難得有日本朋友到香港,早幾個月前因為工作關係未能見面,所以今次特意挑選連我都未去過嘅「獅房菜」,位於帝京酒店3樓。食物方面係有質素,由廚師發辦共九道菜式,感覺好似港版嘅omakase。頭盤花蟹茶碗蒸+普洱海參凍+鬈髦豬叉燒,個花蟹茶碗蒸嘅蟹肉夠多,味夠濃,反而叉燒感覺只係普通嘢,同公司大家樂感覺差唔多;第二樣係青花椒·龍蝦球·炒牛乳,呢個可以話有驚喜,將呢三樣嘢融合到一個菜式,我真係想知佢個食譜係點,味道上係冇違和感,反而有種好清爽嘅感覺;第三樣係蘭州蜜瓜·瑤柱·響螺湯,呢個有啲似我曾經煲過嘅爵士湯,但我當時個蜜瓜味冇佢咁出,佢個甜味係有啲誇張,呢個反而係我唔太喜歡嘅地方;第四樣係古越龍山·蔥香·鮑魚,用古越龍山調配出嚟個醬汁好出色,帶出佢酒嘅香味,鮑魚唔係果啲罐頭鮑,真係慢煮出嚟,軟硬度係剛剛好,難怪要比刀叉我切,向來冇table manner 嘅我都唔好意思將隻鮑魚一嘢隊入口;第五樣係好可愛、亦好可憐嘅菜式,韓國泡菜·黑毛和牛酥。冇諗過出嚟真係一隻牛,要用專用嘅鎚敲開佢,入面用荷葉包住黑毛和牛,感覺好新鮮,而且味道非常唔錯,牛肉完全冇比泡菜個味道蓋過咗。食完比左杯酸梅啫喱清下味蕾,但係呢個係唯一可以用極度難食嚟形容嘅嘢;第六樣係鮮姬松茸·花膠·黃湯,一個我覺得稍為普通嘅菜式,佢個黃湯嘅味道係唔錯,但好多酒樓都有類似味道嘅湯,呢一味算係最普通嘅一道菜式;第七樣係金退燕窩·野生竹笙·菜苗,呢個歸「養生」嘅菜式,我一度懷疑佢個燕窩係假,好少會有咁多,加上佢有啲類似紅燒汁果種味道,味道唔會太淡。加上面頭一層金泊,成件事高級咗好多;第八樣係澄海滷鵝·淮山麵,聽落好普通嘅菜式,但味道係唔錯,佢個鵝片係滷得好入味,肉質亦夠淋同滑,唯一美中不足係細碗咗啲,因為家下我肥咗大食咗好多;終於到第九樣嘅甜品,鴛鴦茶·奶凍,我一開始我係唔知隻杯係食得,我淨係食入面啲奶凍,因為佢個味係鴛鴦果種味,又唔太甜,係朋友話個杯係朱古力嚟,我先恍然大悟,但可惜佢個朱古力杯對我嚟講係太甜,我食咗一半就放棄咗。總括嚟講,有喜慶、聚會、招待外地親友的話,呢間係值得一試,因為下一次又唔知會係咩菜式。一餐入面有咁多款式,夠體面,加上酒店嘅質素,700幾蚊位,呢個價我覺得係值。 continue reading

