如果大家對於大排檔嘅印象中仲係叫餸食飯、食煲仔飯嘅話就錯曬,呢間大排檔一樣都係食充滿港式風味嘅嘢食,喺茶餐廳、冰室一定會食到嘅奶油脆脆同呢排香港人好鍾意食既茄牛。香港有好多咩咩園,好似樂香園、紹香園、蘭芳園,但一講起中環、奶油脆脆、茄牛,大家就會諗起勝香園。勝香園係一間喺中環大排檔嘅粉麵店,呢間老字號係中上環屹立左半個世紀,係家族式經營。開業於1959年,勝香園以前是係玉葉甜品個個位,係30幾年前先搬黎歌賦街依邊,大家睇中勝香園,除左係佢既野食之外,唔多唔小都係這種露天式既大排檔風情,夠街邊夠地道。所謂既大排檔即係街邊檔攤,環境簡陋,外觀多以鐵皮同帆布組成搭建。全盛時期係二戰後,政府為因公傷殘或者殉職既公務員解決生計,所以發牌照,係街頭租金負擔低既情況下經營。不過由於衛生環境欠佳、阻街、市區整建等好多原因,1980年代前後政府開始唔再發放新牌照、補償金鼓勵持牌人繳交牌照,禁止轉讓同繼承舊牌照權利等措施,令呢一種街頭文化快速式微。直至2009年政府先有所意識,決議宣布大牌檔保育計畫,協助建設同環境翻修。呢家香港大牌檔已經唔多,大家數到既係油麻地、深水涉,大排檔式微都係令人想去勝香園既原因

喺未疫情之前,呢間大排檔一直都係旅客必食嘅人氣店,以前的確要排成半個鐘到一個鐘,即使而家冇左遊客嘅人潮,小店都係接近滿座。店舖堅持慢工出細貨,所以食佢哋嘅嘢食都要有啲耐性,喺繁忙嘅午膳時間,落完order等半個鐘都唔誇張。主打蕃茄面同埋脆脆,餸、麵同湯底都可以任意配搭。

位置離地鐵站唔算話好近,係歌賦街,第一次嚟嘅話會有啲吃力,唔想行得辛苦可以經自動扶手電梯,係結志街落沿着上環方向行就會見到,佢嘅對面就係同樣昔日人氣嘅米芝蓮美食九記牛腩,以前會見到勝香園一條人龍、九記一條人龍,附近正正就係今年亞洲50餐廳之首嘅大班樓。

前後食過兩次勝香園,兩次都係星期六晏就去,因為佢星期日唔開門,大排檔環境當然簡陋,枱面座位都唔可以講係非常乾淨,不過上面會有雨傘、遮棚,中午時期唔係坐最出嗰幾個位,基本上太陽曬唔入嚟,有提供幾把風扇,雖然環境唔理想,但依然高朋滿座,唔使等位不過去到接近滿座。

餐牌只有簡單嘅兩頁紙,第一頁就係佢哋嘅麵食,可以自由配搭唔同既餸,但可以睇到佢右手邊全部都係蕃茄字頭,所以已經話俾你知蕃茄就係佢哋嘅招牌。而另一頁就會見到其他多士、三文治同飲品。

枱上面會有基本嘅醬料,好似同辣椒醬同胡椒粉。

食過幾次佢既脆脆上枱擺盤都係差唔多,好似米奇老鼠咁,脆脆都係即叫即製,上枱熱辣辣,比起蕃茄麵呢個更加要趁熱食,因為咁先保持脆口。呢度既脆脆同多士都係用800W多士爐,麵包特別揀選半機械、半人手製造,奶油脆焗得好香好脆,係我食過咁多個脆脆最脆嘅一個,第一口咬落係會偏硬少少,但咬完落去就係非常脆嘅口感,脆到係身邊嘅人都會聽到有聲,隨即就係脆脆入邊嘅鬆軟口感,脆到好似食緊餅乾咁,呢一種嘅鬆脆度食過咁多間茶餐廳都做唔到,食完會諗係咪越簡單嘅嘢越難做得好食。
而奶油份量非常足夠,食落係偏甜,有一啲已經滲咗入去脆脆入邊,所以食落唔會話好乾身,如果唔係咁鍾意食好甜嘅人未必接受到,牛油檸檬汁蜜糖會更加適合,食落係非常邪惡但就係滿足無比。

