和家人長輩提早吃團年飯,選擇了隱世手功私房菜 【南華軒】襯飯店吾系太多人知,我哋先試先享受。大廚出馬有請陸羽前大廚劉師傅主理,其出品質素無容置疑,紮實功夫,一早已品嚐過,至今仍回味當中,所以今日係超級期待嘅心態嚟食飯。這裏裝修比較簡約,枱亦都唔多,大家一定要預約。「懷舊蝦多士」以原隻大虎蝦開邊,放在多士上,炸得金香入口酥脆,虎蝦彈牙爽口,香而不油,咸香鮮香在咀巴內爆發,美味而可口的懷舊味道。「米黃杞子浸龍躉球」龍躉肉雪白鮮嫩,膠原滿滿的質感,最特別系湯底以粥底熬成,口感綿密,有如鮮奶一様,鮮甜美味,好想再添一碗啊。茶壺功夫湯「松茸螺頭燉鷄腳」以功夫茶壼來特顯原盅燉湯的神髓,的的骰骰的,湯料足,湯頭又鮮又甜,清澈見底。「豉油雞」鷄件上色度足,油潤感足,用上兩斤半「三黃鷄」上枱時特別有份量,夾起我至鍾意嘅鷄脾細看,火喉剛好,雞皮彈性足,皮下略帶脂肪,黃油雞油份十足,雞肉入味,滷水豉油香而不死咸,鷄肉入口紮實,真係好好好味,高水準之作。「菠蘿生炒骨」以新鮮菠蘿作材料,當然唔系乜嘢新意,但有樣嘢叫誠意。對我而言,生炒骨上粉不厚均勻,酸甜度適中就合格了,這件生炒骨入口微脆,不會太肥,吃到肉排的味

以新鮮菠蘿作材料,當然唔系乜嘢新意,但有樣嘢叫誠意。

對我而言,生炒骨上粉不厚均勻,酸甜度適中就合格了,這件生炒骨入口微脆,不會太肥,吃到肉排的味道,

沒有被醬汁蓋過,絕對合格有餘了。

做法如雙面黃,將新鮮生麵煎至金黃,最難得是沒有溢油,口感特別鬆脆,就算吾加肉絲都好好吃,

加上雞絲令佢到咗另一個層次而巳。

湯圓細細粒,粉團軟綿綿,麻蓉香就爭咗啲,薑湯應該再重薑味啲就好啦。
