由於我一個人,被安排坐在吧枱座位,侍應給了一杯半温的水,筷子是一次用木筷子,特别之處是筷子兩端都是削尖了,無論手握筷子任何方向,都可以下筷嚐菜。牙簽放在木製企身豬形牙簽筒。醬料用瓷器盛載,包括了豉油、七味粉及黑醋。

由於我坐吧枱位置,可以看到厨房之餘亦可以看到出菜位置。我肉眼看見厨房內有六至七位廚工,全部都是用粤語交談,我沒有點炸物小食,但眼見炸似乎賣相非常不錯,很多客人點選。侍應反應快但技巧未熟練,走來走去,日語一三一四歡迎詞不絕於耳。

多賀野的厨房運作我認為很像一燈,厨子視乎那一刻哪種麵款多客人點選,厨子就先做哪種,所以會見到出菜處一次過連續出五至六碗同款拉麵。這種做法可以提高效率,出品較快亦滿足大部份客人需要,但缺點是先到的客人未必先得到食品。我的豚鴨沾麵約等候了二十分鐘,栗國塩味拉麵則兩分鐘即到,兩碗麵我是分開兩次叫,非一坐低點菜就點齊兩款麵食。

先說極太沾麵麵條,麵條寬度約有2.5亳米(12番手),份量比我預期多,自家製冷沾麵有小麥粒,當沾上沾汁口內唇有點點麥香,但由於麵條有小麥粒,加上麵條未煮透仍帶硬,食時會感到有麵質有骨,建議麵條宜放在沾汁內多一點時間,那就更加美味,份量和口感我覺得滿意,掛汁度很高,吃得痛快。

沾汁亦是頗討好,沾汁濃郁亦帶有層次感,香港很多拉麵店製作出來的沾汁都可以不加湯直接飲用,這的沾汁較濃稠而非太咸,一定要加湯飲用。沾汁由豚鴨雞魚四種材料混合製成,每一種材料都已經獨當一面,多賀野成功是將四種材料混合為一,入口不錯之餘仍分得出四種肉類的味道。可惜的是沾汁內的鴨肉份量稀少,似乎只用來熬湯汁。

拉麵條是細麵條,寬長大約1.6厘米(18番手),自家製作質感較粗,麵條未算滑口。栗國海塩果然特别,淡淡的海水鹽味貫入口內,舌頭就像海中的鯨魚在暢泳,入口自然,感覺柔和,我整碗盬湯喝光,蛋筍叉燒紫菜只是閒角,不妨一試,較適合女仕,如像我大胃王,宜先吃塩味拉麵再吃豚鴨沾麵。

總體印象我認為香港這間分店只是給一點多賀野的印象,始終用香港代理去開店,只見到其外形,但不見其實在,製作一般服務一般,若衝動一點去日本總店再研究如何好食。香港店我會再計劃光顧多一次,看看塩味拉麵再加醬油味感會如何,還有炸和蟹餅,但價錢始終不是一般拉麵愛好者可以承擔。

我哋揀咗多賀野醬油拉麵 ($128) 同 3 款小食,據說醬油拉麵是餐廳嘅招牌作,配料除咗有三大塊叉燒外,還有一隻溏心蛋、筍、蔥同紫菜等。先嚐一口湯底,醬油味很濃,但濃得來不會好鹹,清澈又不油膩。拉麵每日於店內新鮮自家製作,咬下去相當煙韌,而且掛湯能力頗佳,細嚼慢嚥後更散發出陣陣麥香。叉燒味道唔錯,不但肥瘦均勻,而且入口有油脂香,如果可以稍加火炙,應該食味會更佳。溏心蛋亦很有水準,夠曬流心,蛋黃醬味道很濃,而且蛋白亦很滑。

至於自家製黑胡椒炸雞  ($52) 食味亦不俗,外層的炸衣看似很厚,但原來咬下去非常脆口,入面的雞肉很嫩滑,有肉汁,一點又不油膩。不過個人覺得最大嘅亮點就是伴吃的他他醬,入口帶黑椒的微辛,令炸雞倍添滋味。

