燒鵝一定要夠熱,唔熱都要暖先合格,凍左就唔好食。皮要脆,鵝要有脂肪先夠香。天鴻的燒鵝,值得一試。千祈唔好諗住坐得舒服,好好環境,食燒味一定要好似圖中咁嘅格局先有風味自己一個人,整個上圧食下$135,下圧就食得多,上圧少食啲用手探一探,會有陣熱氣衝上手心,咁先為之合格如果冇呢陣熱氣呢,分數會大減碟鵝靚唔靚食個胸就知,皮脆,肉質鬆化,唔會過諗,鵝肉要有咬口先係上品最底下個層會有啲掌翼俾你,好夠味架,唔係燒嘅,你叫上下圧會俾啲你試下其實除左鵝胸、鵝翼係上圧之外,其他部位我都唔多識,好似話有鵝腩的,仲有舊鵝頸我冇食,唔多識食,啲老一輩話送酒一流,恕小弟唔識食仲有罐可樂$8 加埋都舊幾水但總結天鴻嘅燒鵝喺香港都算數一數二,值得一試 continue reading

朋友從英國回來,話好耐都冇食過好味嘅燒鵝,我就諗起元朗這間燒鵝名店天鴻,元朗西鐵站搭輕鐵一個站到大棠路下車步行7分左右就到,去到嘅時候是五點晚市燒鵝剛剛出爐香噴噴,店鋪不大裝修普通有點殘舊整體都算乾淨兩個人山長水遠嚟到元朗一次過食多啲先夠皮,點了燒鵝下裝一條叉燒同瀨粉燒鵝外皮非常香脆有種吃薯片的脆口感覺,肉質有彈性鵝味香鵝油滑,鵝骨充滿香料味道叉燒都有驚喜燶邊肥瘦適中,外皮糖膠燒到脆口肉質鬆軟瀨粉軟硬適中湯底夠味燒鵝名店果然名不虛傳,可惜元朗離屋企太遠,如果唔係可以經常幫襯 continue reading

今天坐西鐵去元朗逛逛,順便試試天鴻燒鵝,因為之前行完山,燒鵝沽清,未能品嚐,有點失望。可能平日關係,5點左右到來,店鋪只有買外賣的客人,堂食只有我們,我們叫了半隻燒鵝,鵝是微暖,師傅做到皮脆肉嫩,鵝肉甘香,好滑有汁,不(un),味道剛剛好,點梅醬也不錯。今天來的時候個心十五十六,山長水遠去不去試,看到食評麻麻,但試過後,我覺得不是食評説得那麼差,真心講系好食,除左師傅自家功夫手藝到家,其中一個更重要原因系,出爐不久即食,必定外皮脆卜卜,試問唔脆皮燒鵝邊個鐘意,所以燒鵝真系要趁熱食。另外,鵝底仲有一隻鵝翼,細細隻,(沒有潮州鵝翼那麼大),應該用白鹵水浸,鵝翼很滑。老闆都幾好人(食評話他幾有個性😅),因為問他某巴士站上車地點,剛巧有位應該是他的熟客,他們商討了一陣,最後熱情地教我們沿天橋行去西鐡站,代替乘巴士(因為巴士他們說要起碼一小時)。 continue reading

晨早隨攝影班老師到元朗影向日葵,返回市區也是上午十一時左右,山長水遠到來,不想這麼快便回港島,不如先吃午飯,下午才去游泳,因元朗泳池一時才開放,吃完還有時間休息。論元朗名店,不得不提天鴻燒鵝,數年前曾慕名而來吃過一次,但事隔多年,印象隨風而逝,個人喜吃燒鵝若狂,適逢路過,唔好錯過!店子小小,座位不多,店員著令我勿自坐一角,要與其他單身客同坐,理解!理解!看牆上價目,上次來時,留意到燒鵝髀飯是$91,現已加至$135,我只點了燒鵝飯,取價$56。燒鵝飯是一碗的,是翼位,顔色棗紅,有燒烤香味,皮薄而脆,肉質過得去,但缺少甘甜,飯給鵝油添了香味,雖然油膩,但愛吃!可惜的是燒鵝用了不少味精,飯後大半天仍感口渴,舌頭味蕾叫苦連天,真不明白,有如此好聲譽,怎麼還要靠味精,難道對自己的出品沒信心? continue reading
