This place has absolutely everything you can ask for!  It is a bright, airy with chill vibes and cozy decor.   It is situated at the The Pulse - Repulse Bay that you can overlook the beach and sunset right in front of it!  You can even smell the ocean with the nice breeze that comes into the restaurant!  Crispy Codfish Wafers (HK$50)Don’t let this simple presentation deceive you!  It was slightly grilled to crisp, with a wafer-like texture and just a hint of briny saltiness.  This crispy codfish wafer was truly enjoyable with Japanese sake or cold beer. Tofu Salad with Sesame Dressing (HK$130)This is a healthy and delicious salad which packed with sesame flavours.  Tofu and the sesame dressing are really complemented each other.  The healthy greens were brought together nicely and making it into a delightful starter!Hamachi with Ponzu Sauce (HK$128)Beautifully presented hamachi Sashimi with ponzu sauce.  The buttery hamachi was finely sliced and topped with spring onions and petals of chrysanthemums.  Dipping with the ponzu sauce which carried a subtle yet lovely citric flavour that didn’t overwhelm the flavour of the sashimi itself.Shoku 3 Tuna (HK$180)All I wanted was Tuna .... 3 kinds of tuna:  Akami , chutoro and otoro.  The best of the best was definitely the otoro, it was well marbled and literally melt in your mouth.  With a tiny gold flake on top, every bite worth your money in terms of quality!Dragon Roll (HK$160)This Dragon rolls were well presented and colourful.It was wrapped with quality Japanese Rice with Ebi Tempura inside!  What's more are these flavourful crab roe, unagi and avocado on top.  The multiple layers create a harmonious and well-rounded flavours!Stacked Yuzu Barbecue Ribs (HK$350)The BBQ ribs was beautifully tender and sweet, cooked in a yuzu and BBQ sauce.  The mixed sauce was absolutely incredible, with the flavours and textures working perfectly together!  The bitter-sweet yuzu flavour tang-talises our taste buds and it definitely leaves a great impression to us!Door FrontInterior Menu continue reading

This Japanese restaurant is located in Repulse Bay, specializing in the grill dishes and using the binchotan, the 'long-lived' oak charcoal that didn't give out too much smoke and able to heat for much longer period, making it ideal for grilling to ensure good consistency and quality. The restaurant is facing the beach on the ground level, while not having much of the view with the public changing room right in front, still got a good glimpse of the nice ambiance of relaxation and fun. On a normal Wednesday evening the restaurant is full and fortunately we have made reservation so didn't have to wait. The decor is nice and