日式煎餃子 ($58),餃子一碟有五隻,隻隻外形都好飽滿,外皮煎至金黃帶焦色。咬開可以清楚見到入面嘅餡料,菜多肉少,非常健康,正合我意。肉餡鮮嫩兼富肉汁,吃時建議蘸一點餃子汁,食落感覺會更加濕潤,好吃之餘,又更惹味。

總括來說,這間拉麵店環境不俗,由拉麵以至小食,味道也挺不錯,加上餐廳來頭不小,如果是繁忙時間到訪的話,相信排隊是免不了的。

話説最近新開既K11 Musea有間米芝蓮拉麵店進駐,仲要係連續4年獲得呢個殊榮,當然要去朝聖啦。去到環境好寬敞,最特別係如果係2個人而又被安排係卡位既位置的話,可以坐埋一邊,前面有扇可移動的窗,拉埋咁就同對面隔住,咁就唔怕同d唔識既人一齊坐咁尷尬啦。去得多賀野一定要叫佢個招牌多賀野醬油拉麵,湯底帶鹹香但無油。麵條口感煙韌, 吸收曬d湯汁, 鹼味唔重,帶淡淡麥香。另外仲叫左碟小食 - 炸雞,都要等一陣先上菜,不過證明係即炸。 即炸炸雞係無可能唔好食,外面脆,裏面雞肉又暖又嫩滑,一流。睇食評見到都有唔少差評,但其實食落都唔係咁差。

呢排成日流連尖沙咀,只因為尖沙咀開左K11 Musea內藏好多寶物~去左好多次但啲餐廳都試唔勻咁,咩國家嘅菜都有,當然唔少得日本拉麵啦!今次去到呢間日本東京嘅過江龍,仲係米芝蓮推介嚟~睇到餐牌最欣賞係佢地有齊沾麵同埋拉麵嘅選擇,咁就兩款嘅愛好者都可以嚟到享用啦!我鍾意沾麵所以就點左佢地熱門嘅豚鴨沾麵,湯麵分開~麵嘅部分特別q彈有嚼勁,湯嘅部分濃而不膩,蘸完之後都好掛湯!叉燒都好大片,特別鍾意佢肥瘦均稱,另外湯入面仲有肉粒添。溏心蛋都唔可以少,中間流心效果同漬到個味道都剛剛好!朋友鍾意拉麵就點左多賀野醬油拉麵,湯底醬油味恰到好處外,對比之下就清爽一點~麵條較幼身亦吸左湯嘅精華!

之前經過K11 Musea,勁多人排隊,一睇原來係多賀野。呢度出名當然係拉麵,開咗一排就過嚟試吓。呢度除咗拉麵,仲有鰻魚飯、沾麵等等。我當然要一試呢度嘅拉麵。叫咗醬油拉麵,呢度嘅湯底唔會好濃,係比較清淡嘅湯底;但係醬油味都幾香。拉麵係粗身直身,識落較硬。配料有糖心蛋,糖心蛋做得唔錯;而且仲有紫菜、筍等等,湯中帶點蒜蓉味。另外叫咗鹽味拉麵,鹽味拉麵相對地比醬油拉麵清少少,但係都有鹽香,亦都係唔係濃味嘅拉麵,所以食完之後唔會覺得好「濟」。拉麵質素尚算唔錯。另外仲叫咗炸蟹肉薯餅,炸得香口,幾好食。

粟國塩味沾麵
我同朋友都比較中意沾麵, 麵條較粗身, 掛湯能力都高d, 點上沾汁再吸入口, 正! 第一眼見沾汁較稀身驚味淡, 但食落味道都係好濃郁, 完全唔會覺得咸, 食完亦無好口渴
多賀野既特別之處係可以幫食沾麵既客人免費加熱個湯同埋加湯, 不過所加既湯係清湯, 大家可以食完個麵尚有沾汁既時候加上清湯飲埋佢架
我地都加左1次熱同加左1次湯, 店員都亦好有禮貌, 服務唔錯。
