非常之鍾意食順德菜,可惜香港冇乜特別好食嘅,曾經試過特登坐車去順德食。好耐之前去過順德聯誼會,識咗佢哋個經理,後尾原來經理自己出咗嚟開餐廳,叫咗我哋去咗呢間新餐廳試吓餐廳裝修大致上同一般順德菜差唔多,餐單亦都有相同之處。叫咗幾樣餸:糖醋小排、蠔烙、順德拆魚羹、魚飯(即係凍魚) 、海參柚皮。大部份嘢食都屬於正常之作,冇特別話好驚艷,不過個海參柚皮真係唔錯,芡汁整得幾好食,眾所周知,柚子皮一向難整,一唔小心就會整到好苦澀,呢個真係唔錯👍🏼

因為屋企人生日,決定訂位食飯 、餐廳懷舊主題,到店侍應招呼問要咩茗茶,之前聽聞過食正宗順德菜 提前配好菜單,值得一讚食物菜式都好好 👍🏻 順德拆魚羹 、脆皮乳鴿 、 大良炒牛奶 、 煎焗大魚咀 等等好味菜式,加上服務又好 成晚侍應生都好客 經理又推介菜式 又介紹食物菜式,環境同服務態度都好好 ,最後上蛋糕有驚喜 ,有提供生日歌慶祝生日,真心值得一讚 。會下次再黎食。

服務質素極差,價錢不講明。強行推薦不需要啲菜品。啲嘢食起來都麻麻哋,選擇好小。本來係想請美國來的朋友食啲地道粵菜,點知選擇好小,不合客人口味之餘伙計又極力推銷根本沒興趣的菜品。試左幾個所謂特色菜都只能講係普通,沒有任何驚艷之處。乳鴿比起唐宮小聚都遠遠不如,令人失望。最失望係伙計態度可謂極其惡劣,訂位個陣不講最低消費,臨場都不講明直接亂加嘢改份量,無人願意食擺個度噁心人。有咁樣伙計以後絕不會幫襯!!

順德是魚米之家,傳統菜式有特色,以淡水魚為本要,再發展出不同菜式。拆魚羹是必訂菜,坊間做出同樣口感和功夫的順德餐廳已不多。尤其老闆是順德勒流人,親切好客,光顧時可和他交流煮食心得。當日包房,燒乳鴿較乾身,但份量剛好。梅骨有驚喜,朋友搶著吃,蒸淡水魚講究時間,剛好魚肉熟而不碎。我最喜歡的炸鯪魚球配上蜆芥,味道偏咸但合我口味,甜品有白糖糕和雙皮奶,甜味清淡易入口,比一般粵菜多變化。而且多包房房間,適合朋友聚會和招待客人。自行泊車可到新鴻基大廈,步行幾分鐘過橋就到。

The first 2 deep fried items might be a bit too heavy as appetizers, but my friend said nobody could make them better. Indeed, the batter was crunchy and light. Didn’t feel oily. Also went well with the champagne and white wine we brought.

Everybody really enjoyed the 魚羹 but I was weary of hidden small bones so didn’t eat much.
The 柚皮 was impressive. Normally I don’t Iike to eat it but there was no bitter taste in this one, even tasted a bit sweet.

“香煎金錢鰻”取形狀如落地金錢做意頭,很好。門鱔橫切成均勻大細的金錢片,撈入味,慢火煎到剛剛熟且兩面金黃,咬落帶焦香,肉質脆口。經理講鱔質絕對需要精準挑選。
“順德魚腐炒胜瓜”,關於“勝瓜”,年輕帥气的餐廳老闆親自跟我們講了個“輸和贏”,“勝和敗”的戲説新語。又介紹了靚魚青才可以整到嫩魚腐的原理和做法,飲食加文化典故,真順德人👍👍
“順德手磨薑汁撞奶”希望老闆親自演繹,被欣然答允,好友喜出望外。看著薑汁和奶的結合過程,匙羹浮面,狀如凝脂,稠而不結,滑中帶嫩,無疑是一份鄉情的凝聚。
既滿足了久別重逢的欣喜,又好似親臨了順德飲食人文的大觀園。
好開心的一頓午餐。

均安頭菜自不用講,是我一直心儀的粗料精品

主食是鳳城魚腐濃湯米綫,湯質純厚,米綫軟滑,魚腐純魚青制作,表炸金黃,包裹如脂軟嫩白色魚青肉,我先生原話“疑為天物”最後甜品是姜汁撞奶,確為點睛之作,和胃驅寒,就嫌碗太小……
今次抱住順路探店的心態,結果可用兩個字並一句話做總結:“好食”,“不虛此行”!

