這星期超凍,立刻去保暖一番。好擔心這個店會關門,好彩發現他們還有營業。還可以見到親切的老伯伯們。專程由中環去上環吃蛇羹,午餐都唔食,第一時間坐低叫一碗暖暖的蛇羹($65),好在剛剛有人走,立刻有位坐。我們叫了一人一碗蛇羹,飲了少少,便加了一點點蛇酒。加了蛇酒的蛇羹提升了蛇羹的味道,特別覺得好飲,一碗蛇羹有兩個層次,10分滿足!希望他們可以繼續這個傳統,我們仲可以繼續食這些傳統食物。

This is a classic snake soup spot in Sheung Wan. It’s been opened for more than 40 yrs. They serve nothing but Snake soup and their home brew Snake wine. Compare to many other snake soup place in HK. I’ve found 蛇王林 has more rich taste and the snake meat is more tender, soup is more lighter than gluey. Get a shot of the homemade snake wine. Very smooth taste and the heat will come straight from your body. Price point is reasonable compare to the one in CWB and Central and has much better quality

天氣凍凍地所以中午食碗蛇羹先,這間蛇王林,一入到店舖就知道應該係有返d歷史嘅老舖,在店外養了一條青色的毒蛇,入到鋪頭內光線不算是很光猛,而且裝修有一些很古老的櫃桶,每一個櫃桶都貼住一張張寫住毒蛇的紙,我相信櫃桶真的放有毒蛇,所以都不敢坐近櫃桶的那邊座位,另一邊,架上裝住一支支蛇酒。而廚房都有個伯伯攞住一條條的蛇煎皮拆骨製作蛇羹。熱辣辣的蛇羹很快便送上枱上,蛇羹都配上薄脆和檸檬草一起上,雖然蛇羹細細碗,但是裝滿了滿滿的蛇肉絲和木耳絲,加上薄脆一起食脆卜卜,蛇肉又唔會有腥味,所以冬天食碗蛇羹真的啱啱好!

第一次去蛇王林,似乎佢只係賣蛇羹,無其他。去到見要排隊,不過好快就有位,因為我見 d 個個客都好好,好快食完就走。每碗 $58. 我 2 個人入去佢就問1碗定2碗,完全唔會嫌幫親少或者係阻住佢d 位。我地叫咗 2 碗。佢 d蛇羹好足料,啖啖蛇肉,木耳絲,冬菇絲。完無味精既感覺,味道都適中遍淡 (depends 你食野濃唔濃味) 。之前係中環食過一間 d味較到好甜,又少蛇肉,仲要貴過呢間。d檸檬葉唔會太乾身,薄脆唔會太油。好味。食咗成身暖晒。

身為蛇女,卻有幾年沒吃過蛇羹了。是日午飯時間到上環禧利街的生記鮮魚湯米線一趟,得知要等上十幾個號碼,於是和同事周圍閒逛。赫見對面的蛇王林,我像逛旺角寵物街般,好奇過去望望盤纏著而不動的蛇。興致勃勃的問同事究竟蛇是什麼味道,因為我真的忘記了,味蕾是沒有記憶的。「食碗囉!可以share~」,職員道。一碗$55不算貴,當是午飯的前菜,於是我倆踏進了這百年博物館暨動物園。蛇王乜蛇王物,十隻手指都數不完,全港該有廿餘家。過百年歷史的蛇王林在openrice 內不是獲得最高評價,卻是全港最大的活蛇供應商,和蛇王芬一樣都算是數一數二的蛇店。以前吃蛇不像現在般唾手可得,蛇王風光的年代或許已過,店中仍掛著創辦人羅大林的相片(所以是蛇王林,「林」是名而非姓)。相片殘舊而泛黃,貌似古裝片中大宅裡掛著的祖先相片吧?千真萬確而不是贗品,白天看到的話當然沒事,但試想像晚上看到的話…(心虛者勿進?)百年過後,舖裡的主理人是「第三代」,不是子承父業,只是打工、抵得諗的班底。單邊的牆放有幾棟裝有毒蛇的木箱,還好是99% 密封的,察覺不到內裡有生物動靜,冬天是蛇的冬眠時候嘛(我都應該冬眠…)。滿頭銀絲的麥師傅一點都不似八

