一段關係熱情過後要細水長流,除左要對對方信任同包容,間唔中都要自己製造下火花,食好野對我地黎講絕對係好有效的化學作用,來到特別日子更是最好的藉口夏天好天的日子,我地都會去下淺水灣同陽光玩遊戲,而每次日落西山我地就會走,秋涼的晚上黎到呢個地方都真係第一次,感覺截然不同,晚上的淺水灣十分寧靜,是日天朗氣清,沙灘漫步抬頭滿天繁星,這就是火花SHOKU就係沙灘旁邊,好易就可以搵到我地有預先訂位,訂位的時候店員向我地推介一款TASTING MENU,價錢每人$598,佢話要預訂先有得食,TASTING MENU多數都有齊餐廳SIGNATURE FOOD,我地就拍板確認JAPANESE FRESH SEAWEED WITH TOFU JAPANESE CAPELIN FISH頭盤先來炸多春魚,配上新鮮海藻同豆腐,海藻同豆腐有效地解除炸物的油膩感SASHIMIOTORO包住紫蘇葉同紫菜一齊食,令魚脂香多了一份層次,鯛魚有淡淡的柚子味燒北寄貝原本套餐係燒蠔,但因為蠔無到貨而改左做燒北寄貝,反而更特別,北寄貝生食比較多,燒比較少,好大好厚的一塊貝肉,有一些炸蒜,如果唔放炸蒜更能食到貝的鮮味枝豆枝豆係飲品最好的朋友,簡單灑上鹽已經令人食到停唔到口GRILL COD FISH WAFER餐廳中間有個大爐,放滿一支支的備長炭,香港有得食備長炭燒物的地方不多,燒魚表面燒得脆脆,內裡仍然JUICY,隱約食到獨特的炭香TUNA TARTARE SALAD不過不失的一道沙律,沙律菜夠新鮮,TUNA表面輕炙過SAKE STEAM JAPANESE CLAMS蜆肉大大隻好新鮮,SAKE經煮過之後已經無晒酒精,變成左甜甜的一個湯STACKED YUZU RIBS呢道菜出乎意料的好食,柚子味好濃,RIBS燒得好香,而且肉輕易離骨明太子雞翼雞翼已經起骨,饟了滿滿的明太子,明太子辣辣地,很是惹味LOBSTER LINGUINE龍蝦意粉屬超水準之作,意粉中的龍蝦汁十分濃,龍蝦已經全部起晒肉方便客人食用,龍蝦頭有大量蝦膏,多到我要用匙更"不"黎一啖啖咁食,呢碟意粉真係整得好好味SUSHI壽司有大吞拿魚腩、北海道海膽、左口魚群邊、鯛魚,全部都好新鮮,左口魚群邊入口溶化,北海道海膽亦夠晒鮮$598一個人有咁多野食真係好抵,食完飯仲可以去海灘慢步浪漫一下,係特別日子慶祝的好好選擇 continue reading

平時入淺水灣都係曬太陽, 當晚放工後友人諗住入赤柱食飯吹海風, 途經淺水灣即興轉左去The Pulse搵食, 泊車後沿路行都是比較寧靜, 只有數人在散步放狗, 一直向前走, 忽然熱鬧起來, 原來The Pulse像一個小區域, 有多家餐廳及咖啡店, 吸引了住在附近的住戶我們被一家傳出陣陣炭香味的餐廳吸引著, 最後選了這家店, 開放式廚房, 廚房中間有一個炭爐不停地燃燒著, 原來是備長炭, 在日本, 如果店外掛著備長炭,使用店的招牌, 就是美味的保證先來一枝英國泉水LlanllyrSource, 帶有小量氣泡, 能中和稍後食品的膩滯感覺前菜鱈魚干, 好薄同脆口, 鱈魚干味道清清地, 每塊帶一點焦香味, 可沾上沙律炸多春魚配海苔凍豆腐, 一條一條海苔絲爽口, 凍豆腐夠清新, 汁醬酸酸地好開胃, 另一邊是多春魚, 香脆帶牛油味, 炸得平均頭盤三點池魚刺身, 池魚爽口, 帶有肥美口感新鮮生蠔, 生蠔上加上少許醋果凍, 蠔身大隻, 入口creamy, 水分充盈, 蠔肚位置creamy到入口即溶火炙拖羅刺身, 夾著下層的紫菜及大菜, 拖羅油脂豐富, 但略為有一點熟, 但依然令人回味清酒煮蜆, 蜆肉乾淨無沙每粒蜆肉肥美脹卜卜, 配上煮熟過的清酒, 味道更香濃易入口, 再加上面層的日本蔥一起進食, 口感更佳柚子一支骨, 每支骨先用備長炭慢慢烤熟, 隨後加上柚子醬, 每一支骨份量相當驚人, 外型好硬朗, 但咬落去, 肉質軟嫩/豐富, 保留肉質不乾身, 令人吃完一支又一支龍蝦扁意粉, 軟硬適中的意粉配上香味濃郁嘅龍蝦汁, 每條意粉沾上很多醬汁, 由於我們兩人前來, 店員幫忙一分為二, 原隻龍蝦一人一半, 蝦肉已拆骨, 食起來啖啖肉, 鮮味無窮, 現在還在回味當中日本菜怎能錯過壽司吞拿魚蓉軍艦, 加上黃蘿白碎及香蔥, 整體口感十足, 吞拿魚蓉份量好厚 海膽軍艦, 入口清甜, 無需沾上醬油, 原汁原味入口, 海膽新鮮左口魚裙邊壽司, 裙邊燒得夠焦香, 魚油緩緩滲出, 層次豐富, 加上少許黑魚子, 味道提鮮拖羅壽司, 油脂豐盛, 雖然未至於入口即溶但非常細膩, 下層手握壽司飯份量不會太大廚房位置中間, 一邊是四人座位, 另一邊是沙發坐位, 整齊帶時尚感店員有禮令人吃得開心, 夏天游完水再過黎休息一下, 非常舒適 continue reading

