一整個季度,大家都在艱難中苦苦支撐。是,困境總會過去,但我又能捱到太陽再出來的日子嗎?「要活下去」,想「生」,就會有「機」。把自己多年受主顧們喜愛的菜式,變成放題「盡地一煲」,就是這坐擁多年「米記」稱譽老店的招數。最初反應淡靜,後來經媒體曝光,便引來不少初試的客人,也不乏忠粉撐場,總算有了成績。今天連假,便把補祝和預祝生日、母親節等一次過同慶 - 就四個人!我們甫安頓不久,已經有菜式上桌!不用點,送的:每人一隻新鮮炸起的乳鴿!四人中有兩位不吃,那我不客氣,多吃一隻了!熱騰騰的脆皮,咬落滿有肉汁,對餓著肚子到中午的我,真是及時的慰藉。除了乳鴿,放題還有幾款每人一份的菜式,包括羹湯和粥,把這些都吃完,您大概已飽了一半!接著是「當店自慢」、每枱必點的生炒排骨。既是一饗老饕的「名物」,評鑑的水準自然要提高一些。個人覺得若汁少一些、排骨炸得更脆身,效果會比較好。我心中的標竿,是原位於中環金華燒臘旁商廈樓上的革新會,其貌不揚、售賣兩餸一湯、白飯任裝的打工仔套餐,但做出連食慣好嘢、那天「紆尊降貴」陪我們同去的主管,都大讚「好食到耳仔郁」的生炒排骨!可惜金華現在已經消失,至於革新會,還是當日去吃飯那個模樣?接下來是吃齊放題內的「三雞」:南乳碎炸雞、招牌鹽焗雞、東江沙薑雞。一直都是吃肉,不吃到撐才難!這放題難得的是,把一些平時不易吃到的菜色,都放到任點清單之上:梅菜扣肉固然是令人又愛又不敢亂來,還有蝦子柚皮!席上長輩說自己做得比這更好,不過畢竟是工夫多,我們還是乖乖先吃完面前這碟,不欲老人家辛苦了!云云菜式中,值得特別一提的是兩款魚類菜式,特別是煎黃花魚,店方選用了較細條的魚,做出來效果相當不俗,甚至超越了凡到小南國等上海菜館必點的小黃魚!腸胃已傳來訊號,但還有些想吃和「翻兜」的,要勞煩一下肚仔再接再厲了⋯由頭帶到尾,盡興的代價是:食滯了,之後胃脹了幾天!下次再去吃,會點多幾碟菜吃,做好平衡⋯哈! continue reading

同前輩食飯,對方指明要到灣仔生記。舊式粵菜格局,連伙記招呼都偏「舊式」,斟水斟到「呯拎啪冷」,但勝在菜式交到貨。枸杞浸豬潤 - 豬潤超厚身,咬落嫩滑夠味,一啲都唔腥,非常出色!另一味薑蔥桶蠔亦表現不俗,一碟四件蠔,份量唔多但勝在夠大隻,蠔有脆邊夠香口,咬到中間極肥美,蔥同薑就咁食都幾送飯。煎藕餅用嘅豬肉偏肥,咬落咸香有油份,加了馬蹄增加了口感。反而最期待嘅咕嚕肉就顯得平平無奇,教人失望。最後點了兩碗肉丸泥鯭粥,一入口嚐到咸咸米香,即刻喚起兒時在舊式粥店食嘅回憶,前輩說應是加了腐竹,我懷疑係加左皮蛋。甜品是附送的白糖糕,久違的兒時點心,微甜帶少少酸,吃的更多是回憶。 continue reading

今晚同客食飯,佢想食得地道又夠鑊氣,於是就諗起之前曾經食過嘅生記枸杞豬潤~真係冇得輸枸杞獨有嘅味道加上爽彈豬潤,真係正到不得了。生磨煎蓮藕餅~蓮藕爽口,加上豬肉彈牙,再加上其他材料一齊煎,超有驚喜。蜆介鯪魚球~彈牙嘅魚球充滿魚香,吃得出是用純鯪魚肉打成,蜆介醬咸香惹味,令人食唔停口;不過,今次嘅魚球稍稍咸咗少少!生炒排骨夾咕嚕肉~脆漿頗薄且炸得夠脆,酸甜汁較得好味;咕嚕肉夠軟滑,但排骨就略嫌肉簿骨大。泥鯭肉丸粥~拆了肉的泥鯭混在軟綿的米粥中,每一口都鮮甜好好味,肉丸有咬口,跟魚粥竟十分相配。酥炸桶蠔~脆醬調得剛剛好,又薄又酥脆,內裏淡淡鮮甜蠔肉。白糖糕~清甜彈牙,略嫌帶點酸味。 continue reading