單邊的牆放有幾棟裝有毒蛇的木箱,還好是99% 密封的,察覺不到內裡有生物動靜,冬天是蛇的冬眠時候嘛(我都應該冬眠…)。

二話不說,先點來一碗蛇羹,讓小妹我見識見識。很多老字號都不讓二人只點一客食物,但難得職員提出,二人吃一碗的生意都照做;店內有空位,不阻著店家做生意的話,其實是皆大歡喜的。我倆還有正餐要吃,少嚐便好。據說每天限賣50碗,欲免向隅。

先端來的是佐蛇羹吃的薄脆檸檬葉。有些人甚至喜歡加點菊花瓣來中和蛇羹的燥熱,不過薄脆和檸檬葉是最基本的配料。薄脆用以在滑溜的蛇羹中增加口感,就像吃粥時佐以薄脆一樣;味道不用複雜,提味只需一點南乳鹹香。切成幼絲的檸檬葉用以辟腥,但我看不宜放太多,會搶去蛇肉的鮮味。

幾分鐘後,一碗溫熱的蛇羹奉桌。簡單的藍白瓷碗,盛著廣東人紅極一時的補身之物。坐在活生生的毒蛇旁吃蛇羹,殘忍乎?

湯頭色澤頗為清澈,像生粉芡,是80%透明度的米糊顏色。通常看到別家的蛇羹相片,多是像碗仔翅般偏啡的,桃花源小廚國金軒的都是偏啡的例子,它們都有用上老雞、豬骨、金華火腿等能帶出濃甜的村料熬製;相反,蛇王林沒有加入上述的食材,連藥材都沒有,湯頭走原汁原味的簡約路線

足料非常,一勺盡是配料,最重要的是呈奶白的蛇肉絲滿滿,絕對不是靠薑絲、木耳絲和陳皮絲等配料濫竽充數。配料和蛇肉絲同樣細緻,粗幼一致,加上微帶濃稠的湯頭,滑不溜口。就像太史「五蛇」羹,加入了多種蛇肉,我當然吃不出是哪個品種的蛇。

最易漁目混珠的,當然是最矜貴的蛇肉絲,呈奶白的很容易把雞絲混入「扮上菜」。細味蛇肉絲,其實不難道出和雞絲的分別。紋理根本不同,蛇肉絲帶著柴魚般的瓣肉質感,在舌頭和上顎間輕壓便變細碎,而雞絲卻是長身而不易斷的。把蛇肉去骨除筋後拿去蒸,因此蛇肉絲的口感順滑幼細。蛇肉乃刁鑽的野味,的確少吃,原來味道不是突兀的,沒什麼腥味,很易入口

木耳絲夠爽脆,去腥除羶的陳皮絲亦能添上陳香。即使湯頭簡單,亦不失蛇肉的鮮甜味;喝罷暖呼呼而配料豐足的湯羹,且不理配料的藥效,頓時已能發揮暖身之效。

吃完一碗蛇羹才不過是十分鐘,是時候回生記看看叫到什麼號碼。這些木箱還是神秘的一隅,透過小孔當然看不到內裡乾坤。正在拍照時,職員見我這個大鄉里甚為好奇,主動提出開其中一個箱內讓我看真蛇!

蛇王芬要$120 一碗蛇羹(真的是一碗,不是一鍋),這裡才是$55,相宜多了。或許是湯頭的工夫和用料有異,實不能相提並論,如果不是為了其藥效而吃,$55一碗是小嚐的合理價錢。我們這代年輕人,未到生小孩前說要進補又怕被說老套,倒頭來靜悄悄的去健康工房買個什麼燉湯,不會想到要去吃蛇羹;加上醫學較以前昌明,想進補都未必會想到去吃(或信)蛇羹,這些紅極一時的蛇店恐怕難重拾昔日的光輝了。

談開蛇,兔子都算是野味吧?步出蛇店,跟同事說:「下回讓我帶你去吃兔子?」同事瞪目結舌。其實地點離蛇王林不遠,就是文咸東街的Trattoria Doppio Zero。那兒的rabbit ragu,比蛇肉更像雞肉的口感吧;當然,兔子樣子比蛇可愛得多,亦殘忍多了。
