田螺肉有清熱、消腫、解毒的功效,而且含有豐富的蛋白質、胺基酸、維他命及多種微量元素。此湯功效可健脾利水、清肝解毒、開胃去濕、解熱毒、利大腸、防治肝炎、對肝癌有輔助療效,適合熱性體質人士飲用。

銀杏 3錢
大田螺 15個(或用乾螺肉三両)
瘦肉 1/2斤
清水 7碗

Method
1. 用清水浸泡大田螺以去泥(浸約半小時),待田螺將淤泥吐出,然後把淤泥和污水倒掉。若沙泥較多,可重複步驟,直至沙泥清洗乾淨為止,再用沸水浸燙田螺,取肉棄殼備用。若用乾螺肉,只需清洗乾淨便可。
2. 銀杏去殼去衣去芯,洗淨。
3. 瘦肉洗淨,切片,汆水。
4. 將所有材料一同加7碗清水同煮,以大火煮至水沸後,慢火再煲1小時半。最後,下適量鹽調味,便可飲用。
Tips
銀杏有小毒,故一次進食量不能過多。若進食銀杏過多而中毒,可出現頭痛、發熱、抽筋、嘔吐、煩躁不安及呼吸困難等現象,若需急於解毒,以生甘草二両煎服,或用銀杏殼一両煎服,即可解毒。
