同昆布水產生出黎嘅效果非常好,所以我認為已經足夠好。其他以上指出嘅問題,如果店家係有心做,相信一定好快會有改善。…Read More

❰阿夫利拉麵❱ 豚骨鹽味拉麵 🍜📍尖沙咀彌敦道100號The ONE 2樓 i.t orange forest內呢間阿夫利係我第三次光顧,頭兩次都係揀最招牌嘅柚子🍊塩/醬油,印象唔錯,屬淡麗風格,柚子香味帶黎不少記憶點,配雞骨湯,今次就試試佢嘅豚骨湯啦!香味 (4.5/5)可能我一早冇睇Menu張圖睇得夠清楚,原來呢款麵係配黑蒜🧄油。有黑蒜油,當然香味撲鼻,而叉燒嘅焦香味亦應記一功,好香。湯 (4/5)豚骨嘅味道其實並唔係好似一蘭d豚骨湯咁煲到咁濃郁,不過正好同鹽味結合到,取得味道上嘅平衡點,呢吓係好嘅。另外鹹度算剛好,如果主打淡麗風的話,我認為鹹味仲有稍稍下調嘅空間。黑蒜油嘅量都唔少,食得過癮不過油膩感稍稍偏重。麵條 (4/5)全粒小麥粉造成嘅麵條,直身,口感好,爽口又有韌性。最難得係,佢個湯夠熱之餘,個麵係由頭爽到尾,唔會話浸到腍左。配料 (4/5)豬叉燒都係最傳統嘅五花肉卷式叉燒,味道,香味同口感都非常好,焦香味正好同黑蒜互相配合。溏心蛋偏淡,冇點刻意調味,接近係水煮蛋咁,不過吸左d鹽湯食上來都還好 。木耳,青蔥同紅薑絲嘅量洽到好處,由頭食到尾都有清爽口感。雖然阿夫利唔係我嘅首選,但係往往每過一排都會想食返碗,因為佢風味清新討好,份量稍偏少不過如胃口不大嘅時候食就剛好。…Read More

《癸酉》塩味拉麵🍜📍荃灣大壩街1號地舖《塩味拉麵🍜》香味 (5/5)香味方面真係冇得輸,極之香。因為我就坐响師傅位隔離,近距離睇住佢整,每碗麵都放頗多嘅雞油 (目測,未必準),而碗湯又滾熱辣,所以雞香味爆滿。湯 (3/5)雞味係非常濃郁,又夠鮮。除左雞味之外,大概就只有蔬菜嘅甜味,冇乜其他雜味,可以話雞味非常純粹。可惜,最大致命傷係塩醬加得太多,成個湯太鹹,雖然個湯嘅味道係討好,但鹹度太高,一路食一路有負擔,未能盡情享受到。另外,雞油嘅量就真係多左d,食到冇耐就覺得油膩,令負擔更大。不過凡事兩面睇,正因為油量多,碗湯由頭熱到尾。麵條 (4/5)呢款麵唔係少見,中細直麵,偏白色,麵味偏淡不過配塩湯係夾。我特別鍾意個軟硬度,以我口味而言係剛好煮到甜蜜點,有咬口之餘又不失軟糯,呢種口感係比較少有。配料 (4.5/5)雞叉燒中上,即叫即煎,應該係先煮左8-9成熟,有order就煎香埋個面就剛好。不過肉汁稍嫌少左d。豬叉燒係即叫即切,以我觀察,正常每碗麵都係跟兩塊,剛處理我嗰碗時,咁啱切到差不多尾,所以嗰兩塊肉較細。不過師傅確實夠均真,自動自覺响另一舊大叉燒道切多塊比我,呢吓抵讚!味道方面,因為塊肉近乎冇點額外調味,完全冇食到調料嘅味道,只有純粹嘅豬肉味。如果店家想特顯肉本身嘅肉香,我就覺得未做得夠好,因為肉味都幾淡,唔夠甘香,屬中規中矩水平。溏心蛋就近乎完美,無論調味同生熟度都係一等一。