鱈場蟹鐵板燒 $2288 / 二人餐前沙律蕃茄 + Frisse + 羅馬生菜 + 芥末沙律汁 = 清爽開胃汁煮白鱈魚師傅一開始先處理洋蔥,因為洋蔥要煮至焦糖化需時較耐。之後略煎魚的表面,再用鐵板鑊鏟將魚皮切下,個別將魚皮煎香。完成煎香魚皮後,再將已略煎表面的白鱈魚放回洋蔥湯汁內煮熟。魚肉本身的鮮味,再加上洋蔥被煮出的甜味…… Wow 煎香的魚皮睇得又食得,香脆可口。清酒焗鱈場蟹蟹肉本身帶有一點點海水鹹香,以清酒焗煮,令鮮味更加提升。奶油煮白蘆筍忌廉汁充分帶出白蘆筍的鮮甜。熊本縣 A5 王牛高級牛肉, Less is more, 完全唔需要複雜的香料或任何醃製,師傅將牛肉表面煎至微焦,封鎖肉汁。Medium 剛剛好。配合一點點岩鹽, Perfect! 伴碟茄子、南瓜、Portobello, 極端新鮮,全部食原汁原味最好。蟹膏炒飯炒飯粒粒分明,帶有蛋香及蟹膏鹹香。作為飯桶的我,如果份量再多一點會更好。清酒雞湯鮮味! 但喜歡濃味的我還是覺得有一點點淡口。柚子雪葩有柚子皮增加口感。好食!
