大時大節臨近,大家做節時不免會大魚大肉,順道也會來小酌一兩杯,小則紅白或啤酒,大則迎來威士忌或白蘭地。早前參加了軒尼詩與勝記海鮮酒家合作推出多款軒尼詩品牌酒與海鮮的組合。 其中最大陣象的就是阿拉斯加蟹配一支超大容量的Hennessy X.O干邑,足足有三公升之多,市面應該很難一支三公升的X.O干邑要配一隻蟹,蟹的體型也絕對不會少,足足有五公斤之多,蟹腳也有手臂之長,鮮甜無比。 如果嫌阿拉斯加蟹太大,又有芝士龍蝦煎米粉配一支1.5公升的Hennessy X.O干邑的組合。以本地的鮮甜青龍蝦來做的芝士龍蝦已令人陶醉,何況更有香脆的煎米粉來做陪襯,再輔以一杯X.O干邑,實在美滿。 可是,最為抵食的絕對是龍吐珠粟米斑塊配一支700ml的Hennessy X.O干邑的組合,價錢是$1,988,以一支市價都要$1,500-1,600的干邑計,以整尾沙巴龍躉來做的龍吐珠粟米斑塊都只是$400左右。況且以新鮮魚起肉加入麵包糠炸成,特別香脆可口,蘸上甜美的粟米汁,確是抵吃又好吃。 還有一個以店中招牌的芥末山楂骨配Hennessy VSOP的組合,在酸酸甜甜的山楂骨上塗上一層芥末,多了一點刺激刺鼻的感覺,同時喝上一口美妙的VSOP,確是賞心樂事。 除了以上的組合外,還品嚐了不少美味的菜式,好像是香口的炸墨魚餅及金磚豆腐,前者爽口彈牙,後者嫩滑無比,大家都吃得津津有味。 接著還有刺身拼盤、椒鹽鮑魚、啫啫芥蘭及揚州炒飯等等,每樣都有一定的水準,絕對不負米芝蓮一星的名譽,特別是椒鹽鮑魚,調味得宜不在講,質感爽彈確是吸引之處,百吃不厭。 continue reading

Coming to Michelin-starred Sing Kee Seafood Restaurant, we are not only having delicious local seafood dishes, but also to rediscover some tastiest moment pairing with one of the world’s leading cognac in Hong Kong – Hennessy. ‘Re-Discover the Taste of Hong Kong’ is a campaign introduced by the Hennessy group, who has expertly prepared an extensive menu featuring signature favourites seafood, Cantonese, Chinese and Chiu Chow restaurants according to their versatility of Hennessy V.S.O.P, X.O and Paradis.Starting with an enormous platter of assorted sashimi, included yellowtail, sweet shrimp, salmon and octopus. We also have two signature dishes, they are deep fried tofu with an incredibly soft center, and a deep fried squid cake served aside sweet and chili dip.Pairing with Hennessy X.O 70 cl, it is a giant garoupa that has been deboned and deep fried into fillet, served with sweet creamy corn sauce, whilst the bone is further made crispy in frying oil. It is my favourite!Next is a steamed Alaska King Crab that is also paired with Hennessy X.O, but 300cl instead. The delicate sweet flavor is indeed amazing and fresh, the stunning plating is also much appreciated.Another favourite is baked lobster with cheese and crispy noodle. It is paired with Hennessy X.O 150cl, which reduces a bit of the greasiness from the heavy cheese sauce. Whilst the crispy noodle has thoroughly soaked up the cheese and lobster flavor. The combination is such a perfection!Last but not the least, a mouthwatering stir-fried spareribs with mustard and sweet and sour hawthorn sauce. They have considerably served a bit extra mustard sauce on the side, while pairing with Hennessy V.S.O.P 35cl for a kick.Sing Kee has much more signatures such as a deep fried abalone, the yeung chau fried rice with fresh water shrimp, as well as the renowned yakult pudding for dessert. continue reading

西貢連續五年米芝蓮一星,無需預約,小試。墨鱼饼,Q彈有力,油炸但不膩,可惜墨魚味不太足。金磚,表面酥脆,豆腐嫰,很嫩,油炸豆腐這麽嫰,實屬難得!蒸元貝,酒糟中若加少於蒜末,會更好。豉椒炒蟶,口味略重,掩蓋了海鮮自己的味道。烤鮑魚,椒鹽點綴,提升鮑魚自身的鮮味。味道整體不錯,但一星似乎有點太高評價?! continue reading

來西貢吃海鮮,通常會去位置較優勢的幾間大海鮮檔,但由於遊客較多,我略嫌太商業味,所以不經不覺越走越入,最後來到「勝記」。勝記亦是米芝蓮餐廳之一,食物質量及服務均給我良好印象。今晚我們沒有點套餐,在海鮮檔揀了些海鮮便上樓等食。經理安排我們到三樓近窗邊位置就座,由於人不太多,感覺環境很舒服,更難得洗手間都能保持乾淨企理。上菜了!先來每人一隻椒鹽瀨尿蝦,大隻、新鮮、肥美,好味!椒鹽鮑魚是餐廳的招牌菜之一,難得來到必定一試。整道菜的賣相很精緻,望見已垂涎欲滴,鮑魚都夠大隻多肉。唯一是自己忘記上一道菜已經是椒鹽,下次應該點冰鎮鮑魚比較好,可以中和剛才的「重口味」老闆推介另一道金不換炒蟶子,同樣是以精緻賣相挑起食慾,爽口彈牙的蟶子配上獨特煮法,絕對感覺到廚師的用心烹調。最後一道海鮮是鹽焗奄仔蟹,這是唯一一道菜跟預期有點落差,又或者可能不合時令?因為我食過的奄仔蟹是細隻多羔、肉質鮮嫩,今晚的是蟹是多肉,但肉質較實,雖然味道不太差,但相比之前在鯉魚門食過的,還差一點點。食得太多濃味的海鮮,總要點清淡的蔬菜中和一下。點了一道上湯浸菜苗,雖然是簡單餸菜但絕不馬虎,上湯加入瑤柱和蒜子,鮮甜入味,讚!結賬前餐廳送了一客甜品,分別是桂花糕、益力多糕和柚子榚。個人記為柚子榚的味道最為突出,好清新! continue reading
