湯底很白濁,質感稠稠的,帶點膠質,並傳來陣陣的豬骨香味,非常誘人。由於豚骨湯底十分濃郁,吃到底時感覺有點膩,這時把紫菜吃掉,轉換一下口味,解除湯底的油膩感。最後我把整碗湯喝掉也不感口乾,感覺很真材實料。

吃麵時,湯汁會附在麵條上一併品嘗,而麵條的硬度會影響麵與湯的平衡感。因為極細麵容易吸收湯汁易糊,而很多餐廳都未能控制好麵的軟硬度,所以我平常只吃粗麵。然而這碗博多系極細麵拉麵以硬度稍硬來呈上,保持拉麵的勁道,不會被湯汁蓋過它的美味,口感非常好。

叉燒選用肩胛肉,帶筋又帶點脂肪,肉味較豐富。肉質被燉煮得軟糯,而且比一般叉燒切得更薄,更能吸收湯汁。薄薄軟柔的口感吃下去都不覺得肥膩,更多一種少吃多滋味,讓人吃過翻尋味啲感覺。

「幸」保留了博多拉麵知名的「替玉」制度。「替玉」源於福岡博多地區,拉麵店店家為了防止極細麵糊掉,麵條份量較少,待客人吃完覺得不夠,再免費追加麵條。

老闆知道我們點了替玉,特意提醒我們不要一次把湯喝掉。雖然朋友留了湯和辣蕃茄醬,但追加的麵條沒有起初吃的那麼入味,大概麵條吸收湯汁的時間不夠,下次讓麵條在湯裏放久一點,味道會更好。

Haven’t had a good bowl of ramen 🍜 in a long time 😆 decided to check out this small slightly hidden shop in Fortress Hill @shiawaseramen 😋 this shop is like the ones in Japan, not a lot of seats and not too loud 😆 people slurp and go 😂 overall, the ramen is really good here but i wouldnt travel all the way to fortress hill just to eat this bowl of ramen 😬 the price is pretty decent too considering that most ramen places are all over $100 now! definitely if you live nearby, definitely give it a try!

兩款拉麵除咗湯底之外,其他所有嘢包括食材同配料都一樣。兩個湯底比較起來,鍾意海老湯底多啲,雖然加咗味噌但係蝦味仍然一樣好濃好香,而櫻花蝦乾嘅份量都好多!湯底質感比較濃厚,但就咁飲個湯又唔會覺得太鹹,再加埋大蔥同蒜後都變得好香好好飲~麵條方邊,呢度用嘅係幼身麵條,口感比較軟,掛湯能力好強!而肩胛肉係薄切,唔會好肥/好乾/好鞋,份量都合理嘅,但又冇話好食到我覺得超級有驚喜咁囉🤣成碗拉麵最有驚喜嘅係糖心蛋!!蛋白超級嫰滑,蛋黃部份香濃得來而都唔會過熟,好正🤩

發現自己好少食拉麵,個日經過北角見到依間裝修好日本的拉麵,就入左去食晚飯了。全間舖都係以啡色木為主,感覺同日本地道拉麵舖有幾分相似。雖然細細間,但就有溫馨的感覺。拉麵款式唔算多,就係眼睇個幾隻,小食選擇更加係少,令我覺得依間舖主打拉面,唔做side track野。叫左一碗黑豚同一碗櫻花蝦拉麵。師傅好快就煮好,我本身好中意食溏心蛋,所以加左粒。一咬開,食到好香的蛋味,同出面只做到溏心但冇蛋味的舖頭完全唔一樣!咬一口拉麵,若果以滿分為十分的拉麵質感,我會比7-8分,原因係佢都有日本個種感覺,咬落去唔會淨係得面粉味,加上櫻花蝦湯,不會太咸,恰到好處。至於豚肉,也是半肥瘦的,我平時會咬哂d肥肉出來,但見依到d肉都唔算太肥,又有香味,所以全部都食哂!至於朋友的黑豚拉麵,佢話都好香蒜味,唔會太咸,個湯仲好好飲!最正就係我地飲左好多湯都唔頸渴,證明佢好少味精。依樣值得推介!之後每人叫左一支汽水,靜靜地坐下傾下計又過左一個晚上。

舖仔細細,坐位唔多。Menu選擇都唔多,只有白豚,黑豚,赤豚,味噌豚骨同櫻花蝦。 白豚拉麵($78):都幾重豚骨味,唔會太咸,豚肉薄薄兩大片,質感軟滑,一整隻溏心蛋,煮得啱啱好,滷得幾好味,拉麵軟硬適中。朋友食黑豚,試左兩啖,湯底會更複雜同濃郁。整體味道唔錯,會再幫襯。
