(鮨月)位於灣仔區的日、月、星街群中,此處可謂屬於灣仔人的小soho,也是商務人士談笑風生的聚腳點。Omakase廚師發板,追求當下時令品味,享受海鮮食材最raw & fresh的味道。真鯛薄切,粉紅鮮嫩,紙般薄;Q版炸沢蟹、惟炸蟹榖偏硬,容易界損口腔,吃時需特別小心。日本熊本縣直送溫室蕃茄,比一般蕃茄味道更清爽,無苦澀。厚岸蠔,冬季限定的北海道厚岸蠔肉身雪白,肥美鮮甜得不像話。海螺,原隻剝開,肉質爽彈,配自家製即磨新鮮山葵。赤身拼中拖羅, 赤身鮮甜味美,中拖羅肥美無筋,入口溶化。厚切,更能帶出層次感。主菜奉上後,廚師準備五款tonight exclusive壽司。海葡萄、北海道海膽、赤蝦壽司,海膽有淡淡的海水味,赤蝦粉嫩透紅、鮮甜,不用咀嚼也能直接吞下,感覺似食生蠔一樣,整顆吞下,滑溜順喉,肉汁在口中爆發。大拖羅壽司,拖羅魚油豐腴甘香,溶而化。垂涎三尺,極上享受。金目鯛壽司,魚皮是粉嫩紅色,非常令身, 充滿光澤,魚質鮮嫩。鰈魚壽司, 鰈魚邊位置,肉質較爽彈飽滿,紋理清晰,紅白相間。燒白鱔,肉質爽彈,非常新鮮,滴兩下檸檬汁,鮮香更出。明太子泡菜烏冬,明太子伴入紫菜,是一道相當正宗的和食,使我肚滿腸肥。日本熊本縣草莓,超市動軌一顆十數元。特秀的等級,當然聞起有濃濃果香,咬下汁漏爆瀉。 continue reading

今晚個仔為我興祝生日,特意帶我嚟到灣仔月街,(鮨月)食日本菜原來是食廚師發板,吃完一款再上一款,等我哋慢慢品嚐由日本直送新鮮的食材,這餐廳設計帶有日本風,坐得好舒服,我覺得這價錢都不算太貴,可以舒服地享受到這高質的美食,同廚師精心的安排,十分超值。今晚第一道刺身,賣相已經十分有氣勢,有真鯛刺身、沢蟹仔、蕃茄,炸沢蟹好香脆,另外廚師刀工好厲害,切到透光度像玻璃一樣,好新鮮,肉質好鮮甜。海螺,原隻開出,厚度適中,爽口,鮮味十足,非常有咬口。赤身,厚切的赤身,新鮮,味道濃郁。中拖羅,肥美無筋,入口溶化。 兩者食落口,魚油的香,都有不同的味道,超極上的感覺厚岸蠔,奶白色,新鮮肥美,還有少許淡淡的海水味,一點也不腥,加埋海葡萄在面上,食在口還帶動到味蕾回甘香的口感。海膽赤蝦壽司,海膽味道帶有少許海水咸味,再配上肉質鮮嫩的赤蝦,好有層次感。大拖羅壽司,特別喜歡吃大拖羅 因為入口即溶,魚油好甘香。鰈魚壽司,壽司面再加上鰈魚邊煙煙靭靭,口感不錯。金目雕,魚質爽口鮮甜。以上就係廚師,精心炮製的五款壽司,每一款都各有特色。燒白鱔,(厚切)皮脆肉嫩,肉質好彈牙,好香口。雞肉棒,加上醬汁,好好味。日本直送草莓,新鮮香甜,食埋這一餐便可畫上句號了。 continue reading

今日黎呢度食OMAKASE, 價錢唔算太貴, 有分960.1280我地揀左960 個SET小試牛刀~首先有櫻花蝦鮟鱇魚肝 配鱸魚刺身重有只即捕即炸蟹仔~~~~ 好殘忍呀!食食下, 光師傅羅左好得意既冰頭漬(三文魚鼻頭軟骨)出黎畀我地試~第一次食, 好好味, 好爽口~跟住有北海道厚岸蠔, 超鮮甜, 好厚肉, 同埋師傅已片起左, 唔會痴住殼吸唔起.XDD同粒貝刺身, 呢個冇特別, 因為係唔會出事既野~中TORO 同赤身~~~正呀!唔會出事~胡椒點綴曹以壽司 第一次食呢個魚, 未聽過TIM~ 呢個魚應該淡味D, 因為個胡樣搶哂個味~花鯛魚壽司 好鮮味~鰈魚 鰈魚邊壽司, 我最愛既肥美魚呀!!! 不過呢個都未夠肥美, 但都好香呀!海葡 根室海膽萄赤蝦  壽司 呢舊野好勁呀, 好有層次, 但食落又幾夾~ 好有口感又夠哂鮮甜!!最後就係大TORO 壽司喇~~ 入口即溶, 唔夠喉呀!食完生野, E家食熟野喇~軟骨餃子, 呢個好有咬口, 又新鮮炸起~雞肉捧 功夫作, 好味~燒白鱔 唔係我杯茶黎, 不過我都試左一小舊, 好在我個小舊冇細骨咋~櫻花蝦什菜天婦羅, 呢個好特別, 同平時食開既唔係好同, 不過我食到呢度其實已好飽~明太子泡菜烏冬 上埋呢碟....SORRY 佢係好味既, 超惹味, 少少辣, 但我地已食到勁飽..真係隊唔落肚喇~最後上埋湯同甜品, 好完滿~~~平時我多數都係去相熟壽司店食, 因為始終貴, 唔知水準唔敢食, 呢間都係有FD 介紹食過OK 先黎~有時去高級壽司店, 都會驚好COOL 失禮人唔敢亂問野呀, 問魚名咁~不過呢度我雖然第一次黎, 但又唔會有咁既感覺!整體都唔錯, 同埋店仔細細, 雖然得一位師傅, 有位妹妹學廚, 而店內有兩位待應妹妹都好FUNNY~成店既氣氛好好, 無論係店員定師傅都同我地好多互動~ continue reading