檸檬汁食落清香,會食到牛油香,所有調味都搽得非常之均勻,口感清新,令人耐人尋味。牛油檸檬汁蜜糖比起奶油冇咁甜,食落會冇咁膩,因為檸檬汁會稍為中和蜜糖既甜,酸味會比甜味出啲,所以食落係開胃,但個人會鍾意奶油多啲,今日食落唔夠喉唔夠過癮。
要挑剔既係食脆脆一定要用手羅,用筷子基本上夾唔到,但勝香園無提供清潔用紙巾或者濕紙巾,要自備一下。

上枱時係熱辣辣,湯底呈紅色,但唔係濃稠嘅湯底,蕃茄湯飲落非常濃郁,甘濃起沙,蕃茄味非常重,係夠酸,而酸味係黎自新鮮既蕃茄,而唔係人工嘅酸味,茄膏嘅甜味唔算好出,係天然嘅味道多啲,酸味會比甜味多好多,食落非常之開胃。而蕃茄嘅數量都幾多,真材實料,食起嚟淡淡茄肉,而且已經煮到腍身,接近變茄蓉嘅狀態,成個湯唔會話好油,係一個好多主打蕃茄湯嘢食嘅餐廳時代,呢個蕃茄湯都係可以佔一席位。略嫌湯太多,對比起蕃茄同牛肉嘅數量,所以上枱時基本上係睇唔到牛肉,沉晒底,用匙羹不上嚟先見到牛肉其實係唔小。

鮮牛肉份量都係唔會孤寒,雖然細塊,但是對比起其他店舖,食起嚟係好軟嫩多汁,食得出好新鮮,唔算鞋唔算韌,牛肉軟諗程度,唔係好似茶記咁用肉鬆粉,所以食落唔會有鹼味,肉質食落都係自然。牛味就唔太食到,不過喺大排檔、茶餐廳來講,牛肉只要咬得開已經好足夠。
煎雞蛋就不過不失,唔會話煎到窿咗,蛋黃起碼仲係流心,蛋黃既甜味同蛋香味會比蕃茄既酸味蓋過,下次會試下炒蛋,感覺食落會變炒蛋蕃茄。
通粉會比麵更加索湯,因為佢個空心可以令到更多湯同茄蓉滲入去,通粉食落唔會話煮到好腍,軟而不粉,係合格嘅通粉。

凍奶茶以絲襪奶茶既作法黎整,飲落夠凍,夠香滑有奶香味,奶味會比茶味重,所以飲落整體甜味會比較夠香滑有奶香味多。如果鍾意奶味濃一點既朋友,呢杯奶茶肯定係你杯茶。

🌟酸甜嘅蕃茄、腍滑牛肉、爽滑嘅通粉,食落開胃飽肚,價廉物美,身為香港人好難抗拒呢一種美食,看似做法簡單,但要將三者完美咁結合,非常考大廚火候控制度同埋食材嘅新鮮度。香港有好多主打蕃茄湯嘅餐廳,好似蕃茄師兄、red object、蕃滿門、華嫂、樓下冰室、星座冰室等等,勝香園作為香港茄湯既始創者,絕對唔會比下去,嘢食當然唔係好精緻好打卡,但勝在水準係有。茄牛通、茄牛麵、鹹檸七、奶油脆豬簡單樸實已經好好食,絕對係香港人既comfort food, 如果我住附近,一定會成日黎食。

以前仲有好多遊客個時,勝香園出名店員服務態度差為名,改單會態度差,而且堅持唔比加單,係呢一段艱難時期,幫襯過兩次都感受唔到澳牛式服務,賣單讚姐姐計數快仲笑笑口有傾有講,可能生意大不如前,人龍店都要變得嫌虛、禮貌一啲。

冇晒遊客嘅情況下,勝香園已經唔使點排隊,兩次去都係可以即刻坐低唔使等,不過夏天嚟食就會比較熱啲,因為始終係露天大排檔,冇冷氣得風扇,而且喺馬路邊,但大排檔就係食呢一種嘅特色,呢一種嘅懷舊味道,冬天喺呢個露天地方吹着風食碗熱辣辣麵可能會更舒服。

