To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. Participating restaurants will be granted with the Scheme Labels for displaying in the premises for public identification. 就算時代不斷變遷,大家對中菜的感覺始終未能提升達致西餐的水平,總是覺得次一等的。可是,於近來有不少中菜廳慢慢轉營,成為Fine Dining的選擇,而當中位於The Mira的國金軒就是其中一員。 掌廚的鄧師父絕對居功至偉,由初時的穩打穩紮,一直進步至現在的色香味俱全,在賣相及味道上都被人讚不絕口,配合時尚的裝潢,將中菜的精緻一面推廣給客人。 近來天氣炎熱,清爽的菜式不但令人清新,更能增進食慾,這道香蔥薑末西班牙八爪魚海蜇頭拼就非常適合了。以香噴噴又清新的薑蓉蔥末來刺激胃口,配合軟滑富蜜香的叉燒,令人感到滿足。 突然,鄧師父送來了驚喜,一隻足有前手臂長度的大蝦就在眼前,並加入了芝士來釀焗,輔以帶辛香的青胡椒汁,就成了這道美味又鮮味的綠胡椒汁芝士釀西班牙紅蝦了。紅蝦體型超級巨大,肉質吃起來也很嫩滑,令人愛不釋手。 清新可以增進食慾,同樣地,辣香也能刺激胃口。這道川辣牛肉銀絲充滿了色香味,先是紅噹噹的紅色,接著是香噴噴的香味,最後便是既辛且辣的美味,而且銀絲掛上了惹味的辣汁,滋味無窮。 正所謂好戲一浪接一浪,蝦籽柚皮絕對是焦點所在,雖然不止於失傳,但卻稱得上買少見少,柚皮早已被燜得軟腍

正所謂好戲一浪接一浪,蝦籽柚皮絕對是焦點所在,雖然不止於失傳,但卻稱得上買少見少,柚皮早已被燜得軟腍入味,一點澀味也沒有,加上吸收了惹味的鮑汁及以蝦籽來點綴,突顯了香濃又惹味的精髓。

任柚皮再美味,也不及黑松露手撕雞的美味。以生菜來包著充滿松露香的手撕雞,吃起來爽口兼鮮味十足,討人歡喜。

臨近尾聲,以籠仔斑塊糯米飯作為結尾就非常適合,煙煙韌韌的口感令人陶醉,加上鮮味的斑塊,是一道上好的美味,最估不到的是師父在蒜香斑塊中加入了茶瓜,甜味更突顯了鮮味。
