扺食街坊食堂,已經嚟過好多次,今日老闆教識我食雲吞雞煲嘅程序:千祈唔好等嗰煲停止噴泡攤凍啲先食,啲雞肉會變老。因為佢啲雞係由室溫放入滾煲,所以佢攞出嚟上枱嗰陣時就要即刻食。其時雞肉溫度其實唔會好熱,暖暖地,但係就保留到佢精心製作嘅嫩滑度。等嗰煲停止噴泡攤凍啲先食雞肉,一來會老左,二來溫度反而更高,更辣嘴。長知識~ continue reading

主打食牛既粉麵店香港都有唔少,但主打食豬既就好似真係比較少見,今日早餐就黎左呢間咁特別既舖頭試下!佢有各式各樣既早餐提供,不過我今日就叫左主餐牌上面既雙併粉麵(唔跟飲品)⭐蝴蝶腩併果皮炆豬肺銀針粉 $40出餐時店員就咁望碗粉係見唔到有豬肺,專登問廚房係咪有,都幾盡責👍原來豬肺沉左落條菜下面,而且份量都幾足,有成四件咁多👍第一啖食舊豬肺食到好突出好香既果皮味😋完全無內臟既腥味,口感輕微彈牙得黎帶D空氣感,都幾得意😂蝴蝶腩食落真係好似牛腩但就無左牛果陣羶味,對於唔食牛/對牛敏感既人黎講係非常好既代替品👍肉質係一絲絲既,有啲淋D有啲韌D~銀針粉正常湯底偏濃味食完都幾口渴🙈個人認為豬肺反而有驚喜過蝴蝶腩😅如果有下次應該會試埋黑椒豬脆軟骨同豬什😁 continue reading

好耐之前食過一次源發蝴蝶腩河粉後,已經念念不忘。 似乎暫時未見到其他地方有賣蝴蝶腩,而呢間餐廳粉麵暫時來講都係首選。今次都係例牌叫左一碗清湯蝴蝶腩河粉加配餃子。腩肉味道食落其實好似牛腩,肉質一絲絲咁。 外觀上來睇好似牛腩,而腩肉間中會有少少地方帶肥膏。 另外,味道咸味中帶少少甜。 當然,仲有其他食物都好食,不過每次我都只會食蝴蝶腩。 有幾次都無得食,因為蝴蝶腩其實近豬肺部位,貨源有時不穩定。 鋪頭環境不算大,有時需要同人搭枱。尤其午飯時間,可能要輪後一段時間。 continue reading

終於搵到源發!! 以前係九龍灣由細食到大,直到佢搬左去牛頭角,就無食。今晚行過牛頭角,順便去探一探呢間街坊茶餐廳!! 個餐牌精緻左好d, 不過仍然好似以前咁多款式! 我地就叫左湯飯,一個粟米肉碎湯飯同一個蕃茄肉碎湯飯。等左大概五分鐘就有得食。湯飯仍舊大大碗,仍舊美味。三四十蚊一碗,食到飽都未食完碗湯飯,茶餐廳黎講算係唔錯! continue reading

自牛下拆御後,從前邨內的老食店就紛紛在附近周圍找地方入舖繼續經營。這一間"源發",好像便是其中之一員....記得這店仍在牛下之時小弟也幫襯過,吃後好像也沒有留下甚麼深刻印象。不過始終已是許多年前之事了,沒記起,好像也是挺正常....蝴蝶腩是這裡的招牌。來得吃,自然是必點,更難得是可以配搭銀針粉吃。這個,我從小就愛吃的了....滿滿一大碗粉端到面前。滿心期待的夾起一件蝴蝶腩放入口,卻赫然發現是極之難咬得到,心裡暗罵 : "這跟本和吃橡膠沒有分別"....咬到幾口,牙骹也累了,最後決定棄械投降....不忿氣,再夾起另一件試....結果仍是一樣。最後變成只吃碗內剩下的銀針粉及芽菜....至於湯底,還是以人工後加調味為主....喝了一口,就落荒而逃....後加的小食炸雲吞,炸得非常油膩;餡料就只咬到一只沒有甚麼鮮味的小蝦。唯一的好,是新鮮熱辣弄起的,放入口差點就將嘴燙熟。邊食邊想 : "老字號,並不表示一定是好....之前巳碰過不少釘,現在還不知悔改 ?"..... continue reading
