話說我想試Omakase好耐,今日終於有人帶我去啦!呢間「鮨㐂」真係連個名都唔識讀呀!原來讀「之喜」,個「㐂」字都係有喜樂的意思。簡潔裝潢以木器為主,感覺舒適!全間餐廳都好靜,好優雅既感覺。除了一間穩秘房間,所有座位圍著中間的壽司桌而坐。午餐定食都有幾多選擇,即使是Omakase也有6/9/12/15/18件壽司可選($338-738),另外仲有個$980的廚師發板餐。我們揀左個九件壽司Omakase($438),前菜係沙律同冬瓜,個冬瓜軟軟的暖暖的,加左「門鱔真子」(我都唔知咩黎)的茨汁,唔錯!然後沙律有菜、粟米粒,仲有個抽乾水的菇,脆卜卜,仲有粒剥左皮而且好甜的車厘茄。前菜之後有蟹肉蒸蛋,呢個真係好好味!蛋蒸得非常滑,每一啖都充滿蟹的香味,除了食到有蟹肉絲仲有蟹膏,好正!面頭有幾條蘿蔔苗,食落有少少甘味,令到整體的口感層次更豐富。跟住終於開始食壽司啦!首先有帶子壽司,件帶子都幾大,好鮮甜!由於呢度用醬醋飯,即係飯本身已落鼓油,食既時候唔需要再點啦。第二件係深海池魚,十分有口感,而且香青檸味好清新。平時好少機會睇住師傅整一舊壽司出來,呢度就可以,感覺味道更出色!能夠邊食邊同師傅交流,就是食Omakase的特色!之後到赤貝,爽得黎又有點黏口,很鮮味!第四款是火炙金目鯛,紅色的魚皮令賣相更靚,唔知點解我想起東升斑!火炙過的魚肉是幾特別的!第五款是平政魚,師傅說是油甘魚科但佢無咁油,我好似未聽過呢種魚,識落有啲柚子香味,原來係面頭加左有少少柚子胡椒,魚質彈牙爽口且魚味濃!幾特別。跟住是赤鯥,都是火灸過的,好香既燒味!第七款是甜蝦醬油漬,我本身好鍾意食甜蝦,但好少食甜蝦壽司,有三隻咁多,醬油味唔濃。尾二是毛蟹海膽壽司,我嘩左出黎!因為太開心有呢個食,份量不少的馬糞海膽加上蟹肉拆絲,鮮味十足,好鮮甜好正!壓軸就是中拖羅,唔知點解呢舊特別食到飯既醬汁味,口感豐富、魚質滑嫩,好得!食完九件壽司後仲有魚湯,原來係用多款魚淆成,所以相當鮮甜,店員解釋因爲有些魚的部分不能做刺身,例如魚鮫,所以物盡其用用來淆湯!裡面仲真係有舊魚肉呢!午餐還包一杯雪糕或咖啡,見人地杯咖啡細細的似expresso,我揀左雪糕,曲奇味,正!非常滿足的一餐呀!P.S.抱歉今日D相唔知做咩倒調哂 continue reading

近日朋友愛上了食日本野,就介紹左一間銅鑼灣的日本餐廳給我,呢個朋友食開好野,唔係都唔會介紹比人,這間餐廳便是鮨㐂。一來到已看到整個餐廳以簡潔的裝潢作本,開放式廚房,讓客人師傅可以作簡單的交流外,更可欣賞到師傅純熟細膩的刀工。這次我們便選擇了廚師發辦 九件壽司定食($438)。當中已附前菜、沙律、季節茶碗蒸、鯛魚濃沙湯及甜品。蕃茄啫哩質感滑嘟嘟而清甜,配上海膽更顯其鮮味。爽脆的沙律加入黑加侖子汁的車厘茄,以及風乾了的香脆冬菇,令平平無奇的沙律變得色彩繽紛,味道更豐富。蟹肉茶碗蒸,入口嫩滑鮮甜。壽司九貫小白蝦壽司白蝦細細隻,膠質重,且入口嫩滑鮮甜。右口魚壽司刺肉質有少少結實,味道清爽,加上了少少葱碎更能帶出魚的鮮味帶子壽司鮮甜豐厚,掃上豉油後,更顯爽滑鮮甜。深海池魚壽司肉質更結實、非常爽口、魚味濃郁。剝皮魚+魚肝壽司剝皮魚肉質爽彈帶點韌性、味道鮮甜;魚肝味道濃郁,口感細滑;夾在一起吃油而不膩,原本較為膩口的魚肝與清爽的剝皮魚正好配成一對。池魚壽司魚味濃,肉質爽口。赤鯥壽司經過火炙後,把魚油逼出,油香四溢,赤鯥肉質柔軟,香味十足。海膽壽司入口清甜、質感幼滑,味道濃厚。拖羅壽司油脂分佈均勻,魚味濃郁,油香在口腔內良久不散。熱辣辣的鯛魚濃湯,味道鮮甜濃郁(重點是全無腥味)。甜品 - 咖啡/雪糕開心果雪糕中粒粒果肉,口感順滑,甜度適中,亦為這次廚師發辦作一個完美的句號。 continue reading