我心目中一碗好嘅拉麵一定要符合某d條件,而其中一樣就係,碗麵必須要比到人感覺係用心機整。呢碗麵嘅心機位在於:擺盤靚,麵線夠整齊雞叉燒即叫即煎豬叉燒即叫即切師傅夠細心,除左以上講佢會因應叉燒嘅大小酌量調節,同埋見到佢如果隻蛋明顯烈開左會唔要,呢d細節我都看在眼內。心機係足,可惜湯嘅鹹度太高,對我口味來講係一大缺點,建議店家可以提供正常同淡嘅濃度,以供選擇,照顧淡口味者。p.s 水壼入面放嘅唔係檸檬,而係橙,飲橙水我都係第一次。…Read More

《浜滝》自家製黑蒜拉麵🍜 + 鮟康魚肝📍九龍城福佬村道59號地下A號舖呢間店雖然係距離我屋企最近嘅拉麵店,但對上一次幫襯已經係好多年前嘅事。之前食我就唔覺得特別好,最特別都係佢加入左一塊石頭,碗麵一路食一路d湯仲keep到好夠熱,今日一於重溫下。《自家製黑蒜拉麵🍜》香味 (4/5)一如所料,黑蒜香味濃郁,幾香嘅。湯 (3.5/5)都係以黑蒜味道主導,豚骨味就差不多被蓋過晒,不過動物系嘅鮮味都係明顯,鹹甜適中。藉得一提係佢成個湯都係黑色,唔係上面得層油咁簡單,應該同個底湯有刻意blend過。麵條 (4/5)麵係細麵,有d似食札幌拉麵嘅基本配置咁,曲麵,偏硬,麵色偏黃,只係粗度不一樣。我就覺得個麵幾特別,唔係道道都配呢款麵,同個湯都幾夾。配料 (2.5/5)豬叉燒雖然個樣係正常,但係無論質感同肉味都係弱,中下。筍就正常,有調過味,勝在量多。溏心蛋又係較弱,過熟,蛋香麻麻,調味就正常。另外加18蚊有份鮟康魚肝,味道正常,有燒過。呢份魚肝嘅滿足感比碗拉麵仲要高。整體 - 又係屬於經過食碗都 ok 嘅級別,70分左右。如果你問,塊熱石有冇為碗麵加到分?我就認為些點啦,印象中以前食嘅時候,會多左陣焦香味,但今次就沒有,只有對湯嘅溫度有點加分啦。…Read More

《麵屋丸京》清湯丸京拉麵 🍜📍牛頭角宜安街9號地舖丸京對我來講係有種情意結,因為牛頭角店就响我轉左觀塘返工冇耐之後開,應該都差不多係9年前,可以話睇住佢開,而咁多年,特別我响觀塘嗰幾年一路都有食開,味道各方面都唔錯,lunch食返碗絕對係好嘅選擇。我冇做觀塘份工都有3,4年,今日特登抽空去探一探佢。《清湯丸京拉麵 🍜》香味 (3.5/5)因為點左嘅係清湯,冇刻意加香味強烈嘅香油,所以香味並唔算好強,都ok。湯 (3.5/5)湯底應該係主要係用雞骨煲,或許都有加豬骨,不過雞骨味為主,食到中後段香菇🍄‍🟫嘅味會出左黎。醬油有加但比例唔算重,鹹甜度算剛好,稍偏甜,順喉,完全冇任何負擔。湯嘅溫度就唔多夠,不過咁啱今日係大熱天,反而好,唔駛食到身水身汗。麵條 (3.5/5)中細麵,煙韌,麵味中等,正好同個清湯幾夾,幾好食。配料 (4/5)豬叉燒份量非常足!有4塊較細塊嘅叉燒,同3塊較大嘅叉燒,睇肉嘅紋理同味道應該都係豬肩肉。第一款叉燒有頗重蒜味,我就幾鍾意。第二款佢地稱之為”真叉燒”,大塊好多,不過冇特別調味。