去年已聽說過台北過江龍寬巷子,以創意火鍋料見稱。平日工作繁忙,這天難得與好友一聚,決定來試試這間創意火鍋慰勞自己一下😌吃火鍋最重要是什麼?配料?還是湯底?但無容置疑的是讓人愉悅的氣氛,確能使人大快朵頤。餐桌中央的縷空鍋子在燈光的照射下有如精緻的藝術品般,確是美觀與實用兼具。而餐牌使用鮮橙紅色的真皮皮革製成外套,上面銹有黑色字樣的「寬巷子」,突顯不同於一般大眾化火鍋的刻板印象 ,原來吃火鍋除了湯底正、配料靚外,也可如此精緻配合餐廳的地理位置,望望維港景致,誰說愛吃火鍋不能享受浪漫?好友酷愛刺激的麻辣火鍋,而我卻想要來點養生系,就選擇了小辣的「元珠小染」和「養生白鳳」兩款做鴛鴦鍋。元珠小染是麻辣小辣湯底,一般麻辣火鍋辣味是很足夠,但總讓人吃完口乾舌燥,這湯底辣味剛剛好,香味四溢,平常吃米線小辣或以下的最適合了!而「養生白鳳」的配料不得不多著墨介紹一下,這養生鍋用烏雞、花膠、桃膠、黑蒜和鮮人蔘煮成,未放配料前必嚐一口,清甜鮮味!再來就是同樣吸晴的火鍋料,首先來一盤Signature 的玫瑰🌹松板,很佩服師傅的巧手刀功和藝術細胞,這道菜其實是新鮮豬頸肉切片,兩端較薄中央略厚一點,然後砌成玫瑰花狀,像是一朵朵盛開的粉紅玫瑰。而食法也很考究!隨碟附上以洋蔥盛載的蛋白液,是這道菜的重點,淋上蛋白液後的豬頸肉放入鍋中久煮也不靭,口感仍很爽口滑溜,卻不怕生蟲蟲的危機!不愧為鎮店之寶!第二道也是店裡的特式菜,叫菠菠糖,光看外表只覺得像芝麻波板糖,原來以手工豆皮與白芝麻製內餡,外面包裹一層菠菜,再以植物的枝幹代表竹籤,視覺效果十足。然後來一份墨條牛軋,看來根本是沾上椰絲的竹炭口味的牛軋糖吧!?原來是花枝條染上墨魚汁加雞軟骨,爽口,可惜是浪費了整碟椰絲。手工蛋餃內餡是鯪魚肉、馬蹄等,頗有咬口,是傳統台灣食品。最後一道葷菜是杏香野菊,米白色花朵造型很吸引,以杏仁片和紫色粟米粒釀在蝦滑上,鮮甜得來很彈牙。要均衡飲食,當然少不了蔬菜,有這道花團錦簇,一上桌真的嚇一跳,完全是將整個花圃搬上餐桌一樣,將生菜、椰菜、小棠菜、粟米、辣椒、金菇等插花,實是賞心悅目,也很新鮮!但人數不多還是放棄吧!因為要吃完整盆蔬菜相信需要4-5人合作才能完成!吃火鍋當然要點透心涼的飲料,除了啤酒汽水外,也可點些女生愛好,譬如說玫瑰水果茶,滿杯都是水果和花瓣,不單止好喝又養顏,還是仙氣飄飄的打卡首選!$98已有一瓶,不怕吃到口乾!因為屬精品火鍋類,價格方面比一般火鍋來說是較貴,大時大節或節日慶祝時,偶然犒賞自己亦無不可。 continue reading

香港人真有口福,連寬巷子~台灣出名的火鍋店,衣家都喺香港食到👍香港店同樣講究,牆上、燈具畫滿農村及候鳥圖案,宋朝古董、清明上河圖、張大千真迹。。。還有落地窗外的無敵海景,令這火鍋店更有氣派。這店可不是只有環境,菜式亦講究。不單是美食,簡直就是藝術品呢~尤其是玫瑰松版,簡直係一件藝術品,真係唔捨得食😅把豬肉片擺成玫瑰花樣,旁邊還放上用洋蔥盛器,裡面全是蛋白。店員建議整朵花丟進鍋中煮,煮之前先淋上蛋白,令豬肉更腍滑。