Two appetizers were refreshing, light and intricate. The sashimi medley is like a seafood summer in a jar featuring Hokkaido hairy crab and a selection of diced sashimi, tasted so refreshing. The second dish served in a bamboo was a silky fresh soya skin highlighted the natural flavor of soy contrasted with the rich sea urchin bursted with umami. The small fish platter comprised of a gorgeous tuna belly, delicate flounder sashimi and a seared Spanish mackerel. The two hot dishes were both cooked in wraps (hence both involved a reveal 👀), tilefish in salt kiln and a wagyu beef Suki-Shabu, both beautifully executed but were quite forgettable in terms of flavor. A total of 6 sushi were served, each flavored with a tailored dressing to complement the unique flavor of the pairing seafood. Especially impressed with the citrusy sauce with the rosy rockfis. Appreciate the thoughtfulness behind each sushi creation.
