(一)糯米3/4 碗
(二)紫菜十張
(三)鹹蛋黃六隻
(四)鹹頭菜剁碎二湯羹
(五)素叉燒二兩
(六)冬菇五隻切幼粒
(七)芫茜剁碎二湯羹
(八)生菜四兩切絲
(九)熟油一湯羹
(十)紹酒一湯羹
(十一)油鑊
Seasoning
調味料:
(一)鹽、糖各一茶匙
(二)胡椒粉半茶匙
(三)生抽一湯羹
(四)麻油1/4 茶匙
麵糊:
(一)生粉一湯羹,開水一湯羹
Method
(一)紫菜用布抹淨備用。
(二)糯米用水洗淨,再用滾水浸十五分鐘,隔去水份,放入蒸籠或碟內蒸熟留用。
(三)將熟油一湯匙燒熱,加紹酒,將頭菜、冬菇、素叉燒、芫茜等加入炒香,再將調味糯米飯加入炒勻,即成餡心。
(四)將紫菜舖平在檯上,舖上餡心,再將鹹切蛋黃切碎排放在糯米飯邊沿成一直線,即將紫菜連飯卷起成筒形,用麵糊黐口。
(五)將油鑊燒熱,放入紫菜卷,用慢火炸熟,然後切段,排入碟內,以生菜絲圍碟邊即成。
