十一月尾的米芝蓮發佈會是飲食界的一大盛事,每年各大小餐廳都期待著摘星的榮耀,說來這兒已拿了多年二星的殊榮,今年亦不例外,獲得二星榮耀。唯一不同的是他們起了小小的變化,就是有新任中菜行政總廚上場,他就是有著多年經驗及獲獎無數的張浪然師傅,實行以他的經驗及技藝把莫師傅的熱誠傳承下去。 新廚上任,未嚐他的拿手好戲時,呷上一口【杞子菊花茶】來打開胃口。隨即美侖美奐的頭盤先來,有【千絲黃金百花丸】、【蒜泥茄子】、【蔥汁帶子】及【清酒南非鮮鮑魚】四款。先由清爽的清酒鮑魚開始,軟腍滑溜,喚醒一下味蕾;蔥汁帶子吃來則非常爽口,輕輕掛上青蔥的香味;再來就是炸得香口的百花丸及香辣惹味的蒜泥茄子,組合起來,清新得來帶點刺激,胃口大開。 來到湯羹環節,此時有什麼可以比上一道如清泉的【松茸海底椰螺頭燉雞】呢?湯料十足,全是鮮甜的味道,加上有著松茸的清幽香氣,滋潤得來又令人滿足。 中菜往往會被人覺得一成不變,其實也不是,【脆帕爾瑪火腿錦繡星斑件】就是一個例子。用上巨大的星斑起肉,斑件肥大厚肉,蒸煮的火喉真是恰到好處,鮮嫩無比,加上烘至乾身的火腿乾,帶來咸香的鮮味,簡香單單已突出了魚的鮮味。 【甜梅菜焗雞】有著家的味道,用料簡單,只是用上新鮮的農場雞,憑藉師傳的精湛技藝,將雞肉烹調得依然嫩滑,而雞皮更吸收了梅菜的美味。可是,師傅為了進一步吃到此道的精華,以小米來配襯,令整體感覺更為美妙,值得推介。 本來平時來到此時,都是一道純蔬菜,可是師傅卻用上蟹肉的鮮味來製作【米湯鮮花蟹肉浸豆苗】。豆苗吸收了蟹肉及米湯的鮮香,吃起來特別幼嫩,而且用上極為鮮甜的花蟹肉來,清淡得來很鮮味。 只看餐牌覺得單尾沒驚喜,可是當【原個蕃茄和牛崧炒飯】上來時,真是驚嘆萬分。概念新穎,令不吃蕃茄的小弟也吃得津津有味,將茄汁與炒飯混合後,更有種親切而麻甩的感覺,莫非這就是男人的浪漫之一的碟頭飯?哈哈 甜品拼盤沒有誇張的賣相,亦是較為平實,但平實中又見不平凡,好像相中的紅菜頭炸煎堆,甜度適中,配合清潤的生果,絕對為是晚劃上完美的句號。 每次臨行之時,都要嚐嚐香宮飯後的petit fours,極為華麗的擺設,盛載著美味的中式糕點。 continue reading

每年母親節,梳乎厘都會帶媽媽慶祝。今年便選擇了多次獲得米之蓮二星的香宮。環境佈置以「宮」自居的香宮,裝潢如中國皇宮般極富氣派。店內顏色以中國人認為代表吉祥的紅色和金色為主。牆上掛了多幅國畫,角落放置了古董,使人目不暇給。環境舒適寛敞,枱與枱有充裕的距離,食客享有自己的小空間。餐牌選擇正宗粵菜,包括點心、海鮮、湯品和小菜。餐響體驗杞子清茶 先奉上歡迎茶,享受甘甜芳香的杞子茶,欣賞著小杯上的透光通花,和詩人李白《將進酒》內的「葡萄美酒夜光杯」有異曲同工之妙。菠蘿叉燒包 HKD 52表層酥脆,麵包鬆軟,叉燒餡料沒有多餘肥膏,燒烤醬比例剛好,也不會過甜,整體味道平衡。脆皮BB乳鴿 HKD88脆皮乳鴿皮烤至顏色紅亮、香脆,肉質細嫩,肉汁豐富。黑松露燒賣 HKD 78黑松味道香濃,蝦肉打得爽口,夾雜一粒粒肉丁。香宮鮮蝦餃 HKD 78晶瑩半透明的皮,若隱若現呈現著餡料的顏色,蝦肉蝦膠份量足,沒有過多的肥肉。中間綠色的小蝦餃,餃皮則韌了一點。黑椒和牛腸粉 HKD 98腸粉滑溜、和牛鮮嫩。海味竹笙花膠灌湯餃 HKD 108相比傳統非湯浸的灌湯餃,梳乎厘更愛變奏的灌湯餃。香宮的灌湯餃,餃皮厚薄均勻、不韌不綿,湯頭鮮甜不油膩,膠質重,像是有養顏的功效。蛋黃千層糕 HKD 58一層層甜糕夾著細碎的鹹蛋,層次分明,鹹甜適中。服務質素服務員笑容可恭、表現殷勤,而且不斷為我添加熱水。總結三百多元一位,能在這舒適的環境,享受高水準的服務和米之蓮二星餐館的菜餚,物超所值。 continue reading

老豆生日飯兼冬至,諗住食好d去香宮。5個大人,叫咗一個節目套餐,一個素食餐,另外四個餸。上菜速度慢到呢,7點落單,8點來個湯,到9點先上到湯飯,真心接受唔都。老豆的米芝蓮餐未到,食片皮鴨已食飽咗,飽時食龍肉都冇味。下次不會再來! continue reading

好一段時間無寫食評,今日係一個值得慶祝的日子,由於某原因,今日嘅晚餐打算享用中菜,所以打算搵吓近期出爐嘅米之蓮參考一下。响openrice逐間搵吓,誤打誤撞竟然發現呢一間高級中菜同openrice合作有一個優惠套餐。當然仲要幸好仲未滿座,先有機會親身感受是否物有所值。利申,我並非幫openrice賣廣告响一間二星米之蓮晚餐,食物質素非常高唔在講,再加上五星級酒店服務,每位都係520,真係有種衝動再食多次,不過仲有好多同樣高質素嘅餐廳等緊我,要遲啲先喇! continue reading
