有一段時間沒有同太太去食廚師發辨了,發覺香港原來都有好多廚師發辩,但好食就唔算多,去到一間性價比都不錯既地方,Sushi N有不同既餐牌,今次揀了set N。【先付三品】自家製豆腐,口感滑溜豆味香濃,加了香甜南瓜汁,配合得不錯。黑梅貝頭部清甜帶嚼口,尾部甘香黏口,齒頰留香。嶡菜番茄其色澤鮮艷,飄香四溢,味道宜人。【旬之牡蠣】華槤蠔外殼和肉呈微微的金黃色,體型細小,但肉身厚肥美結實食落口感比一般生蠔獨特,鮮甜味突出。【甜蝦他他】甜蝦又是蝦子界裡面最甜味的蝦,加了少少岩鹽同柚子皮,蝦味突出甜美,之後可以再加上鱈魚片一起食。【劍魚腩】肉白略帶漂亮的淡紅色,肉質柔軟脂肪多,表面再加了少許烏魚子,有淡淡的魚卵香氣,品嚐後齒頰留香。【和牛の塩燒】A4和牛肉質濃香, 厚燒特別有嚼勁, 試原味非常香郁,之後可沾岩鹽或芥末籽,有另一番風味。【赤身】蛋黃漬的晶瑩剔透,味道像鹹蛋般鹹,配上脂肪最少,魚味最濃的赤身,底部加埋紫蘇葉一起食絕配。【煙燻銀鱈魚】揭開罩時冒出陣陣白色煙霧,超迷幻,嫩滑魚肉,味道有淡淡煙燻香,味道不錯。【白粟米】粟米粒呈象牙白色、皮薄豐潤,口感甜度適中,風味獨特。【石垣鯛】魚味濃,油脂豐富,再加少少的柚子胡椒來平衡魚脂,肉質味道十分淡,質感較為紮實。【池魚】清爽口感,又帶有豐厚的油脂,魚肉味道偏甘甜。【超拖羅】脂肪分佈好像雪花般,富天然魚油脂的甘香,表面加了少許芥末籽,令壽司提升精華味道濃郁。【雲丹手卷】手卷飯少真係好值得食,海膽鮮甜仲大量放左係壽司飯上。【鯛魚湯】熱辣辣魚湯,香濃又甜厚,飲完之後可立即暖胃。這個值得一讚。【甜品】海鹽雪糕:夏天想食雪糕消暑,在這間店的人氣是海鹽雪糕,滲透著溫和的海鹽鹹味,整體味道十分香濃。抹茶嶡餅:風味清涼、淡雅、絀撲,充滿嚼勁的口感,卻又自然而然地融化於口。 continue reading

出咗bonus 要慶祝一下,當然要食好嘢,見到Sushi N有全日omakase $698一位再加一,性價比不錯,決定帶朋友嚟試。前菜沙律酸甜開胃。茶碗蒸蒸蛋嫩滑,除了三文魚子,還有冬菇,蟹柳絲等。蠔來自岩手縣,好大又肥美,肉質爽滑。刺身兩品甜蝦他他,甜蝦蓉加上岩鹽及菊花做調味,口感綿密配香脆鱈魚片食。然後間八魚刺身,配特製松露酸汁,加上啲紫蘇花一齊食。和食吉列大蝦熱辣辣,大蝦肉質爽口。個蝦頭炸得非常香脆,蘸d自家製蕃茄醬一齊食,好味。壽司五貫蜜柑鯛壽司,散發淡淡蜜柑香氣。黑鯥魚壽司,火炙後甘香,配上三星漬。伊佐木壽司,配柚子胡椒,味道清新。北海道鮫鰈魚壽司加上魚裙邊,經火炙,好肥美嘅感覺。雲丹北海道紫海膽軍艦,紫海膽creamy味道細膩。鮑魚清酒煮鮑魚壽司,鮑魚好腍鮮味。拖羅中拖羅,好肥美,油香十足,大滿足。壽司五貫嘅最後一貫,火炙銀鱈魚配炸京蔥絲,魚味加上魚油香濃。和牛海膽卷師傅火炙和牛放上壽司卷上面,然後再放上海膽,好吸引。和牛融化再配上香滑海膽,正。吸物面豉湯裡面有豆腐昆布還有蜆肉。海鹽雪糕最後甜品,海鹽雪糕微咸的海鹽味,幾特別。 continue reading
