上次來鉄人旨花吃爐端燒,已經十分出色,這次來吃omakase,更加驚喜!先吃幾道前菜,熊本蕃茄十分鮮甜,比一般甜幾倍。冰頭漬是三文魚的鼻樑軟骨位,非常珍貴。師傅用醋及味醂等醃製,入口非常爽脆,酸酸甜甜的。松葉蟹肉拆肉再加蛋黃醬,鮮甜帶蛋香。右口魚刺身,肉質軟滑,煙韌中帶點粘口土佐醋啫喱,珍蠔日本蠔的吃法通常都要燒,生蠔還是第一次吃到。珍蠔大隻肥美,肉質鮮嫩細滑,土佐醋啫喱的酸度令珍蠔鮮味更突出!除了右口魚薄切,還有金目鯛及拖羅刺身。金目鯛輕輕火灸過,魚皮微微焦香,拖羅則配上山升漬,山升漬是北海道特產,甜中帶微辣。帶子外層煎香,內裡肉質依然鮮嫩彈滑,再用爽脆紫菜包著吃,口感又爽脆又軟嫩彈滑。鮮味中帶紫菜香。薄燒美國牛,首先熟成度剛剛好,外圍燒熟散發出肉香,中間位微微粉嫩帶有肉汁,配合上蒜片,沾點酸汁,加少許岩鹽,肉味濃郁而且惹味。即將準備吃壽司前,吃幾款漬物清一清味蕾。有柚子蘿蔔,牛旁,日本紅蘿蔔及蕎頭。 味道又清到濃吃起,先吃赤目張,肉質軟彈結實,飯粒煙韌軟彈。之後吃深海池魚,鮮甜肉彈帶有粘口膠質。油甘魚就軟綿油潤,入口慢慢溶化。 火灸赤蝦,先去殼及抽出蝦膏,將蝦膏放上蝦肉上有火槍燒,
