有時真係要不時不食,仲要有好廚師處理,先可以將食材盡量利用,秋刀魚就係其中之一。幾個月前去過 Umai,發覺不論串燒及天婦羅都有令人驚喜的表現,而早排又推出過秋刀魚菜色,當然要捧場。單單睇見原條秋刀魚眼睛明亮就知新鮮,令人相當期待。餐前先來杯清酒助助興吧!秋刀魚壽司莫以為簡單,原來壽司飯用上了新潟米,倍覺矜貴,放上新鮮的秋刀魚,魚油與醋飯的平衡恰到好處,美味。秋刀魚刺身擺碟一流,嫣紅的肉質份外誘人,不想蘸點醬油?沒問題,來點伴碟的薑茉,是另有一番滋味。秋刀魚紫蘇天婦羅把秋刀魚蓋上紫蘇葉後再來薄薄的一層炸漿,而毫無油膩的感覺,鬆化的口感有熟悉的感覺,當然又是由日籍天婦羅總廚疋田先生的手薄,總不會令人失望。味噌伴秋刀用上了清酒、醬油及味琳來處理,微微的酒香伴以輕盈的甜味,令秋刀魚多了變化,我又幾喜歡。鹽燒去骨秋刀魚而鹽燒去骨秋刀魚,就由另一位掌管爐端燒的總廚山田先生出手,入口脆卜卜,又吃得到魚香,佐酒一流。秋刀魚釜飯餐牌內最後一道是充滿大阪風味的釜飯。飯粒當然是新潟米,用鰹魚湯去煮,令每粒飯都有沾上了魚香,食之前更可以起骨,將魚肉拌和飯中,就更加滋味。一場到來,上次串燒的體驗實在太正,一於