seated at the sofa it is comfortable and cozy. We ordered the Crispy Codfish Wafers ($50) to start, which are thin slices of toasted codfish, and pairing with the mayonnaise is really a great snack, particularly suitable to pair with beer or cold sake. We couldn't help but finishing one after another piece, and in no time the plate was emptied. Next we had the Pot of Clam in Sake ($268). Served in a steaming casserole pot, there were plenty of leek on top to bring in a nice delicate fragrance. The sake soup is a bit too sweet however for my liking, but the restaurant has put in some seaweed to enhance the flavors. The biggest issue is the clam though, which are quite rubbery in texture. Not sure whether it is because the clams are not fresh but frozen ones? And considering the price this one I certainly won't recommend. Trying the sushi next, we ordered the Deluxe Sushi Platter ($580). There are a total of nine pieces plus the roll, it offers a good assortment of different topping, from fatty tuna, toro, salmon, yellow tail, scallop, flounder fin, botan ebi, salmon roe and sea urchin, along with chopped fatty tuna roll. The ingredients are fresh and nice, and considering this is not a sushi restaurant the quality iscommendable, and help to rescue some of my lost faith from the earlier clam in sake. Then comes the signature dishes from the grill. First we had the Grilled Chicken Thigh ($70) and Grilled Chicken Gizzard ($48). There are two skewers each, with the chicken thigh tender and grilled perfectly, maintaining the juiciness of the meat and a slight charred surface dipped in the sauce. The crunchy gizzard gives a good contrast in texture, seasoned well and tasty. Imagining sitting in a relaxed atmosphere, watching the sunset in the beach while enjoying a ice-cold beer with such would be anyone's dream. Last is the Grilled Black Snapper ($580), the daily catch flying in from Japan. Taking a fair bit of time to prepare, the fish is seasoned with salt and grilled slowly by the binchotan, giving a crispy skin while keeping a moist, delicate meat underneath. With a yuzu vinegar as dipping sauce, the taste is great indeed. My only comment is that the fish might not be the best in quality as the meat texture lacks a bit of the firmness I expect from the best black snapper. But I mean it positively for the restaurant to excel.The services are decent and maybe the staff can interact a bit more with the customers to make them feel more welcome, but overall they are still friendly. The bill on the night was $1,756 without any beverages. Fairly reasonable considering the location, and ingredients chosen and overall experience, and with the improvements I highlighted the restaurant can really move to another level. continue reading