果然不止是藝術品,還很美味,豬肉入口既爽且滑,難得。波波糖,外層是菠菜,再用豆皮層層包上芝麻同芝麻醬。放入鍋煮,用沙漏計時,入口滿嘴豆香,芝麻香氣在口中滾動😋手工蛋餃, 用蛋黃煎成餃子皮,再包上肉碎馬蹄,滋味跟一般餃子不同,味道清新👍墨條牛軋 ,非常好吃,絕對必點!以墨魚汁淋上花枝漿,然後裡面再拌有雞軟骨,吃起來是鮮甜的魚漿香,但又有雞軟骨的脆勁,這個真的相當好吃。花團錦簇,係以法式插花的方式來呈現,相當誇張,我實在很好奇師傅插這件藝術要插多久😜但確實非常美麗😍菜色容量完全不少, 店員還一次過將所有蔬菜幫我哋放入鍋內,造成一個色彩繽紛嘅花海,非常壯觀。蔬菜索咗啲湯,又淋又甜,實在好味。不過建議有四五個人先好叫 ,以免食吾晒😂食火鍋嘆水果茶,果然一流,既清爽又消滯👍 continue reading

去年在台北旅行時,因時間不足,與「寬巷子」緣慳一面 ,想不到寬巷子在香港插旗,選址在尖沙咀的地標海港城內。寬巷子的裝潢光是門面已很有古色古香的感覺。餐廳內更甚,放滿不少有特色的擺設。最入的位置更能飽覽維港景色,食火鍋望夜景,確實很不錯。有三個VIP房如果人多嘅可以包廂哦~ 如果包房嘅就不用限時,可以 暢所欲言, 暢飲暢食 ,當然更開心啦😍創意之寬 沒有邊界 料理之本 從巷子通往世界這就是寬巷子名稱的由來,難怪食物都充滿著藝術的感覺,除了吃也是可以欣賞的,打咭,同朋友share就更開心😅。先來一瓶寬巷子水果茶,水果茶清甜,果味濃,配冰凍烏龍,消暑解膩,酸甜又開胃😋餐廳無得混醬😜供應已調好的洋蔥醬,食落惹味,不過湯底本身已經夠味,唔蘸醬都好好味👍湯底Order左東方美人,即係豚骨湯,湯內有蓮子,新鮮百合,豆腐,鴨血。。。湯底雪白鮮甜,豆腐和鴨血份量不少呢~寬巷子的招牌玫瑰,用上松版位置堆疊而成的花形,賣相確實美美的,一旁的是蛋白,食法固然是有點特別。秘訣就在蛋白;只要把蛋白均勻地淋在玫瑰上,再將整朵玫瑰慢慢的放在火鍋內,再一片片拆下來確實熟透才吃。松版豬有質感,咬落爽口,既香且嫩😋墨條牛軋 ,造到牛軋糖的賣相,黑色其實係墨魚汁,再加埋雞軟骨同花枝塊製成,食落墨魚味很重,還有軟骨的口感,賣相跟味道同樣出色👍店員還附上沙漏,等我地計時,一個沙漏時間就剛剛好喇😉杏香野菊,是以蝦漿為主, 下面用海苔圈起來, 上面是杏仁片, 最上面是用玉米粒當花心。蝦膠爽口,杏片有口感,夠特別👍呢個拼砌到成個花圃既菜藍,賣相真係不得了!入面有多款蔬菜,唐生菜、娃娃菜、高麗菜、小唐菜、紫椰菜、日本粟米 、甜椒、冬菇和雜菌等,成個花圃色彩繽紛,份量好多,兩個人要食晒有難道。另外,店員會盡量幫客人將所有菜落鍋好似插花咁,非常悅目,見到佢砌得非常用心,頓時變成一個欣賞的項目;所有蔬菜食落都覺得非常新鮮,特別愛食娃娃菜,搭配豬骨湯湯底,味道特別鮮。牆上掛滿很多藝術濃厚的作品,還有張大千寫的菜單,真係大開眼界。寬巷子,我終於在香港試到喇😍🤗🤘 continue reading

