一星期前已預訂了上環一間西班牙私房菜晚膳,地方清雅舒適,餐廳裡播著羅曼氣氛的音樂,悅耳動聽。店員殷勤招待,每一道菜都悉心解釋。先來頭盤薯仔沙律簡單清爽;香脆的麵包配上秘製蒜蓉蕃茄醬,生蒜丶蕃茄及橄欖油等混在一起,味道清香,生蒜竟沒有強烈的蒜辣味;再來Clams in Green Sauce以香濃魚湯浸蛤蜊,提升其鮮味;Grilled Cuttlefish with Green Alioli 墨魚粒嫩滑彈牙淡淡肉配上秘製parsley 及 garlic 做成蛋王醬泡沫鮮甜味突出;Garlic shrimp in olive oil 橄欖油煮蒜片大蝦是西班牙小食之一,端出來時熱氣騰騰,油是滾辣辣的,立刻吃才不會腍及肥膩,但小心燙口;Wild mushroom soup,雖要把蛋白泡沬攪雲令其嫩滑可口亦釋放出黑松露油的香味;Chorizo soup 辣辣地好惹味,西班牙腸粒及菜粒配搭適中;來過Mixed-Fruit Sherbet 來洗掉食物的味道;重頭戲來了 Seafood Paella 用魚淆湯煮西班牙海鮮飯可減少油份,師傅很細心把海鮮切粒燴在飯裡味道鮮甜爽口咬下淡淡海鮮,爽呀!最後來了兩款甜品來完結這噸晚膳,Egg flan 士多啤梨醬汁丶玉桂配蛋白撻,清甜香滑, 點些西班牙甜酒醋,另你滿意非常;Crema Catalana 忌廉焦糖既甜滑又脆口,味道適中。這些佳餚令我垂涎欲滴,回味無窮。 continue reading

經過漫長嘅等待,今晚終於有返晚市:食我最愛嘅西班牙Tapas :Sabor Spanish Touch Private Kitchen位置响上環地鐵站附近一棟上樓舖,地點非常容易找由於事前已經訂咗位同決定咗食 Tapas Set,所以坐低開支Cava,等食物慢慢上前菜係蕃茄蒜蓉醬多士,蒜蓉味濃,蕃茄醬甜中帶酸,好開胃主菜開始逐樣上,第一道係魚湯煮蜆,上枱時熱焫焫,魚味超濃大蜆鮮甜😋之後到炒墨魚粒配生蒜蕃茜醬,墨魚粒炒到啱啱熟配上微辛嘅醬汁,感覺好Frash下一道係釀魷魚仔,响吊桶入面釀入洋蔥粒同豬肉碎,再用墨魚汁做一個 Sauce,感覺好Rich再上係煎大啡菇伴溫泉蛋,一切開,蛋汁慢慢流出,配大啡菇又出奇地夾之後到焗蟹肉球,除咗蟹肉之外,裏面仲有蟹膏,咬落去嘅時候充滿蟹膏嘅濃味同蟹肉嘅鮮甜,配酒一流食 Tapas又點少得蒜片欖油蝦呢,呢道菜每次都冇失手,蒜味同欖油嘅香味未上枱已經聞到。蝦肉又爽又彈牙,最後用麵包點埋啲橄欖油食,超滿足甜品有兩款,都係用蛋煮嘅,分別有西班牙式嘅燉蛋,比較濕潤。另外一個係蛋餅,口感有啲似芝士,配士多啤梨同醬一齊食,好平衡又唔會太膩😘整餐飯上枱節奏合適,唔會食得好急,慢慢品嚐美食配美酒,終於平復返幾個月冇晚市嘅壞心情🤣😋 continue reading

這所主打西班牙私房菜的雅緻小館, 兩個廚師一位侍客員包辦每晚二十位座上客的餐飲, 由訂定每日餐單到上枱食物都反映小小團隊的殷切投入👏入座馬上送上餐前小品,蕃茄生蒜多士, 調味好绝無生蒜苦辛味😋侍應隨而介紹菜式, 廚師今餐安排了三款小食(Tapas):魚湯浸蜆以鮮味濃魚湯做底令蜆肉更嫩滑, 但小心燙口😋燒墨魚粒配生蒜番芫茜醬是三款中我最欣賞, 墨魚烹調火候恰當有嚼感, 醬汁清新令海鮮味再昇華😋😋👍👍橄欖油蒜片蝦油香蝦肉爽口彈牙, 水準之作😋小食後上了湯:西班牙香腸雜菜湯散發濃烈肉腸香氣, 雜菜正好作中和;野生磨菇湯面鋪上打泡蛋白及黑松露, 香滑相應, 和野磨菇味互碰得妙😋湯後送上雜果沙冰,用以淨化之前濃烈食物之餘味, 跟著是主食出場:西班牙海鮮飯熱氣騰騰, 飯香四溢, 用料十足, 米粒以魚湯煑更增鮮味😋👍 還有甜品: 士多啤梨蛋餅伴甜酒醋三種味道配合得天衣無縫😋;加泰隆拿忌廉撻面鋪上焦糖混合起來令味蕾更享受😋離座前特意多謝侍客員每道菜的介紹, 亦和廚師們寒喧幾句以表謝意👏👏 continue reading

It’s a private kitchen so A la cart menu but that’s probably better when you are scratching your head for dinner idea. Went for a tasting menu for two. Had 2 drinks, the bill came to $15xxFood reviews below, Chef Tapas menu1. Clams in fish sauce (definitely not fresh clams but frozen one so the clams were a little tasteless. The fish sauce was broth that they boiled, a little fishy for me but the upside is the broth is made with fresh fish boiled on the day)2. Grilled cuttlefish 🐙with green alioli (Nailed it. Cuttlefish was grilled well, not too chewy. The green alioli -basically a Spanish dim with garlic, olive and mayo was light and complimented the dish well)3. Stuffed squid 🦑in black ink -didn’t like this one. The squid wasn’t nice and the stuffing was mushy 4. Portobello mushroom benedict (with egg). Quite nice but wished the portobello to be slightly bigger. Rather small for a portobello but otherwise the cheese and egg was nice5. Crab croquette- Yum. Crispy with quite a generous amount of crab inside6. Garlic shrimp- 🦐again shrimp were frozen ones, quite bland7. Churro-freshly fried churro with 75% dark chocolate. Love a fresh churro. I had a birtday dinner with my wife at Sabor. Those we never tasted the Spanish style food before, we enjoyed the set dinner very much. The appetizer stimulates our appetite, the fried cuttle fish is delicious, the cold and hot soup is very special, the clams is so fresh dipped the boiling soup, the seafood paella is just tasty... and the service is good with each dishes being introduced politely.
