唔知係咪因為經OpenRice book枱有九折,變相唔收加一,所以樓面服務方面真係充滿笑點。

首先想講番Omakase師傅其實好有熱誠,食物方面有時可能落多左醬汁,尤其是海膽杯同appetiser:前者有啲過濕過咸,食到最後朋友過體驗到Econ嘅Diminishing Marginal Return - 唔想再擺落口。

不過刺身壽司師父有自己嘅風格,擅長將質感唔同嘅食材疊埋一齊,要食客一啖擺入口食,然後用條脷感受味道嘅層次。不過唔知係咪得一個師父,成間餐廳十幾個人都係食omakase, 所以師父都幾分身不閒,上菜都feel到佢好忙,我地有時無得聽師父嘅講解。

另外plating真係唔掂,完全提唔起進食嘅慾望,令到師父嘅手藝貌相頓然失色。

終於要講戲肉——樓面服務!

例如有時師父太忙,就由啲唔知係咪啱啱返工嘅姐姐上碟—「喂有野食啦!」然後就會以派碟頭飯嘅方式擺晒喺啲唔啱位嘅大碟上面,然後師父就沖過黎過佢擺到啲orientation 180度錯晒😂😂😂。朋友問姐姐「可唔可以講解下我地食緊咩材料」,姐姐會答「er er er 鮑魚同埋都係個d啦~」然後拉番埋道門就走😂😂😂

朋友話冷氣太凍,姐姐話無得較;問佢有無外套或者披肩,話有但係又成半個鍾都未攞到嚟;最後攞到嚟就係呀姐擺喺袋嘅私伙T shirt,再送多句「未見過男仔咁怕凍架」😂😂😂 呀姐忙得濟執唔切啲碗碟,個啤酒罐跌左喺個位到成又幾個字之後先攞番。😂😂😂

最後賣單大概八千蚊,問呀姐可唔可以split, 呀姐話「唔好玩我啦,仲要我碌多幾次卡!」😂😂😂

Btw 餐廳嘅裝潢我以為自己入左TVB拍「魚躍在花見」,拍完個佈景可以拆得個隻。

After all, 如果間餐廳唔好搞到自己咁忙,啲服務唔好咁raw,plating有番啲心思,我會覺得師父嘅手勢會更令人享受。

老闆係日本人,好風趣..每件壽司都大大舊一D都唔孤寒😆👏🏻👏🏻👏🏻睇得出佢好用心製作每款菜式。所以我哋疫情一緩和小小就又去過!今次已經係第三次去la..香港咁多Omakase,呢間係其中一間我會去完又去。疫情期間都去咗兩次💖好正!

吞拿魚係ok 但佢係雪櫃拎出黎就直接比人食
⋯⋯可能我見識少啦 我未食過未解凍嘅魚

有另一款壽司 直情食到有條細骨⋯⋯

另外 啲飯好酸 唔係普通酸 係好x酸

近期興起食omakase 廚師發辦,個廚師會因應當日食材為你準備各樣刺身壽司料理,所以都會幾有驚喜!我同fd都未食過,今日book左間係尖沙咀既樓上日本家庭風小店既omakase。 不過真係要預早訂定枱同盡量唔好遲到,因為店主真係預左時間岩岩好,唔係食客會等上菜等得太耐。先有茶碗蒸同漬物做前菜,刺身七點每樣都好新鮮,師傅仲會逐樣為你介紹返,例如有深海池魚,左口魚同toro 等。壽司有五件,中意杋立貝大大粒,最吸睛係海量海膽杯,好少餐廳會咁豪爽比咁多海膽,所以食得好盡興,彌補返日本思鄉之苦。環境方面,擺滿日式清酒,好有居酒屋感覺!

今日去左試間尖沙咀樓上舖既omakase。門面到舖入面都用日式木系風格做舖設。好好彩坐到bar檯望到師傅整壽司,一坐底就先出左冷盤同燉蛋,都幾開胃,食完前菜就到3款唔同既刺身,咁有食過類似日本菜既都師傅會等客人食完一道先再上下一道菜既,師傅仲會上菜時講下依道菜係咩或者加左咩醬汁去做帶出佢既鮮味。刺身黎講最驚喜係隻蠔非常新鮮又飽滿。接住就到7種唔同既壽司,因為唔同時間去師傅可能都準備唔同食材,分分鐘下次再去又食到唔同壽司,但睇相都知壽司魚體係好勻稱,飽滿得黎油脂夠,食落更加唔會有筋,師傅亦都唔慳食材,7件入面最驚豔應該係吞拿拖羅,照師傅既做法仲加左少少日式芥辣喺面,較後先出味既芥辣味好好咁平均拖羅既油脂,言談間知道原來師傅已經做壽司做左30年,唔怪得對食材同醬汁既運用咁講究。食完壽司仲有海膽杯係用飯喺底然後海膽蓋住d飯,海膽係幾鮮甜。最後仲有用魚骨淆製個半鐘而成既湯,要知到日本人好少會用咁多時間黎做湯頭,甜品就係店家自製既豆腐雪糕,而家光顧仲有10%off優惠添!

第五點:廣島蠔
巨型廣島蠔,充滿著海水味,閉上眼睛細味品嘗,恍如置身日本清澈的蔚藍海洋中般寫意。蠔身非常嫩滑,且鮮甜無比,是我目前吃過最好的蠔。酸酸甜甜的醬汁,把蠔的鮮味帶上另一個美味的層次。

幾乎每款壽司均有獨特的醬汁作配搭,例如鰆魚壽司的金菇醬汁,黑鯥魚壽司的黑松露醬,均配搭得宜,把整體的美味層次提昇。


另外,廚師特別愛把油脂豐腴的魚刺身輕輕火炙,把魚油帶到下面的刺身,帶動味蕾躍動。左口魚裙邊經火炙後,油脂特香,這最天然的醬汁滲進樓下的帶子刺身中,整體味道更細膩豐富。

海膽杯
吃過上面的菜式後已經飽了一大半,再來個海膽杯,已經開始應接不下了。可是美食當前,胃部自動波無限擴大。海膽杯的三項主要元素均為我的至愛 ~ 海膽、拖羅和三文魚子。呈華麗雪花紋的粉紅色拖羅入口即化,爆多的海膽極度鮮甜,加上咸咸香香的三文魚子,三者的互動超有火花,美味無限。

廚師說他每晚最多只能做三檯客人,當晚full booking,他一直埋頭苦幹忙過不停。直到部份客人結帳離座,方有機會跟他輕鬆聊天。廚師來自東京,他當廚師已經有二十多個年頭,經驗豐富。他來香港已經有五年,能聽懂部份廣東話,加上他懂普通話和英文,跟他溝通無難度。一頓豐盛美味的廚師發辦就此落幕,雖然味覺大滿足,卻也充滿不捨,只好期待下一次的味覺盛宴吧。
