糯米 1斤
椰汁 1杯
鹽 1茶匙
糖 ½湯匙
蕉葉 2大片
蝦米 2両
白椰茸 3両
香茅 1棵
乾蔥頭 2両
蒜頭 2粒
南薑 1片
紅椒粉 ½茶匙
黃薑粉 ½茶匙
馬粒盞 ½湯匙
鹽 ½茶匙
糖 ½湯匙
古月粉 少許
Method
1. 糯米洗淨後,用水浸約5小時,瀝乾,加入椰汁、鹽、糖蒸約40分鐘或至熟。
2. 蕉葉洗淨後,剪成小塊,用熱水烚軟或蒸至軟身,瀝乾。
3. 蝦米浸軟,刴細,炒香。
4. 白椰茸炒香。
5. 香茅、乾蔥頭、蒜頭、南薑刴爛,用油爆炒至香,其後放入馬拉盞再炒,然後再放入紅椒粉、黃薑粉及其餘調味,蝦米及白椰茸回鑊拌勻,盛出。
6. 蕉葉放平,滑面向上,放上一層糯米,其後將香茅椰茸餡鋪上面,再放上一層糯米,連蕉葉捲起,束起頭尾兩端,吃時再蒸或烤約5分鐘。
