你問我現在仲有沒有拉麵熱潮? 我不太敢說沒有,因為香港的拉麵店,的確是越開越多,而且能繼續盛放的,都是一些有名氣,有水準,及有心去為拉麵而努力的大大小小拉麵店。回想起兩年幾前,仍在銅鑼灣上班的我已經對當時新開的過江龍拉麵店《蔦》有興趣。可是,因為經常覺得這店很近,而且有人龍,總是覺得大把機會去試。時間過去了,我亦已經轉職在沙田工作,與《蔦》無緣了嗎?非也,因為我仍是會因為上 CPD 及約朋友食飯等原因而出現在銅鑼灣,而是日就是一個上完堂的下午,我專程來《蔦》(日語發音: Tsuta "啜它")。初開張時,總是有一條人龍在外,而要排隊的原因就是店子不大。是日,因為已經過了食飯時間而沒有人排隊,而且一個人進入,好容易就安排到位置。我又再坐上拉麵吧檯,可以欣賞拉麵師父煮麵啦。安頓好自己了,就看看有什麼好食了。而就在面前,有新口味拉都啊。鴨肉拉麵啊,仲要係用鴨骨架煮的濃湯。很是吸引啊。我已經二話不說了,指定要食這一個麵。我點的是鴨味玉拉麵,鴨肉叉燒就是鴨胸肉。雖然,沒有皮,入口依然有鴨肉那一層香鴨油味。再濃香的,就是那一個充滿鴨精華的濃湯底,那鴨油的羶香,食過燒鴨、填鴨、煙鴨既都知,這香味,很

初開張時,總是有一條人龍在外,而要排隊的原因就是店子不大。是日,因為已經過了食飯時間而沒有人排隊,而且一個人進入,好容易就安排到位置。我又再坐上拉麵吧檯,可以欣賞拉麵師父煮麵啦。

我點的是鴨味玉拉麵,鴨肉叉燒就是鴨胸肉。雖然,沒有皮,入口依然有鴨肉那一層香鴨油味。再濃香的,就是那一個充滿鴨精華的濃湯底,那鴨油的羶香,食過燒鴨、填鴨、煙鴨既都知,這香味,很是吸引的。

麵條,很幼身,他們做得又夠爽口。夾著湯汁一起吃入口,更顯得出其鴨味濃郁。我 "啜啜" 聲,就把美妙的麵條,連配菜,連麵湯一起吃過、飲過清光。

《蔦》這一個鴨麵,非常之好味。吃清光這鴨麵之後,我不禁要大叫一聲 Oishi! 也體會到,這間在日本得到米芝連加許的店,不簡單。

麻辣豚骨湯底 - 味玉叉燒拉麵
叫咗個豚骨拉麵,加埋麻辣湯底,組合夠哂新鮮。同行有三位友人,無不叫招牌的雞湯拉麵,但此味一上枱,眼球及鼻頭都因佢嘅香味同賣相吸引住。賣相望多兩眼會有啲似檐擔麵,有肉碎香蔥。食落就大不同了,麻味相當足,貼心店家仲準備咗另送一碟的花椒,俾你唔夠再自行加落麵中;辣味適中偏辣,相當於平常中辣多少少,啱哂嗜辣嘅我。

叉燒為薄切,適合配上油脂感較多嘅湯頭,肉味亦濃,唔會被辣湯蓋過,四片唔多唔少,但大食啲嘅朋友應該會想要多幾片,可自己看著辦加錢加肉,我覺得份量算係咁。流心蛋做得相當不錯,一咬開即流,蛋味亦濃郁,日本蛋無誤,亦正好間住麵湯,食時配餸。麵條還好,無得揀自己鍾意爽淋程度,令到此麵有點主次不均,麵條唔算差,但湯底就好似漆黑中嘅螢火蟲一樣,點都收唔埋。(哈,星爺fans懂的。)

