To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 位於大埔的「豐生水起」,是本地名廚陳國強先生開的店,開業半年,主打「黃湯鴛鴦花膠雞鍋」,真材實料,味道鮮香濃郁,吃了一次立即上癮,雖然店子很遠,但已決定了下次還是要再來! 我們周五晚上來到,正下著滂沱大雨,不過卻是愈坐愈多人,到八時多已座無虛設。 食物選擇頗多,但無論怎樣再多,都一定要點招牌的「黃湯鴛鴦花膠雞鍋」。 火鍋醬油 ($15/位) 開始之前,先有兩個值得一讚位。首先湯鍋都是用鐵鑄鍋上桌,非常保溫和存氣,可見製作一絲不苟;另外是火鍋醬油都使用了獨立拉罐 (餐廳自設機器製作),每次用完即棄,感覺衞生多了。麻醬是餐廳自家製的,香氣濃郁,一定要試。 前菜:麻醬冰菜 (免費) 有趣的是,這裡的前菜都比較西式,今晚是麻醬冰菜,爽脆多汁,平時還有巴馬火腿等。 好大杯竹蔗茅根水 ($28)、豐盛水果茶 ($38)、好大杯鴛鴦鹹檸七 ($28) 吃火鍋,一定要點幾杯冰涼飲品吧,這裡也毫不吝嗇,全部都好大杯,我點的是竹蔗茅根水,味道清甜又可降火。 加拿大象拔蚌 ($1,680) 人多,要了一碟象拔蚌刺身,不是我杯茶,朋友卻都大讚爽口清甜;象拔蚌的肝臟不小,可以用來椒鹽,漿

加拿大象拔蚌 ($1,680)

人多,要了一碟象拔蚌刺身,不是我杯茶,朋友卻都大讚爽口清甜;象拔蚌的肝臟不小,可以用來椒鹽,漿粉薄身不油膩,蚌肝吃起來竟有點像炸蠔,鮮香味美。

黃湯鴛鴦花膠雞鍋 (大,$368)

這個火鍋叫「黃湯」真的沒有誇張,湯底用三黃雞、老雞、赤肉、金華火腿等熬足十多個小時,一個煲內,半煲是材料,熬完只剩四分一,雞湯出來顏色金黃,味道濃郁香甜,呷一口,嘴巴都被黏住了。

我們這晚叫了一煲大的,將雞件放進湯裡,待五分鐘就可以吃了。

所謂「鴛鴦花膠」,其實即是花膠和魚肚。這鍋湯足有一隻雞、十塊花膠和多塊魚肚。先吃雞和花膠,雞皮爽脆,雞肉味濃,花膠軟綿又滋陰; 魚肚則要慢慢再煲,等待入味才吃。

喝完湯,吃完湯料,可以加雞湯打邊爐了。這裡的加湯都是用雞熬出來的清湯,所以繼續再吃火鍋,雞湯味道還是那麼濃郁,尤其是烚菜,蔬菜全吸收了雞湯的精華,特別美味!

打邊爐必點的是「豐生牛肉盛」,一碟裡有齊本地手切牛肉、美國頂級安格斯和牛柳粒,前者油脂分布平均,質感軟腍,後者肉味濃郁,很久沒吃過這麼高質的牛肉啦!

極品海鮮盛 (四人份,$708)

海鮮盛也是非常豐富,鮑魚爽口彈牙,鮮蝦非常鮮甜,都是我的最愛,其他還有扇貝、蚌和鱔片等,材料都好新鮮。

飽肚之選有餃子和丸子,餃子裡面有椰菜和豬肉,增添了口感;丸子都是鮮打,共有八大粒不同口味:鮮蝦丸、墨魚丸、鮮牛丸、豚肉丸、鮮雞丸、羊肉丸、潮州魚丸、鯪魚丸,各有特色!