今晚同班friend一齊去咗帝京酒店嘅獅房菜,食咗佢哋九道菜嘅「非遺雅宴 • 傳味承真」,每道菜都係精心設計,用精湛廚藝同創意,將香港非遺元素融入菜式,畀我哋感受到香港獨有飲食文化嘅魅力。滷醃三品:前菜一上枱已經覺得好吸引,首先係「椒韻墨玉」其實係潮式藤椒墨魚,個墨魚片個鮮味彈牙,仲有陣陣藤椒嘅麻香同微辣Chilli Sauce,刺激得黎又唔會搶味,啖啖都係驚喜。跟住有「琥珀藏薑」,即係子薑尖椒皮蛋,入口酸酸辣辣,仲帶點古早味,簡直係開胃神器。最後係「醬香珍味」,係蝦醬蔥燒刺參,蝦醬嘅鹹香同蔥嘅清甜將刺參嘅鮮味完全逼出,口感軟糯得黎又夠晒入味,呢個組合真心抵讚。煙燻二品:首先係「籠香玉餃」(蒸籠鴨肉餃子),呢個鴨肉餃子真係不得了!皮薄得似透明,鴨肉餡鮮嫩多汁,蒸籠香氣一掀蓋即刻撲鼻而來,食落去仲有淡淡嘅煙燻味,係咁話你知點樣叫「入口即化」!另一道煙燻前菜係「金縷蜜焰」,即刻米通腐乳叉燒,叉燒燒到外焦內嫩,腐乳嘅鹹香同蜜糖嘅甜味完美平衡,仲有米通嘅酥脆口感加持,咬落去係一場味覺嘅煙花騷,甜鹹交錯,停唔到口。跟住就到主菜,首先「翠膽明珠」,即係砂鍋菜膽花膠廣東雲吞,雲吞皮薄到見餡,入口滑溜溜,花膠同菜膽嘅鮮甜喺砂鍋湯底入面完全釋放,每啖湯都好似飲咗一碗廣東精髓,暖胃又暖心。跟住係我好喜歡嘅「漁港風華」- 避風塘鹹魚茸豆豉煎馬友魚,啲避風塘炒蒜真是勁香!馬友魚煎到金黃香脆,鹹魚茸同豆豉嘅濃郁香氣滲入魚肉,每一啖都係滿滿嘅海港風情,食到我差啲連碟都舔埋。然後就係「陳滷菌珍」,係陳皮滷水牛肝菌農場雞,雞肉滷得好入味,肉質嫩滑,牛肝菌嘅濃香同陳皮嘅清新完美融合,簡單得嚟有深度。食完啲重口味嘅主食,跟住就上「漁澳風光」,係大澳蝦乾魚肚杞子菜心苗,杞子同菜心苗加咗一抹清甜同爽脆,呢道菜好似將大澳嘅海風同陽光都食咗落肚,清新得黎又好有層次。單尾係「金炊玉饌」脆芋絲臘味蟹肉炒飯,其實食到呢度已經開始飽,但呢度絕對唔可以錯過呢個炒飯,炒飯粒粒分明,臘味嘅鹹香同蟹肉嘅鮮甜一齊爆發,仲有脆芋絲加持,口感層次豐富到不得了。呢度嘅甜品都好精緻,首先係「茶啡雙凝」港式鴛鴦茶凍,鴛鴦茶凍入口即化,茶同咖啡嘅香氣喺凍凍嘅口感入面交織,甜度啱啱好,清新又唔會太重,感覺好light。仲有呢個造型超級得意嘅「傳統小點」麻雀千層馬拉糕同懷舊合桃酥,千層馬拉糕用咗麻雀嘅造型,鬆軟香甜,合桃酥就係滿滿嘅懷舊情懷,回味無窮。總結嚟講,呢餐非遺宴,每道菜都好似一件藝術品,將傳統中菜嘅精髓同現代創意結合得天衣無縫,真心推介俾鍾意試新嘢同喜愛中菜嘅朋友。 continue reading

今次試下中式fine dining。預訂套餐$700一位,已經連加一。因為係慶祝所以我哋另外加咗wine pairing($298+10%)整體啲嘢食都好好味,中間有個雪葩啱啱好因為食完牛肉好飽同有啲膩。至於Wine pairing, 我地覺得sake麻麻地啱我地口味,其他酒都ok。去到最尾嗰杯Amarone就抵哂🤣唔知係咪比較之下,不過成餐飯去到最尾有好酒慢慢飲,配埋甜品,啱啱好🥰因為係慶祝,餐廳貼心準備咗小甜品同牌俾我地影相。如果遲啲有機會會再嚟試。 continue reading

生日宴!用whatsapp跟客服溝通,取得晚餐食單!餐廳景色廣濶開揚,裝修古式古香夠典雅,我們6人選了2種不同套餐!都非常出色!一款是大觀八道(買一送一)及另一款獅房厨司發板八道($700全包加一酒水)!以這個价格,抵!星期日,客人不算太多!所以有足夠人手招待!我們在酒店樓下買旦糕便不需切餅費及有9折,抵!仲並安排送上獅房菜房來!貼心!每一道菜式均有名字,亦配合沙畫!色香味均出色!大觀八道取自紅樓夢十二金釵.角色名字!所有擺盆都十分女性化!剛好我們三位女性選取,十分驚喜!另外的厨司八道是夏天時令菜色!亦非常出色!侍應每道菜都會簡單介紹解釋菜色如何制作!十分貼心!歡愉渡過一個晚上! continue reading