兩款叉燒肉味甘香,不過唔算好軟嫩。因為份量真心多,食得非常痛快,唔駛就住食。筍方面真係抵讚👍,非常咁好!夠粗,夠腍又不失爽口,口感係完美,調味又剛剛好,超水準!溏心蛋就一般,雖然生熟度係好,但調味出左事,有少許苦味,可能料理酒加多左。整體 - 值得小推薦👍。因為呢間店咁多年都有保持一定水準,而且限定湯底常常有推出,永遠唔會悶。…Read More

《一笑食堂》雞湯拉麵 🍜📍深水埗順寧道98號美寧中心A座地下13號舖先講一件無聊事,話說有次去池袋食五感,我出發時响 Google Map 就 search “池袋 五感”,就不加思索撳左頭一個 result,跟住出發。去到之後發覺並唔係我預約嗰間五感,但店名一模一樣,我就唔知邊個抄邊個,亦唔知當中來龍去脈,我只係飛快地衝去”真正”的五感,好彩兩店距離都算近,步行15分鐘,跑就5分鐘,唔跑真係唔得,因為預約左 😫,結果趕到身水身汗。點解會講呢件事呢?睇到底自有分曉 😂《一笑食堂》一直都有聽其他麵友提過,而食評幾乎都係正面,店長富哥似乎好健談會主動同客人傾計,想試好耐,今日終於安排到時間探店。今日我點左雞湯拉麵 🍜,論驚喜度,可能係今年內最高嘅一次。首先因為我中午去,所以有做午巿價,碗麵只係 55 蚊。碗麵一上,富哥主動提點食到咁上下可以加拉麵胡椒轉味。我習慣每一碗麵一上就先聞一聞先,香味就並不強烈嘅,點知一飲個湯,雞味濃烈,真心可以用响口腔爆發來形容!雞味唔單單係濃,仲有鮮雞先有嘅鮮味,呢吓冇可能用雞粉可以扮得到。雖然menu冇寫明,不過呢款明顯係雞白湯,亦見到富哥有用blender打過。講真我唔太鍾意雞白湯太過白色(個人喜好),而呢款湯就係自然偏黃色,十分濃郁而鹹甜度剛好,我覺得近乎係完美黃金比例。麵條方面,細直麵,同一般博多風拉麵會用嘅細直麵大同小異啦,軟硬度適中,好食嘅。豬叉燒又係另一驚喜位,豬五花,肉同脂肪之間有一層筋膜,因為係第一次幫襯唔知係咁啱係咁定長期係咁,我就非常鍾意,就類似食牛腩嘅人都多數會鍾意食崩沙腩,就係貪佢有塊筋膜,口感好好,而且肉味甘香可口,又係近乎完美。溏心蛋就正常發揮啦,調味偏淡口不過勝在夾個湯,有流心不過我就鍾意再生少少會啱口味d。讚左咁多係咪冇野唔好呢?有一樣嘅,我就覺得放高菜有少許唔夾個湯,因為高菜味道有d霸道,撈埋落個湯度有d蓋過左湯嘅鮮味,如果用返木耳可能會好d。因為係午巿,加35蚊可加個小食同飲品,我就加左雞沙律。我未做足功課,以為沙律係沙律菜,原來個沙律係薯仔撈蛋,不過都係好食嘅。整體,55蚊可以享受呢款麵,論性價比呢款麵係真超高,下次一定要帶埋屋企人朋友去探探佢。話說回來,回應返開頭,因為我第一次去,唔知間店真實位置,都要搵一搵。响附近,有一間叫”千笑居食屋”嘅店,似係新開張,傻傻的我仲以為自己記錯左店名,响門口望左一陣先知此間不同彼間,好彩冇中鬼左入去。…Read More