朋友試過鮨月大讚,搞到我一直心思思 好想去試下。適逢踏入秋季,正好試試主廚會如何發揮時令食材,present一頓代表秋天的料理。第一個食3味拼盤。赤羽太刺身,這個魚都係第一次接觸。魚肉本身味淡,非常薄和軟,和羽毛都有幾分相似。另外有來自青森縣的河蟹,5分鐘前牠們仲係bar 枱上爬緊,然後被炸得脆卜卜。外表鹹鹹的,雖然沒有什麼蟹肉,但都有d蟹膏味。還有小食鱈魚脆片,係鱈魚乾的味,但烤到好似酥皮,配酒一流。熱氣完就可以試試厚岸蠔,上面有okinawa 海葡萄,廚師稍微用檸檬汁調味。肉質爽脆而味道淡,因為大隻而回味時間長d,口裏留有礦物味。跟住的秋刀魚刺身,看似普通魚種,但絕對深印象過蠔。銀色皮閃令令到金屬一樣。魚肉脂肪含量高,同大拖羅一樣顏色,無普通燒秋刀魚的苦味。然後有兩款吞拿魚赤身,不過都係當造的秋刀魚回味。結果焦點放在新鮮磨的washabi上,可以就咁食。到壽司有鰈魚、石首、大拖羅和海膽,由淡味到濃味,每款都有額外調味,更加凸顯每款海鮮的特點。轉到熱食,先有烤醬油秋葵。吉列金星豚鬆軟,無咩脂肪。軟骨餃子,入面的軟骨餡,簡直多到差d漏出來。烤白鱔無中式煮法咁油膩和帶泥味,魚肉保持脆鯇的texture,和最重要無骨。飽足到一個點,已經不能再食肉了。剛好下一個係野菜天婦羅,粉漿超薄完全不油膩。加上秋天南瓜和蕃薯都當造,蔬果的糖份高,完全不被食油的味影響到,裡面沒有索到油之餘,仲有蒸熟的感覺。另外時令目光魚又係極品,係九肚魚的texture但無骨,味道濃過九肚魚幾倍!鮨月的天婦羅,可以話是香港難得我會encore天婦羅的餐廳。最後有個明太子泡菜烏冬,辣辣地食落無咁飽。甜點係水果和歌山富有柿,果膠豐富又清甜。今餐真是非常難忘,廚師介紹的幾個菜式都非常深刻。朋友無介紹錯呢! continue reading

旅行回來日本癮起 這晚約好友聚聚兩個日本控沒選擇困難地 選日本菜有位常發掘正嘢的朋友 話有好介紹在灣仔月街的Omakase 正中我胃口日月星街向來多外國人 多隱世小店一探究竟之後大喜 雖不便宜但值得不到一千的價位 足足有十五道美食邊看師傅處理食材邊聊天 感覺不錯快手入正題好了 咁多款式又千字文-1.鮟鱇魚肝x櫻花蝦x真鯛薄切x炸沢蟹魚肝不腥 搭著櫻花蝦來吃頗有層次平常不愛粉感食物的我 也覺可接受真鯛是薄切鮮味不突出 但口感不錯蟹仔是從缸裡活捉現炸 非常的香脆-2.北海道根室海膽愛海膽的我 聽到師傅說北海道貨色兩眼已發出星光 蛋形容器滿滿海膽附上紫菜以及海鹽 自行組裝跟調味厚厚海膽濃郁鮮味 實在是很滿足啊-3.赤身x中拖羅繼續是刺身上場 是赤身還有中拖羅有鮮味但肥美度不足 可幸是沒有筋-4.和風汁煮螺這碟是師傅贈送的 因為今天滿座了所以每道菜中間等比較久 來點小食其實我們沒差啦 女生聚會慢吃慢聊味道不錯丫 是日式醬汁甜甜的味道-5.黑鯛x柚子椒鹽刺身吃完來上壽司 從味道淡雅開始黑鯛搭上柚子椒鹽 清新中帶嗆辣感-6.金鯛x酸梅金鯛新奇地配上酸梅 開胃卻不搶戲各種鯛轉 感覺師傅擅長mix & match-7.石首魚x甜紫菜充滿炙燒的香氣 甜紫菜作用不明顯-8.赤蝦x蟹膏x海葡萄蝦肉爽甜配上海葡萄粒粒 口感豐富可惜蟹膏味道非常霸道 全是蟹膏味-9.大拖羅超級肥美呀 入口即化兼完全沒有筋如再切厚點我會更開心 來多舊更好-10.雞軟骨餃子熟食類一向不是我杯茶 而且頗飽了份量毫不客氣 正常貨色正常味道啦-11.燒銀杏全晚唯一不喜歡的食物 略帶苦味啊-12.燒鱔嗜海鮮的我表示大愛 魚皮很脆肉嫩-13.野菜櫻花蝦天婦羅已很飽但還是吃下 因為出奇地特別包的是軟爛的南瓜與蕃薯 外脆內軟-14.野菜讚歧烏冬居然還來道和食 真的飽到吃不完了幼扁身的讚歧烏冬很掛湯 味道不錯-15.日本草莓嘩日本士多啤梨 胃容量又突然開放😂好甜好好味 為今晚劃上完美句號了-真的很愛吃omakase 考驗師傅功力也考驗自己運氣 來者驚喜還是驚嚇悠悠閒閒地 聊天慢吃慢活了兩小時 continue reading