有聞這家台灣的人氣火鍋店已久,其麻辣火鍋和精緻火鍋料最為聞名。餐廳裝潢以紋理石牆配以紅、白、灰的楕圓型吊燈,感覺時尚,又帶一點古典與高雅氣質。除了座位和枱的間距十分寬濶外,還設有幾間包房,私隱度十足。午餐有13款選擇,主打麻辣湯麵,另設幾款乾麵和美人湯麵,價錢由$98-$128。墨條和牛美人湯麵$128Beef noodle in beauty soup with calamari mixed with chicken soft bone和牛有三片,和平日認識的日本和牛有點不一樣。和牛片體積比較小巧,是乾滷的風味,肉質結實帶一點嚼感,但又不太乾硬。墨條片口感爽彈,有濃濃的墨魚味,但由於是薄片的關係,口感稍遜。美人湯即是豬骨湯。湯汁奶白,唔係咁油膩,有著淡淡的豬骨鮮味,味道唔太濃郁。溏心旦唔太流心,也沒有滷味。麵條是中等粗度,掛湯力不錯,囗感軟滑,而份量比較少。墨條和牛胡麻千叟麵$128Wagyu beef noodle with sesame sauce和牛片和墨條配上胡麻千叟醬,味道更為香口。和牛片唔太軟腍,主要都是瘦肉為主,帶一點口感,而黑卒卒的墨條口感Q爽。麵條是中等粗度的乾撈麵,加上胡麻千叟醬,帶一點胡麻的香和醬油的味,不嗆喉,口感爽爽不黏膩。稍稍比比湯麵更為滋味。山楂紅果汁$15Hawthorn tea drink這山楂紅果汁的山楂味極為濃郁,酸酸甜甜的,既冰涼又醒胃。寛巷子玫瑰水果茶Alley rose fruit tea這玫瑰水果茶味道清新,有著清爽的果甜味道,又透出淡淡幽雅的玫瑰花味。由於喉嚨痛的關係,未有點招牌的麻辣湯,所以有點可惜。然而午餐定價唔高,環境高雅,拌麵的味道亦不錯,唯份量比較少,性價比唔高。 continue reading

今日是妹妹的生日,為了幫她慶生,早早在尖沙咀海港城海運大廈裡的一家餐館訂好位置了。這家來自台灣台北的寬巷子是多日前逛街發現的,恰好解決苦尋妹妹生日宴的場所,歡欣之餘當下便先訂好了日期。進入第一感覺,濃濃中國風味的裝潢,很喜歡這種中式氛圍的餐館。而環境乾淨和座位寬敞,這樣的用餐環境,讓我感到相當滿意。寬巷子主要菜式包括了寬巷子水餃王、杏香野菊、鴛鴦鍋、墨條牛軋、玫瑰松板、菠菠糖、花團錦簇、烏梅汁、鳳梨酥、枝仔冰、魚皮餃、白菜豬肉餃…等台式佳餚。由於妹妹是今日主角,菜式就由壽星決定了。洋蔥醬、鴛鴦鍋(養生白鳳、元珠小染)、玫瑰松板、花團錦簇、寬巷子水餃王就是這次餐點組合。鴛鴦鍋是台式料理代表之一,分別滿足喜愛香辣與清淡兩種類型的人。溫而不燥熱,清甜爽口的湯頭真是美味好喝,搭配著飽滿碩大,肉汁橫溢的寬巷子水餃王,沾著特製洋蔥醬一口咬下,那鮮甜微嗆的組合太美妙了。最讓人驚艷的是玫瑰松板,端上桌時這一幕太讓人訝異,栩栩如生玫瑰真是漂亮,讓人不忍心吃下肚。侍應特別介紹這玫瑰松板的吃法,下鍋前將花朵淋上蛋清,可以增加滑嫩口感,這樣的方式真的讓松板肉多了另一層次的味覺享受。顧及健康也點上一盤花團錦簇的蔬菜盤,它真是名副其實,擺盤有紅有綠真是漂亮,視覺味覺都兼顧了。這生日餐妹妹是吃的開心喝的滿足,沒有枉費我的精心安排,當然我也吃得津津有味。  continue reading