坐在吧檯可以一邊近距離欣賞廚師們的刀工,一邊品嚐新鮮的手握壽司。每件壽司皆根據食材特性作個別調味,連豉油也不用蘸,便可直接吃。選了壽司發辦 九件壽司定食 ($438)沙律及前菜車厘茄用了黑加侖子汁浸,辟走原有的味道,入口充滿著黑加侖子味。沙律爽脆,風乾冬菇乾十分香脆,甜中帶咸,咸中又帶鮮,味道豐富而不雜膩,非常醒胃。前菜是海膽蕃茄啫喱;蕃茄啫喱味道清甜,質感滑溜順喉,配搭肥厚味濃的海膽,兩者互相輝映,十分開胃。蟹肉茶碗蒸蟹肉份量多,味道非常鮮甜,入口即化,滑不溜口。白蝦壽司有黏黏的口感,膠質重,富有彈性,加上青檸汁,味道清新。右口魚壽司肉質結實,爽脆富質感,清新不膩口帶子壽司帶子豐厚富彈性,口感豐腴,味道鮮美。深海池魚壽司肉質爽口,魚味突出、配上清爽的青檸汁更開胃。剝皮魚+魚肝壽司魚肝味道濃郁,口感細滑;加上蔥花一起吃十分香口而不油膩。池魚壽司魚味濃郁,入口質感爽脆,透着淡淡的鮮甜,清新可口。赤鯥壽司經火灸後,逼出魚油,入口便吃到濃郁魚油香,美味可口。海膽壽司海膽份量勁人,鮮甜柔滑,質感細膩,入口即溶。大拖羅壽司肉質鮮嫩軟腍丶油潤柔滑丶甘香鬆化。鯛魚濃湯熱騰騰的魚湯香氣誘人,味道鮮濃,豐美馥郁。可選甜品/咖啡甜品是開心果雪糕,當然選擇雪糕,正為一頓豐富的壽司午餐畫下完美句號!開心果味濃郁芳香,甜度適中,口感綿密幼滑,加上粒粒開心果碎,口感豐富。 continue reading

約了靚靚食神吃午飯,大家都喜歡日本菜,尤其是壽司,決定去吃廚師發辦壽司,靚靚建議去這家日本料理,因曾在這裡吃Omakase 。鮨㐂的廚師發板壽司定食有 $338 (6件) / $ 438 (9件) / $738 (18件),我們選了9件的定食 , 包括壽司、沙律、前菜、蒸蛋、湯、甜品。沙律 ~蔬菜加帶菌香的脱水冬菇,伴酸汁,清爽開胃。蕃茄、石榴籽配青瓜、生菜 鮮紅嫩綠,十分養眼!前菜 - 鱧魚冬瓜~鱧魚與冬瓜和蓴菜很配合,清、鮮、滑!蒸蛋~加了粟米汁的蒸蛋,份外香滑! 伴紫芽、粟米粒、蘿蔔苖,精緻又美味!帶子鮮甜有彈性,表面掃了日本醬油,赤醋飯壽司很美味!白蝦包含了多隻小白蝦,鮮嫩而爽滑!豐厚的北寄貝,輕炙過,香味和鮮甜更提升! _慢煮金目鯛,帶出了魚香,紅色的魚皮軟滑而柔韌,,加了大葱,更香甜!深海池魚是我的至愛,滑溜爽甜,銀白色的魚皮,特别香滑。火炙過的赤鯥魚 ,魚油香更明顯,魚皮烟韌彈牙!池魚鮮甜爽滑!北海道馬糞海膽來貨時以鹽水保鮮,不加防腐劑,所以特別新鮮清甜 ,冰涼、軟滑像雪糕,非常美味!中拖羅有魚味濃郁,魚肉細嫩!魚湯~吃完壽司,喝碗清甜的鮮魚湯,暖胃又滿足!甜品- 豆腐雪糕~雪糕香滑,豆味十分濃郁! continue reading

今日下午約左C食lunch, 我們都想食壽司,結果我帶左C來吃厨司發辦壽司定食。 這裏的廚師發板壽司定食由六件$338至18件$738, 最後我們揀了壽司定食9件$438, 除了壽司,還有沙律,前菜,蒸蛋,湯和甜品。沙律/前菜沙律~有剝咗皮嘅蕃茄,脫水冬菇,青瓜片,石榴籽,車厘蘿蔔,少少生菜再加上沙律汁配酸汁,酸酸甜甜好開胃前菜~鱧魚冬瓜,鱧魚好爽滑,加上冬瓜,旬菜好滋味蛋漿加入粟米汁令香滑的蒸蛋更清甜,配上日本甜,粟米粒,蘿蔔苗和紫芽,令這個蒸蛋更清新帶子表面已掃上日本豉油,爽滑鮮甜,配赤醋飯,美味白蝦由二,三十隻幼小白蝦組成,非常嫩滑鮮甜輕輕火炙過的北寄貝,第一次吃,腍中帶爽甜,好好味!頗有驚喜慢煑金目鯛魚味甚濃,肉質嫩滑,加少少葱碎更能帶出魚的鮮味深海深魚非常爽口,魚味濃郁火炙過的赤鯥魚魚油濃郁,肉質柔軟池魚味清,肉質爽口北海道馬糞海膽來貨時用鹽水浸着,完全沒加防腐劑,所以特別清甜 ,滑如雪糕,好好味嘅呢中拖羅油脂分佈均勻,魚味濃郁食完壽司再飲埋碗清甜的魚湯,好舒服最後食埋豆腐雪糕就非常滿足,豆腐雪糕有濃濃的豆漿香味,正呀 continue reading