《神虎麺商店》神虎拉麵🍜📍大角咀埃華街74號大同新邨大成樓地舖唔少拉麵迷,都會趁店家推出期間限定版拉麵時撲去試試。我都有類似心態,不過都要睇睇👀啱唔啱食同價錢如何。《神虎麺商店》嘅期間限定拉麵普通價格都頗進取,可能因為每次都係用貴料。店家近來推出和牛拉麵,我睇到個價錢真係有d欲步,所以決定食返招牌拉麵算了。《神虎拉麵🍜》香味 (4/5)豚骨,白胡椒,山椒嘅香味都有,豚骨味為主軸,好香。湯 (4/5)都係豚骨味道為主軸,香濃,鮮,鹹甜度剛好。見湯上麵有浮住睇落似背脂嘅白色野,我相信係店家為左提升個湯嘅香濃度而加,而且更順滑,好味嘅,又唔會話好油膩。麵條 (3.5/5)中細麵,直身,形狀偏圓。口感同味道同車仔麵食到嘅油麵接近,我就覺得還好,唔係太有個性。配料 (4.5/5)豬叉燒就近乎完美。用嘅部份係豬肩肉,肉質鮮嫩,肉味濃,好好食。肉丸呢,淡淡嘅山椒味,正常,幾好食。溏心蛋係我鍾意嘅調味,調料偏輕手,所以蛋本身嘅味更容易品嚐到。生熟程度完美。最後當然完食冇難度。整體 - 值得推薦 👍👍👍👍…Read More

《炙・宴》火炙沖繩琉香豚豬骨🍖湯拉麵🍜📍鑽石山龍蟠街3號荷里活廣場1樓131-133號舖雖然呢間店專做丼飯,都有唔少分店,咁啱經過又未試過,而見到佢人気 No.3 嘅產品係拉麵,試一試啦。《火炙沖繩琉香豚豬骨🍖湯拉麵🍜》香味 (4/5)碗麵一上枱,就聞到濃濃嘅蒜香味,隨之而來就係蔥同豚骨味,非常好聞,第一印象好左先。湯 (3.5/5)碗邊嘅左側見到有唔少炸蒜,同蒜油,香味係以蒜味主導冇錯,啖湯飲落蒜嘅身位又冇聞落咁重,豚骨嘅鹹香味同蒜味不相伯仲。豚骨味夠濃,不過少少唔啱口味嘅係,佢應該落左忌廉或花奶之類去加添左份奶香味,我就麻麻地。而蒜油可能重手左d,令到個湯嘅油膩感偏高,少扣分。麵條 (3/5)豚骨湯拉麵,一般配置都會配細直麵,低加水,偏硬會更普遍。不過呢款麵有d顛覆左呢個概念。麵雖然都係細直麵,但似係中至高加水,而比較腍身,同平時响一蘭食到嘅博多拉麵標準配置差頗遠,有d似屯門道配雞鹽清湯款麵。麵味幾夠,面對濃濃嘅蒜爆奶香豚骨湯都冇話蓋過晒,我覺得都算幾夾,不過可能先入為主,我未係太習慣呢個配搭。配料 (4.5/5)豬叉燒係一大亮點。Menu上有提呢款叫”琉香豚”,個名有d比佢拋窒左,所以食嘅時候警介心頗重,食落點知真係有料到。呢款肉似豬里肌,係豬扒常用到嘅部位。因為比較瘦,脂肪唔多,肉質一定冇豬肩肉豬五花d咁腍,口感比較扎實。不過因為邊邊位有火炙過,而調味有用心思,食到生薑味,而肉味夠晒鮮甜,帶些點兒微微酸。呢款叉燒我會比滿分,可能佢調味特別之餘,又對到我口味,我鍾意偏瘦。溏心蛋,稍稍少扣分。唔係因為基本功問題,只係响個咁濃味嘅湯,麵,同豬叉燒底下,呢款蛋調味唔太夠,太清淡左d,而蛋香亦不足。另外唔知係咪午巿先有,免費送左碗沙律🥗。蔬菜嘅新鮮程度,調味,都係做得幾好。