Ingredient and Portion
(一)椰菜花六兩
(二)紅蘿蔔三兩
(三)蕃茄一隻(去皮去核)
(四)白菌2/3 杯
(五)薯仔六兩
(六)素雞六兩
Seasoning
調味料:
(一)油二湯羹
(二)酒一湯羹
(三)冬菇湯半杯
(四)鹽一茶匙
(五)糖1/2 茶匙
(六)生粉一茶匙加水半湯羹

葡汁料:
(一)麵粉六湯羹
(二)冬菇湯2 1/2 杯
(三)椰汁半杯
(四)奶水1/4 杯
(五)油二湯羹
(六)加厘油二湯羹
(七)茄汁一湯羹
(八)糖二茶匙
(九)鹽3/4 茶匙
Method
(一)先將椰菜出水切塊,薯仔切塊,紅蘿蔔煮稍腍切塊,蕃茄去皮去核,素雞切件。

(二)將油兩湯羹加入鑊內燒熱加入酒一湯羹,加入素雞及白菌爆香,即加薯仔、紅蘿蔔、蕃茄等勻,即加調味,倒入焗盆內。

(三)煮葡汁:先將油兩湯羹煮熱加入麵粉炒勻,再加咖喱及茄汁炒勻,將湯慢慢加入,加鹽、糖,最後加椰汁及奶水,將葡汁倒入素雞,內即用大火焗至面呈金黃色。
