差不多兩年沒去這裡用餐
最近再訪還是一如既往高質素
這次吃的菜式以海鮮作為主要食材 每一道菜都充滿味蕾的驚喜

✨Alaskan King Crab (🍾white chardonnay)
uni • sea whelk • white pepper bubbles scallion oil • spanner crab congee sauce
以港式艇仔粥為啟發 融入蟹肉跟海膽 帶有淡淡的白胡椒跟蔥油香

✨ Langoustine (🍾white chardonnay)
cuttlefish noodles • salmon roe • dried shrimp puffs creamy fermented shrimp & chives sauce
個人最愛的是這一道!以墨魚直接做成麵 口感非常Q彈 蝦醬的鹹香味把海鮮的鮮味昇華 搭配微酸的醬汁平衡 口感非常有層次 而且旁邊的龍蝦非常好吃

✨Octopus (🍷red)
binchotan-grilled • "char siu" glaze • millet
broccolini • elderflower lobster foam
以港式叉燒作啟發,閉著眼吃真的會分不清是章魚還是叉燒,醬汁glazed得十分漂亮

✨Black Abalone (🍷red)
farro • sweet garlic • liver-infused sweet soy shitake farro cracker
以煲仔飯為啟發,鮑魚非常鮮甜,蒜香味非常香,很喜歡使用的甜醬油,搭配cracker吃很讚

✨Chocolate Choux
Valrhona chocolate Chantilly • 70% dark chocolate ice cream meringue • cola bubbles
以菠蘿包為外層,夾心是濃郁的巧克力冰淇淋,搭配可樂bubbles 超特別!