雖然我認為呢款麵係夠晒香濃,但唔代表佢太鹹或太甜,反而鹹甜度係剛好,我不經不覺食下食下就食鬼晒,完全冇話大鹹想溝清湯嘅想法。最後當然係完食啦!整體 - 值得推薦 👍👍👍👍呢碗麵比到我最大記憶點係來自塊豬叉燒,我一離開間鋪已經諗緊幾時返頭食,確係令人口味。另外佢嘅腍身中高加水麵亦記一功,而蒜爆白湯亦比到我強烈滿足感。提左咁多好野,係咪冇野彈又唔係,上菜速度真點慢,冇刻意計時但由落單到上菜大概都有15分鐘⏰, ,而當時鋪入面並唔多人。…Read More

《健康食品拉麵》特製拉麵🍜📍中環威靈頓街97號威利大廈地下B,C,D號舖本身呢間店完全係我雷達範圍外,因為我睇完OpenRice 個 menu之後,如果佢唔係一間專做拉麵,而係乜鬼都有得食,好似間居酒屋咁嘅店,除非有人推薦,如果唔係我多數會 skip。而呢間店食物種類之廣闊令我認為佢徹頭徹尾就係一間和食屋,或日式飯堂,最令人吃一驚係佢連牛腸鍋都有做。原先我朋友係推薦呢道嘅沾麵,不過唔知佢其實係幾耐前食嘅,我今次去食店員就話冇做。咁 ok 啦,疊埋心水一於食返拉麵啦。《特製拉麵🍜》店名有”健康食品”四個大字,而我又係第一次食,我去之前係相當好奇佢點呈現健康食品於一碗各方面都唔太健康嘅拉麵呢?食完我大概心中有數。香味 (2/5)雖然呢款麵叫特製,冇標明係咩湯底,不過睇完menu個賣相,同其他麵款都好肯定係豚骨湯。如果以豚骨湯來講,香味係唔ok,因為我聞到嘅就只有麻油味同蔥嘅味,豚骨味就聞唔到。湯 (2.5/5)個湯味道係夠,鹹度適中,但唔係濃濃豚骨味為主,豚骨味只係個配角,我偏向認為加左唔少科學味道,個湯同出前一丁味粉嘅味道差不多,但點都好d因為食得出豚骨味係真實的,而個湯比味粉湯有層次,只係個味道效果類近。麵條 (3/5)正正常常,都爽口,唔錯嘅。配料 (3.5/5)叫得特製拉麵,料一定要豐富,叫點佢係做到。豬叉燒係豬五花,上碟時先用鐵板煎香先,又香口感亦扎實,厚度夠,有三塊都算係咁,滿足嘅。比起叉燒,蔬菜嘅量係多到驚人。首先要注意係佢係加左超大量嘅蔥絲同蔥粒,近乎係每一啖都食到滿滿嘅蔥。不過因為蔥係生嘅,冇煮過,所以有唔少蔥嘅辛辣味,如果唔好食蔥嘅人未必會鍾意。另外就係菠菜,又係量超多,而菠菜煮得亦唔夠透,好就好在脆口,唔好在於要咀嚼好耐都未必完全咬得爛,食到半路中途我牙較開始有d軟。紫菜我冇細心數過,不過至少都有三塊。不過咁,我都算係注重健康嘅人,多菜食我冇投訴,縱然d蔥同菠菜都未盡滿意,不過食咁多蔬菜落肚點都係好事。溏心蛋正常,調味剛好夠。整體 - 不推薦。但經過可食碗。看來,店家呈現健康食品嘅方法,正正就係加入巨量蔬菜响碗麵當中,除此之外我就食唔出仲有邊方面係健康的。…Read More