喺呢個疫情嘅時期,小店買少見少,再加上呢一啲鐵皮檔嘅大排檔,碩果僅存,唔知幾時會因為政府一句話收返,到時想食都冇得食,就只可以變成大家嘅集體回憶,所以無論係想一試大排檔風味,定係一試好代表到香港特色嘅奶油脆脆,定係要帶外國朋友一試香港特色、但外國不常見既美食,除左諗起歌賦街既九記,呢間人龍店勝香園都係我既口袋名單。

勝香園的茄牛系列和檸檬蜜糖脆脆, 就成了我在那裡的Must-Have Items, 風雨不改, 始終如一. 茄牛系列的湯底, 茄粒和茄膏的比例依然係是如此平衡, 甜酸味道與稠稀質感平衡同樣可喜, 牛肉肉質不死實, 也不鬆散, 略帶肉香以茶餐廳來說就夠高質. 至於檸檬蜜糖滲入香脆的豬仔包內, 依然保持外面的香脆, 內裏滲滿醬汁不但令味道更突出, 也改善了豬仔包內裡乾燥而過於粉散之口感, 比起茄牛系列我更喜歡呢!

晚餐有大餐吃,午餐就簡單點處理了。勝香園,多年來還是保持這個路邊大排檔的樣子。在沒有遊客的情況下,還是有好多本地客幫襯的嘛,生意還是好得沒停手。番茄腸仔通粉,朋友點的,番茄通粉始終是這裡的招牌,番茄湯底的濃厚看顏色就看的出,酸酸的很開胃,就是腸仔看起來有點孤零零。番茄餐蛋公仔麵,最愛流心雞蛋,每次戳爆蛋黃的時候都有種療愈的感覺,同時蛋黃亦令食物更加滑膩好吃,富有蛋香。奶油脆脆,真的很脆脆,必點名物,咔啦咔啦幾下就沒了,一份都不夠我自己一個人吃的。偶爾來懷舊一下,感覺也不錯。

今日做野經開中環,諗起好耐沒食過呢間老字號 - 勝香園。由於啱啱好十二點,啲人仲未開始放lunch,所以一埋去就有位。一坐低就叫左兩樣野食,分別是蕃茄牛肉太陽蛋麵同埋咖央多士。個麵好快就整好,不過多士反而要耐啲,因為多人叫,要逐份整。蕃茄牛肉太陽蛋麵 ($36)講番茄牛蛋麵先,湯底超濃,而且茄肉超多,不過就略嫌有些少酸,但屬可接受範圍。至於牛肉份量就正常,唔算太多或太少,同埋都算稔身,唔錯。咖央多士 ($18)另外嘅咖央多士就用左厚多士,面頭有一層薄薄嘅咖央醬,頭兩件食落都脆身,不過食完碗麵再食就變硬左。啲醬落得啱啱好,唔會太多食到成口醬,平衡番。值得一題嘅是,強烈建議大家秋冬先去食,一路食一路流汗都食得有啲辛苦。唔怕熱就夏天挑戰下啦。

蕃茄牛肉太陽蛋麵 ($36)
講番茄牛蛋麵先,湯底超濃,而且茄肉超多,不過就略嫌有些少酸,但屬可接受範圍。
至於牛肉份量就正常,唔算太多或太少,同埋都算稔身,唔錯。


咖央多士 ($18)
另外嘅咖央多士就用左厚多士,面頭有一層薄薄嘅咖央醬,頭兩件食落都脆身,不過食完碗麵再食就變硬左。
啲醬落得啱啱好,唔會太多食到成口醬,平衡番。


值得一題嘅是,強烈建議大家秋冬先去食,一路食一路流汗都食得有啲辛苦。
唔怕熱就夏天挑戰下啦。

趁著還沒盛夏,吃一下勝香園。不然再熱一點,滿身大汗,再好吃也吃不下。餐牌看似有無數選擇,但離不開蕃茄湯底,再配以一種或兩種配料,可食通粉、公仔麵或米粉。雖然簡單,但蕃茄湯底濃郁,不過煎蛋過熟,蛋黃都熟透了,之前吃過米粉,很硬不掛湯,這次通粉,好多了通粉中間的洞洞滲入了湯汁,夠熱又好吃,而且通粉份量很足。這碗多了牛肉,牛肉會軔,介意的話可選其他配料。勝香園的奶茶沒有特別出色,但也不難喝,只不過茶再濃一點會更好。