找到一月份吃這餐順德菜的照片,決定要補篇食評。到現在還在回味那碗薑汁撞奶。做法正宗,用料亦佳,差不多每一道菜都好吃。野雞卷,油但好吃。鯪魚球,外層乾身帶少少脆,中間很彈。炸鮮奶,炸得不油膩,奶似乎有少少調味,不似平時吃炸鮮奶的甜。魚皮,爽脆又滑溜。蓮藕餅,印象不深,不過不失。蒸豬,很有特色,只在順德吃過一次,沒有在香港見過。那次在順德,是原隻豬蒸的,買的時候,師傅從豬上把肉切出來,放入飯盒,買一盒。這個更精緻,一片片厚切的豬肉,有脂肪有肉。脂肪部份蒸完已經逼出油,吃起來爽爽的,雖然心感邪惡,但真的不油膩。簡單加了鹽和胡椒調味,吃到豬肉味。炸鱔,幾香口。魚頭煲,超多子薑。魚頭很入味,好吃。白切雞,整晚唯一失望的一道。雞太凍,淡而無味,似冰鮮雞,肉不滑。排骨陳村粉,很好吃,尤其是陳村粉,跟酒樓的蒸排骨下的陳村粉是完全兩回事。好吃得再點一份陳村粉。炒芥蘭,爽。蝦仁炒蛋,蛋炒得幾滑,有蛋香,但驚喜不大。XO醬炒陳村粉,比蒸的更惹味。黑糖糕,不算很甜,鬆軟,是個不錯的甜品。倫教糕,原來即是白糖糕,做得不錯。不常吃白糖糕,這是我吃過最好吃的。全晚最喜歡薑汁撞奶。超好吃。超滑,奶夠香,薑夠辣,甜度低

日前,朋友聚會要宴開6席,話選擇了有“最近灣仔最紅順德菜館”之稱的《順聯薈》聚會。 帶著平常心,原來想兄弟間只要能有個地方在年晚之際把酒言歡,對食物質素本无特別期待。 上到位於杜老誌道食街群策大廈6樓的《順聯薈》餐廳。入門之際,見到門面之裝潢給人眼前一亮的感覺,好醒目的金漆招牌,酒櫃琳琅滿目的名酒,精神為之一震-----群策可真有個這般高格調且精美餐廳? 由第一二道正宗順德小食“酥炸鯪魚球+家鄉涼伴魚皮”,開始打開久饞味蕾。傳統順德名菜“鳳城鷄燉翅”終於掀開是晚宴席序幕,“順德柚皮伴花膠”柚皮的酥化配花膠的軟糯,粗纖膠原的天作之合。西江魽魚兩味堪稱近年香江所食淡水魚的神來之筆,第一味“香煎黃金魽魚腩”夾起用心煎成整塊金黃色的表面,咬落去外脆內軟,魚香十足;第二味:豉蒜蒸酣魚頭骨腩。豉蒜味濃而不野,完全襯托起了西江魽的鮮嫩和原味。第三道菜是“椒鹽反骨蛇碌”,起掉腩骨,只剩下主心骨的大水律蛇段,朋友笑稱想起金庸筆下的琴簫合奏,索性徒手拿起連手指都吮埋,大快朵頤。第四道菜是“順德香芋碌鵝”鵝“碌”得皮酥肉滑,濃濃的酸甜醬汁和著芋頭

上到單尾“X0醬炒陳村粉”。公認是創新与傳統的結合,朋友不識陳村粉為何物,只用世界上最好食的炒河粉來形容,引起全場的開懷大笑。殿後以“手磨姜汁撞奶”和“順德倫教糕”為甜點,香港別處确未有之,確實是最佳點睛收官之作。
宴後總結,“探尋正宗順德味,何須捨近求遠徒奔波?去灣仔《順聯薈》足矣👍👍👍”

順德菜在香港做得出色的極少,這間就是其中一間,特別是燒乳鴿,本人食過以來最出色,還有通透的陳村粉,來自順德的家鄉陳村粉配上軟度適中的排骨,真是回味無窮。最後甜品也沒有令我們失望,超夠薑的薑汁撞奶起用老薑做材料,所以口感更強,合桃露的口感細滑,入口完全感覺到合桃的香味但不會有渣子,非常好味。 本人已經忍不住惠顧多次,但質素都一樣出色,值得一試再試。
