之前網絡上有一討論, 就是朋友們約食飯, 港島人不願到九龍區, 九龍人又不想過海, 新界區跟新界人更不用說了, 陷入相持不下的膠著狀態。但對於嘴饞人, 就算是攀山涉水, 長途跋涉的美食也甘願一到吧。曾是米芝蓮推介的人氣牛腩麵 - 華姐清湯腩, 就在天后地鐵站出口的不遠處, 位置是挺方便的。 晚飯時間, 座無虛席, 排隊是免不了, 何況是人氣店, 更令我帶期待的等候。等了約十分鐘, 就可內進。經過門口的麵檔, 傳來師傅不斷切牛腩的"咚咚"聲, 麵店不大, 清簡的白瓷磚, 通明的白燈火, 潔淨得來又帶點地踎, 這種快來快去的速食, 當然坐得不算舒服, 但也不致坐得狹迫, 起碼不是4人圓檯硬塞8人的模式。 除了招牌的牛腩牛筋和金錢肚外, 也有魚蛋墨丸, 甚至是擔擔麵上海麵等選擇, 十個到來至少八個都是叫上清湯腩, 我們也不例外, 毫不猶豫的叫了兩碗清湯牛腩河。 兩碗清湯牛腩河 $42 很快就到來: 先喝口清湯, 頓然以為自己叫錯了? 還是店員送錯了? 再視察其他食客, 賣相又是跟其他人一樣嘛! 湯是清澈, 沒太多油脂浮面, 但味道淡如開水般, 是忘記灑上鹽份嗎? 還是基於健康飲食新趨勢, 奉行少鹽? 甚至鮮甜味也算不上, 難道是我重口味而覺得淡? 忍不住問問身旁的老公, 原來他也有同樣反應呢! 米芝蓮推介, 人人讚不絕口的竟是淡如水! 是我們味蕾出了問題嗎? 不竟湯也是靈魂之一啊~真的教專程過海的我倆失望。 至於牛腩, 沒有特別要求要哪個部位, 呈上的半肥瘦牛腩帶點筋位, 肉質條理分明, 算是煮得腍軟入味, 不過帶點嚼勁。全靠牛腩的支撐, 把整碗吃光, 亦挽回點分數。 麵條方面, 基於湯頭是淡而無味, 可以專注河粉的質感, 河粉厚薄適中, 頗為滑溜, 沒有因浸過湯後而變得太過腍身, 蠻不錯。 腩汁蘿蔔 $14因為清湯腩中沒有白蘿蔔, 吃清湯腩又怎何沒有這最佳拍檔呢? 於是另外叫上一碗。滿滿的一小碗, 白蘿蔔煮得腍軟入味, 未算踏入當造期沒有苦澀也沒有渣, 清甜好食! 不禁也喝一口白蘿蔔的湯, 竟發現是非常濃郁美味, 而且清甜, 跟清湯腩的湯頭, 簡直是一邊天堂一邊地獄般。 吃罷也不禁問問店員, 答案竟是: 白蘿蔔的湯加了腩汁! ......加腩汁?! 十萬個問號即時湧上: 即是食清湯腩要加腩汁才有味道嗎? 但為何從沒聽到食客要求加腩汁? 食清湯腩加腩汁我會給人嘲笑嗎? 當然這些問號於結帳後也一併吞回肚中。 大家一致讚好, 享負盛名的米芝蓮推介, 竟教我失望, 是水準倒退了? 還是今天的水準失準了? 一次的光顧經驗又不可定生死, 這樣太不公平, 暫且給予"OK"的評價, 留待下回再光顧才下定奪吧! continue reading

這天要到銅鑼灣辦事, 完成後就去天后一倘, 嚐嚐知名的米芝蓮食肆- “華姐清湯腩”。是日下午3點左右來到華姐, 每張枱都有食客, 搭枱是難免的。看到餐牌, 價錢早午晚餐都是劃一的。也沒有午市/ 下午茶套餐, 點選了主要麵食後(牛腩/牛筋/牛肚粉麵單拼要$45, 雙拼要$51), 若要加配飲品/油菜, 要逐一收費, 所以價錢相當貴。是日點選了“清湯牛腩牛筋河粉”, 份量不算多, 相機還未食, 就發現碗邊有迷你蒼蠅屍體! 還沒有到夏天, 衛生狀況就那麼差 。吃完後, 更為失望。~ 清湯- 幾清, 顏色沒有很濃的樣子, 喝了幾口, 湯有淡淡的牛肉味~牛腩- 太有咬口, 肉質韌韌的, 食完有 “癡牙”的情況。牛腩有醃製過, 味道還好。~牛筋- 有彈牙質感, 但醃製得太重口味, 有點咸, 懷疑有味精, 吃完會口渴。 continue reading

The beef is braised just right and the soup is fragrant, loaded with beef flavour with hints of turnip when eaten alone. But all the tastes were gone when eaten together with noodles since the soup is not rich or salty enough to balance with the bland taste of the noodles.Only some minor tweaks are needed to get everything right. continue reading

2017年 02 月04日 (六)午餐日常,粉麵少不了。湯河,可說是南方文化的美食;其中代表作,相信也非牛腩河莫屬。清湯牛腩蘿蔔河 ($ 46)點左雙拼。蘿蔔大切,非常林身,沒有根,沒有渣,內裡充滿牛腩清湯汁,鮮甜可口。而主角清湯腩,可選肥瘦的;而呢款係由師傅選擇。可見下刀仔細利落,件件分明,大小如一;色澤內外一致,熟度均一。肉質嫩口,條紋亦很順,一點都不韌。食完河粉,再飲啖湯,飲完整碗湯都沒有口渴。呢個清湯腩,連湯的精華,回味無窮! continue reading

如果想去一間唔識人都有靚牛腩食嘅地方,就要揀華姐清湯腩,時間方面要選擇在開舖至到下午五點前都有機會食到靚的崩沙腩,指名要講崩沙腩,通常阿叔或阿姐會話比你聽"盡量啦"但通常都會有,如果叫淨食的話,粉麵就普通,不過湯底清甜無味精,蘿蔔也可以一試!! continue reading