《拉麵來》廣島牡蠣 🦪牛尾湯拉麵 🍜 + 小食 (紫菜 5 塊) + 飲品 (Coke Zero)📍尖沙咀加拿分道25-31號國際商業信貸銀行大廈地下8號舖呢間店嘅地理位置非常好,正正就喺尖沙咀嘅最旺嘅心臟地帶,人流不乏。店入面目測大概廿幾個位,就算我平日12:30pm到,已經要排隊先入得,重要排第6。從店內大部份客人操嘅語言,我估計呢間店有部分麵友未必會有好感。我以前有食過牛舌牛骨湯麵,我就覺得幾好食嘅。今次見有款期間限定,一於試試啦。香味 (3.5/5)我一直認為牛尾嘅味道係好獨特,牛尾湯嘅香味應該一聞就識認到。如果從呢個角度睇,佢嘅香味就唔夠風味,因為牛尾嘅味並不強。反之,蠔嘅香味即非常明顯,加埋佢有唔少蔬菜增強風味,特別係片青檸,所以香味都係幾好。湯 (4/5)雖然唔太夠香,但湯嘅味道係唔錯。牛尾嘅味係食到,而且算濃郁,撞埋蠔嘅鮮味上互相輝映。鹹度剛好,甜度就偏高。麵條 (3/5)麵就普通d,中細直麵偏白,口感正常,配個湯效果都係普通。好彩我揀左 5 塊紫菜做小食,連埋麵一齊食,增加風味同口感。配料 (4/5)因為個價格都算進取,我對主角廣島牡蠣 🦪有住幾高嘅期望。蠔有三隻,當中兩隻算大隻,一隻奀d,味道都夠鮮,我收貨。豬叉燒係五花肉,有燒過不過唔夠香,肉質稍柴,算中規中矩啦。溏心蛋都係普通,唔夠蛋香。反而想講下d蔬菜,有海苔,蘆筍粒,洋蔥粒,少量薑絲,我覺得佢地發揮得幾好,連個湯同麵一齊食好夾。本身個湯食到中段係會有少少膩,不過有呢堆蔬菜嘅襯托下,增加唔少清新爽脆口感,解膩效果唔錯。整體,我認為雖然價格唔平,不過有小食有飲品,而款麵本身都足夠好食,蠔算大隻夠鮮味,連同配菜食充滿住海洋氣息同旨味。…Read More

《味吉長龍》吉龍,北海道豚足鹽味濃清湯拉麵 🍜📍尖沙咀漆咸道南17-19號帝后廣場地下7-8號舖第二次食呢間店,上次試左白龍,白松露慢煮叉燒濃清湯拉麵,今次試另一款:吉龍,北海道豚足鹽味濃清湯拉麵 🍜首先講個湯底。店家叫個湯底做 ”濃清湯”,我覺得好特別,唔係因為個名,係因為呢款濃清湯其實就係豬骨清湯。豬骨湯底十間有九間九都係做成博多風豬骨白湯形態,而豬骨「清」湯,而又做到又濃又稠又清澈,我就絕少响香港搵到。比起上次食,今次湯底嘅鮮味更加來得驚艷,因為上次款白龍加左松露。我一直都比較少揀加左松露或櫻花蝦嘅麵款,因為只要有佢地,其他味道多數會被蓋過。而今次款麵,我就揀左淡醬油口味,而醬油味不但唔會蓋過豬骨鮮味,仲起左相當嘅提鮮作用,我第一啖飲個湯心入面真係嘩左一聲!另外,比起上次食,今次湯嘅甜味明顯地降低左,對於我呢類唔喜歡甜湯頭嘅人來講,實在更討喜。麵條方面,中細,微曲,偏黃,口味扎實,麵味夠強,配醬油味幾夾。再講具材,重點當然係豬腳啦!我本身偏愛炆得又稔又爛嘅豬腳,好似食豬骨煲入面d咁。而呢度嘅豬腳正正符合我口味,調味剛好,又夠膠。豬叉燒方面,比上次今次明顯改善左。上次略乾柴,但今次夠粉嫩,肉味又夠鮮夠甘香,好好食。雖然可能係巧合唔定,今次碗麵嘅質素明顯比上次有改善,我就相當滿意,亦乜都清晒完食,除左d豬骨 😂。…Read More