還記得年青時拍拖喜歡跟所愛到沙灘漫步,貪其環境氣氛浪漫,兩口子聽聽海浪聲,夜闌人靜俏俏話,享受一下獨處的時刻。到近年持續單身,加上年紀大了,那種情懷早已不再,所以亦很久沒有到過海灘了。前陣子來到淺水灣The Pulse地下,向著海灘的一邊,發現其中開了不少食肆酒吧,就像是一個小區一般,而當中的一間日式料理,入口處掛著一個「備長炭使用店」的木牌,更不時傳來陣陣誘人炭燒香氣,筆者造訪當天為平日夜晚,但見店內仍坐得半滿,相信必有其過人之處,遂決定內進一試其龍與鳳。餐廳面積頗大,正中央設計成一開放式廚房,放有一個大炭火爐不停地燃燒著,還不時傳來陣陣原始炭香,極之誘人。由於選用了備長炭,加上通風系統設計得宜,坐在裡面完全不會感到炭火的熱力和焦煙,而且座位寬敞舒服,環境優雅時尚,其中還有三間私人廂房,讓客人能放鬆地在內享受美味時刻。在日本選用備長炭製作串燒燒物的店舖多是味美的保證,皆因備長炭燃燒時火力強猛,散發出來的高溫能迅速鎖緊食物的鮮味和肉汁,而且無煙耐燒,所以高質食店均會採用。細閱餐牌,原來除了燒物以外,這店還有供應刺身壽司、沙律意粉等前菜主食,亦有提供多款不同的酒類選擇,有著新派洋日料理的影子。先來一客鱈魚干作佐酒小食,即叫即燒的鱈魚干上枱時還暖暖的,咬落鬆脆,有點像餅乾的口感,但咀嚼到最後會滲出淡淡的鱈魚香,沾上伴碟的日式蛋黃醬同吃,添上點點鹹酸味道,更顯鮮甜香口。接著的是牛油果沙律,牛油果份量十足,青翠軟熟,配上沙律菜的爽脆和自家調製藜麥沙律酸汁的酸香,感覺清新開胃,健康脫俗。跟著當然是其中的一款主菜登場,特上壽司盛,其中包括八款時令手握壽司和一款小卷。當天的廚師選擇為:大拖羅壽司,入口即溶,脂香滿瀉。油甘魚壽司,師傅選用了魚腩位置,鮮甜肥美。三文魚壽司,光澤潤麗,軟嫩鮮美。深海池魚壽司,Q彈魚香。赤身壽司,魚味濃郁,光澤鮮味,不是一般經氮氣處理的貨色可比。北海道帆立貝壽司,師傅預先蘸上了少量檸檬汁辟腥,入口鮮甜軟彈。牡丹蝦壽司,爽彈漿口,蝦香鮮味。醬油炙燒左口魚裙邊壽司,經炙燒過的魚邊,魚油徐徐溶解滲出,油脂豐盛,配上醬油的調味更顯嫩滑脂香。馬糞海膽壽司,鮮甜甘香滿有海洋氣息。吞拿魚腩蓉小卷,吞拿魚腩蓉佐上青瓜絲和大根漬同捲,入口米香清爽。整盤壽司盛的鮮美程度爆燈,加上壽司飯的調配和師傅的握壽司手法均十分到位,飯糰的鬆緊度適中,配上新鮮的魚生,味道口感均相得益彰,實屬高級日式料理的出品層次。冷盤過後當然要來點熱食暖暖胃,而既然是因著炭香的吸引而來,那又怎能錯過這裏的燒物呢?!炭燒雞軟骨,雞軟骨爽脆帶嚼勁,多餘的油脂盡被炭燒的熱力融化,入口帶著淡淡的炭香,擠上點檸檬汁減低燥熱感,更有BBQ的風味。炭燒明太子雞翼,雞翼去骨釀上新鮮明太子調味,燒得皮脆肉嫩,入口鹹香多汁,香口惹味。最後來一客海膽三文魚籽扁意粉配自家製黑松露忌廉醬作為結尾,店員將意粉送上來時已傳來陣陣黑松露幽香,份量十足的海膽堆滿在扁意粉之上,側邊伴上為數不少的黑魚籽和三文魚籽,只看賣相已十分誘人。扁意粉煮得煙韌彈牙,佐上海膽的甘香軟滑和三文魚魚籽的鹹香脆彈,味道是出奇的搭配,而那自家製作的黑松露忌廉汁絕對是其中的幕後功臣,大廚以黑松露、忌廉和白酒調製的醬汁,幽香濃稠當中帶點白酒的酸香,中和了整道意粉的濃膩感,但又不失幼滑Creamy,讓人吃過停不了口,十分不錯。愛好杯中物的筆者,當然也點來了日本清酒作為佐餐之甘露,這裏的House Sake價錢雖較外邊一般的為高,但質素也相對地提升了。雖然只是特別本釀造,精米步合為60%,但入口仍算順滑,淡麗中滿有米香,用來佐著燒物同吃,別有一番風味。整餐的出品算很高質,店員的招待亦很貼心專業,收費雖屬中上價格,但能在這麼悠閒的環境下享用晚餐,吃飽後還可對著大海散步,暫離繁囂的都市慢活一下…偷得浮生半日閒,夫復何求?! continue reading

今日有朋自遠方來,帶去佢淺水灣行下~在The Pulse 找地方吃飯, 想找點比較特別的最後來了這間使用備長炭做日式燒烤賣點的海邊餐廳 =3=酒壺貼心設計 可以保持清酒的溫度又不會淡化酒精成分Sashimi 肉質新鮮一流 蝦肉鮮甜無比 正啊!因為本人不吃帶子, 所以換了三文魚給我們這款Shasimi plaster 性價比極高, 重點是off menu的!!!想試的朋友記住和餐廳查詢有一細節位經理特意提醒 - 後面有看到紫色的花嗎?它叫花穗, 加在sauce 中食配白魚吃的味道很清新特別!木魚炸豆腐酸汁加上蘿蔔蓉, 豆腐內滑外脆, 不會有油膩感覺汁燒墨角筒一定要試用備長炭烤的墨魚筒, 墨魚肉質鮮甜, 燒的功夫一流 不會燒得太老, 口感很好, 會讓你一塊又一塊放進嘴裡, 停不了手日式豬肉煎餃餃子有點偏淡, 但配搭上醬汁就剛剛好。一點小失望的是麵頭的麵有點生的感覺, 可能因為生煎的關係。香甜烤玉米玉米本身的甜味加上炭燒的燒烤味 絕配!免治雞肉配新鮮鵪鶉蛋雞肉煎得剛剛好, 醃製的味道一流, 加上新鮮的鵪鶉蛋 又滑又嫩梅子冷烏冬最近天氣超熱!員工推薦了這道菜 ,梅子可加可不加。本人覺得梅子很酸 如果喜歡吃酸的朋友一定要加喔, 因為梅子味很濃郁 。 烏冬麵彈牙有嚼勁, 配上日式紫菜絲, 好有滿足感最後值得一提的是, 這邊的waiter/waitress 都很貼心,會主動推介菜式而且又一眼關七,每一道菜後都會換盤子,總時在適當時候為我們加添茶水, 吃得非常舒適開心  continue reading

小編上篇既食評就係話去左間極衰服務既lighthouse、d怒火呢燒到hum hum聲!真係要即刻飲杯嘢下🔥囉落到The Pulse地下(對著海灘)一排都係食肆、何須受氣呢?呢間既duty manager好主動問我地幾多人(我地5個人仲o係門口睇梗唸梗去classified好定呢度好)後生靚仔經理已經出黎主動問、又安排張室內間房比我地(正常應該要minimum charge既、非常識做!要比10個like佢啦小編心唸even受氣都要受靚仔氣囉我地每人嗌左一杯嘢飲,叫左d串燒,佢地用備長炭燒既食物小編覺得唔錯雖然時間耐左d不過我地都唔趕時間,無所謂啦白鱔其實可以再肥美d、粟米和青椒都好好味,我大哥大嫂就話雞軟骨好好味,any肥、成個用餐體驗都唔錯,服務好好同埋坐🉐️好舒服,下次入淺水灣都一定encore呢度 continue reading
