Each dish creatively reinvents classic Italian flavours with a focus on quality, seasonal ingredients and traditional cooking techniques. Start with ham and then Red Prawns with Caviar. The Champagne tomatoes sauce blends in so well with the flavours of the ingredients . It is so naturally fruity sweet, a bit creamy , but nothing toot hick nor too watery. Indeed it is one of the highlight tonight. Another twist would go to the Veal Shank Agnolotti with Morel Mushroom. The unique taste of veal shank incorporated beautifully everything from Agnolotti to Morel Mushroom . The veal is so rich, saucy and tender, together with the interesting texture of morel mushroom. It will make you fall in love with it . However, Mayura Beef Tenderloin with Black Truffle is undeniably the star of the show. There is quite a subtle woody, musky aroma absorbed into the the mayor beef tenderloin that melt inside your mouth. It is a silky smooth texture and unrivalled juiciness that you won't feel a penny of grease. What a gorgeous equation of balancing the flavours exquisitely. Giacomo is making it clear the dedication to the perfection of Italian cuisine. I am definitely coming back and highly recommend it.
