We have been going to Sushi Jun for almost 5 years and we have always had excellent meal! Quality of food is consistent however keep on surprising us every time. Tuna bone marrow is a star tonight!Chef Ryan is the best! We love him! Service is attentive and cozy like good old friends! Highly recommend! Made our next booking for lunch but unfortunately have to wait till mid August if you want to enjoy a sushi lunch on weekend!

在疫情下沒有晚市,lunch 都照殺啦😋

今日(1月20日)同幾位朋友去食個late lunch,點知最後大家都好唔開心,尤其是我地同個板長相熟嘅朋。事緣我地5個人去到就叫左個Omakase lunch $780 一位,跟住個位板長就話今日香箱蟹最後一日供應,但佢跟住就走左去,咁我地唯有問吓嗰位板前,隻香箱蟹幾多錢?佢話$300,其實水尾香箱蟹唔值$300嘅!跟住就出事喇。食食吓開始發覺有問題,頭幾樣食物完全無鮮味,後來就好啲。因其中一位朋友嘅世侄女昨日,即19日食過,所以就問板長點解今日嘅嘢同昨日唔同,板長無答。到最後埋單加一連香箱蟹,每人$1,738。問板長點解咁貴,佢話幫我地upgrade 左個餐。咁都得!唔使話聲我地知㗎,就算點熟都要講聲啦!以後都唔會再去。

灣仔想搵間有質素啲嘅日本菜都唔係好多選擇,呢度就一間樓上壽司店專食omakase(廚師發辦),不過omakase郁d都過千銀,真係聽見都心傷,好彩呢度午市就有好多款套餐,除咗壽司、刺身飯之外仲有d熱食,$200-300左右已經有交易,價錢非常親民,壽司套餐款式真係廚師發辦,可以坐係吧台睇住師傅整,omakase嚟講可以食到呢一個質素真係幾抵。特選壽司(包括壽司8貫、茶碗蒸、沙律、卷物、甜品)因為同佢朋友係熟客嘅關係,今日師傅私人醒多一件壽司,9款壽司依次序分別係針魚、鯛魚、鱆紅魚、深海池魚、鰤魚、右口魚邊、赤貝、帆立貝同中拖羅,要留意每次款式都會唔同。本身壽司飯已經有調味,所以完全唔洗點豉油都已經好夠味,飯粒唔會鬆散之餘仲保持到粒粒分明有咬口。面頭嘅刺身更加唔洗講,每款都非常新鮮鮮甜,刀工好好,厚薄均勻,而且每一款上面都配上唔同調味,例如薑蓉、柚子蓉、醬油、海膽等。我個人就最鐘意右口魚邊同中拖羅,兩款都係入口即溶,針魚同中拖羅上面嘅海膽好鮮味軟滑(注意:中拖羅上面嘅海膽原本係無架!),食完滿口甘香。餐牌上寫住係最後有卷物,不過今日就變咗做烏冬,食完壽司之後師傅會提供少少柚子胡椒,可以食

我經常幫襯壽司淳,因為食物有質素,又近公司,今次沒有特別安排相片,但主要想要求店主同Reception 的同事反映一下,他們總是好唔友善地有禮貌,每次我book位full了,那同事總是語氣掘一掘很不友善,實在唔係同你乞,語氣親和點可以嗎,麻煩你吖,我周圍搵食都想食得順心啲開開心心啫,唔想打幫黎都要俾你得,拜託!

赤貝,北寄貝,帆立貝,全部師傅都係新鮮切好用毛巾印一印血水(師傅話係佢嘅日本師傅教既)之後放響檸檬片上面。主要話係食佢嘅鮮味。我個人都認為新鮮嘅海鮮,貝類係唔需要搞咁多調味嘅。結果真係食到佢哋嘅鮮甜同埋爽口。

再嚟有蝦,大大隻嘅係牡丹蝦,而響右邊一住咁樣嘅叫做富士山白蝦。師傅建議我先食牡丹蝦再食白蝦。因為白蝦嘅甜味濃過牡丹蝦,如果先食白蝦就食唔到牡丹蝦嘅甜味。而牡丹蝦嗰隻啖啖肉嘅感覺真係唔錯。

之後係鱆紅魚(左上角),師傅用火槍輕輕咁響魚皮位置度燒一燒。食落口嗰陣油脂嘅味道。真係非筆墨可以形容。


之後師傅將啱啱牡丹蝦嘅蝦頭炸返俾我食,咁我就冇漏到濃濃既蝦膏。


再嚟就係秋刀魚,一直都覺得秋刀魚嘅魚味好濃,或者可以用好腥黎形容我嘅感覺。但師傅邀請我試吓,話秋刀魚係而家最時令嘅所以我就膽粗粗咁試吓啦。
果然冇令到我失望,秋刀魚點左佢嘅魚肝醬,點上蔥花同埋芝麻碎真係好好味喎

其後有北海道根室既赤海鮮,大大片配上卜卜脆嘅魚子,嗰啲鹹香真係好惹味。
大拖羅亦都係我再次信任師傅嘅手工而食嘅刺身。同樣地師傅都係用火槍燒過個大拖羅,嗰浸油香味令我完全忘記晒魚腩嗰啲濃濃嘅魚味,而且我終於都明白咩係入口即溶嘅感覺。原來我係食到拖羅㗎😝🤩🥳

最後有佢哋嘅招牌手卷,有芝麻碎、吞拿魚、蔥花,仲有啲脆脆地嘅嘢響入邊。

麵豉湯冇乜特別。甜品係唯一令我失望嘅嘢

全程食飯時間都見到師傅不停開水咁係咁沖野,原來佢哋係整緊魚子啊。佢俾咗一粒我試,完全唔同平時我哋食嘅魚子。一咬落去嘅感覺好似咬緊一舊粉咁。冇口感冇味道。但就係要不停咁沖佢。咁我哋先至會食到新鮮嘅魚子。