日式炸雞
呢道小食不得不提!比我預期嘅好食,同坊間食專做炸雞嘅鋪頭比起有過之而不及。青檸汁附送解油膩,雖然我食嘅拉麵幾油下,配呢味都有點怕怕,但炸得香脆,食埋炸雞皮都無乜罪疚感,因為太香口,太好食了!好少可喺香港食雞食得咁滋味,「小二~俾多份丫」,不知幾想咁講…

可惜可惜,一間好嘅拉麵鋪又點少得好嘅餃子同冰凍啤酒,但係反而餃子真係麻麻哋。有點唔湯唔水,無增胃口,反而油掛在餃上,一入口嘅係油味,而且上碟時已見穿餡,賣相麻麻。不建議叫。

蔦,桑寄生的古名,如同鳥寄生於木取名。希望此品牌如名,鳥只是寄居,雞湯只是打響名號的頭炮,繼續推陳出新將美味擴至更多食材。好味,朕會間唔時再嚟check check佢。(又一電視劇梗…懶好笑)

今天一個人食午餐,很想吃拉麵,去到銅鑼灣這條街,最多各式拉麵選擇,被門口海報吸引,進去點了,湯底是用蜆和雞造成的,騰騰的拉麵端上來了,先試一口湯是食拉麵的定律,果然,很有蜆的鮮甜味,叉燒是火炙過的,很香口很軟滑,最有驚喜是溏心蛋,香甜豉油浸得很入味,蛋黃 Creamy香滑。叉燒上面有黑松露醬,松露醬混和在湯裏面,湯便變成祇有黑松露味,這點可能店家未有留意到。總括來說,這碗米芝蓮一星拉麵,名不虛傳,有心之作。

吃拉麵第一時間一定是喝湯底
豚骨湯有些不夠豚骨味,湯亦比較少,可能太多麵吸了湯底的原因
拉麵是幼麵,本身一上碟的時候已經軟身,後來愈浸愈耐,更加軟
普遍香港人較看吃硬身麵

一間拉麵店好少會得到米芝蓮嘅垂青,所以一直都好想嚟呢間米芝蓮拉麵試下。咁啱佢而家做緊優惠 ,終於有機會啦今次。我嗌咗黑醬味玉叉燒拉麵,黑醬我諗即係黑蒜油啦。個湯飲落去其實個黑蒜味唔係好出,有一種淡淡嘅豬骨味,畀我嘅感覺係佢唔太鹹,但係飲落去好濃,亦都好油。老實講我唔太鍾意個湯。麵質嚟講,因為佢係幼面,所以相對哋冇咁彈牙。叉燒佢就有四塊,分量好足,而且唔太肥,係我鍾意嗰隻。值得一讚嘅係佢嘅溏心蛋,好少香港嘅拉麵店會做到好似日本嗰隻咁,依間拉麵店就做到啦,值得一讚。

收工翻屋企之前肚餓得頂唔順,放棄去買菜翻屋企自己煮,直接去咗最近嘅拉麵店食嘢醫肚。進來點咗一碗醬油叉燒拉麵。湯汁非常d清甜,好清爽一d都唔油膩。一碗有好多片叉燒,肉質柔軟吸滿湯汁,加埋彈牙嘅拉麵勁好食!快速就搞掂一碗拉麵,食完先發覺呢度喺米芝連一星拉麵店,宜且店裡邊好乾淨,氛圍好好。

晚飯時間係銅鑼灣拉麵街,見到有間米之蓮就入黎試試。裏面幾日式,但係放餐具個位又好中式,不過都算有特式嘅。叉燒拉麵,湯未算好濃,但同叉燒好夾。叉燒薄切,好腍,易咬斷,但麵未算好日式,唔識講,可能太韌?鴨肉叉燒拉麵,貌似相當特別,仲有啲調味係上面,又有啲沙律菜,係拉麵黎講算係好新穎,因為通常放紫菜咖嘛。湯底十分濃郁,但同上面個麵一樣偏韌,然後舊肉更韌,一食就全舊食落似鴨胸,即時有啲打折扣,或者口味問題,我覺得咁樣好容易一係得麵一係得鴨肉嘅感覺,夾唔埋...整體黎講稍貴,可能地區問題,同埋未好似米之蓮餐廳咁驚艷...