TGIF! 星期五收工係要食返餐好黎迎接美好既weekend,所以同朋友特登揀左呢間係淺水灣既日本菜。平日既淺水灣寧靜少人,收工黎食晚飯再係海邊沙灘行下,真係好放鬆好chill。22Gin 酒味香但比普通cocktail易入口 味道清新 Elderflower Gin 聞落有淡淡既花香,容易入口。Spinach Salad 菠菜新鮮加上日式麻醬,開胃又健康既日式appetizer Fresh Salmon with Okra 三文魚新鮮肥美,配上秘制Homemade醬汁,新鮮度再提升。另外以秋葵伴碟,清新爽口,五分鐘內清哂成碟。Sushi Platter 共有八款壽司 包括 三文魚、深海磁魚、油甘魚、佐口邊魚、拖羅、吞拿、海膽、凡立貝。 魚生既鮮美係滿分,食完覺得自己身在日本,好食程度媲美日本築地。係香港食到日本味道,食完呢板壽司係香港再食唔落其他,實在太好食!呢到其中一個主打菜式就係串燒,所有串燒都係用和哥山備長碳黎烹調,食落真係比起出面既串燒更香。Chicken Soft Bone 賣相不錯,燒得幾靚而且炭燒味勁香勁爽口。Green Pepper 同樣燒得香,朋友唔太食辣椒都覺得幾好味。OX Tongue 牛舌味極重而且爽口,燒得岩岩好,值得一叫。Black Snapper 主菜之一,立魚亦係用炭燒既方法烹調。立魚新鮮,炭燒味香而不蓋過本身既魚鮮味,出奇地唔會好乾身,好食到成條清哂。Minced Chicken Skewer 免冶雞肉煎得好香,配以日本醬油同埋生雞蛋黃,味道係水準之上。Tiramizu 精緻盆栽賣相,綠茶紅豆味,口感勁smooth亦唔會太甜。Panna Cotta 草莓醬鋪面既奶凍,奶味好濃好滑,唔錯。總結黎講餐廳以日式炭燒同埋新鮮食材做賣點,餐廳地點可以話係遠離煩囂,最岩收工揸車入去relax或者放假入去chill下。 continue reading

2018年第一天1月1號中午全家六人(兩大,三老,一細)高高興興地去南灣The pulse商場,見到呢間日本餐廳就決定入去食lunch。經理安排一間房話免最低消費。叫完餸之後Waiter問大家飲乜嘢,我話要茶。Waiter 攞嚟兩壺茶。埋單時發現兩壼茶要收$100,我問埋單嘅職員是否每位要收茶費,佢講唔係,係每壺茶收費$50。仲話一般係一個人一壺茶。我話OK就俾咗一張信用卡俾佢埋單$1793。當該名職員攞信用卡單返嚟簽名嘅時候,我向職員提議如果每壼茶要收$50應該首先向顧客表明每壺茶的價錢,等顧客去選擇要一壺或兩壼茶。嗰個職員對我講”如果我哋同你講幾多錢一壺茶,驚你俾唔起,而且你仲係用間房”,然後都未等我簽信用卡單就走左出去!我即刻火都嚟埋!追出房門問佢係乜嘢意思?點解可以同顧客咁樣講嘢!佢連望都唔望我。我要求見經理,結果經理過嚟問我發生乜嘢事,我將事情經過話俾佢聽。經理然後去問嗰個職員,之後返嚟話可能大家有所誤會。經理同我解釋佢哋有俾drink list Menu,意思係茶在drink list 上已經標明價錢。我話俾經理聽我只不過是提個意見,並不是要佢哋唔收我茶錢。每壼要收$50應該講比顧客聽,等顧客自己去選擇要幾多壺茶。而且一般日本餐廳飲茶水都是免費。經理最後有道歉,但是當時氣氛已經非常之差!一間苦心經營嘅餐廳,餐廳廚師用心炮製食物。但係食物幾好食都無用,俾一個倒米嘅伙計三兩句說話就趕走一個本來會再光顧的顧客。希望呢間餐廳嘅老闆可以好好地培訓一下員工對待顧客的態度。光明磊落地令到顧客知道消費嘅價錢,虛心接受顧客的意見,這樣只會贏得顧客的支持和諒解。現時香港食肆競爭巨大,想用茶錢掠水絕對不是經營之道。倒不如努力注重食物質量,服務態度,贏得顧客的讚賞,令顧客覺得就算貴都是值得的! continue reading
